CELERY MASHED POTATOES image

Number Of Ingredients 8

5 lb russet potatoes
1 large onion minced
1 stick butter
1 bunch celery-only the leaves chopped
2 slices stale bread
1 tsp sugar
1 cup milk
2 eggs

Steps:

  • Peel, cube and boil potatoes. Saute onion in butter until soft. Drain potatoes when fork tender and mash lightly. Mix in rest of ingredients. Spoon mixture into casserole dish. Make peaks in the top with a butter knife and dot the valleys with butter. Bake at 450 F for 45 minutes or until the top is crusty and brown.
