Steps:
- Heat oven to 350°F.
- Blend applesauce, sour cream, melted chocolate, egg white, vanilla and spinach in blender until smooth.
- Combine dry ingredients in medium bowl. Add applesauce mixture; stir just until dry ingredients are moistened. (A few lumps can remain.)
- Spoon into 12 muffin pan cups sprayed with cooking spray. Sprinkle with chocolate chips.
- Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.
