CHEESY BROCCOLI AND POTATO SOUP image

Number Of Ingredients 8

2 cup(s) chicken broth
1/3 cup(s) onion, chopped fine
1 bag(s) (12 oz.) frozen broccoli, chopped
1 1/3 cup(s) dry mashed potato mix, plain
2 cup(s) shredded swiss cheese
2 cup(s) evaporated milk
1/2 teaspoon(s) salt
1/2 cup(s) parmesan cheese, grated

Steps:

  • In a large saucepan, heat the broth, onion, and frozen broccoli until boiling. Reduce heat and simmer, covered, about 5 minutes, stirring frequently.
  • Stir in the potato mix until well blended. Add the remaining ingredients, except the Parmesan.
  • Heat over low heat about 5 more minutes, stirring occasionally, until soup is heated through and cheese has melted.
  • Serve immediately and sprinkle with Parmesan cheese. Add croutons if desired.
