Cajun Style Red Snapper Fillet image

This is an excellent way to prepare fresh red snapper. It's traditionally served with Cajun-style Red Beans and Rice.

Number Of Ingredients 8

4 - red snapper fillets (or 1 1/2 to 2 lb snapper, cleaned and cut into 4 pieces
2 tablespoon(s) all-purpose flour
2 teaspoon(s) cajun seasoning
2 tablespoon(s) fresh italian (flat-leaf) parsley, chopped
1 teaspoon(s) salt
1 teaspoon(s) black pepper
2 tablespoon(s) unsalted butter
1 - green onion, chopped

Steps:

  • Rinse fish and pat dry; set aside.
  • In a shallow dish, stir together the flour, Cajun season, parsley, salt and pepper. Dredge each fillet in the flour mixture.
  • Melt butter in a large skillet over medium heat. Add coated fillets, skin side down, in the hot butter. Cook 4 to 5 minutes or until skin is crisp. Using a spatula, carefully turn fillets and cook other side another 3 to 4 minutes or until fish flakes easily with a fork.
  • Garnish with chopped green onion, and serve alongside your favorite Cajun-style Red Beans and Rice.
