Chilaquiles image

I was introduced to these by Dad's wife when they first met. I had never had them before but they are so yummy! Great with scrambled eggs on the side or any mexican dish!

Number Of Ingredients 9

2 tablespoon(s) vegetable oil
1 medium onion, chopped
1 package(s) lawry's taco seasoning
1 can(s) diced tomatoes
1 can(s) green chiles (optional)
6 ounce(s) tortilla chips
4 cup(s) shredded monterey jack cheese
1 cup(s) sour cream
1/2 cup(s) shredded cheddar cheese

Steps:

  • In Lg skillet, heat oil. Add Onion and saute over medium heat until tender. Add Taco seasoning, tomatoes & Chiles and mix well.
  • Bring to a boil; reduce heat to low and simmer, uncovered, 10 to 15 mins, stirring occasionally.
  • In lightly greased 2 quart casserole dish, layer 1/2 each of tortilla chips, tomato mixture and monterey jack cheese. Repeat layers; top with sour cream.
  • Bake at 350 for 30 mins. Sprinkle with cheddar cheese and bake 10 mins longer. Let Stand 15 mins before cutting into squares.
