Cajun Oven-Roasted Potatoes image

A quick and easy way to roast potatoes. They're a little spicy... adjust the Cajun seasoning to your preference (for more or less heat).

4 large baking potatoes (russets)
2 Tbsp butter, melted
2 Tbsp cajun seasoning blend (your favorite)
1/4 tsp salt

Steps:

  • 1. Preheat oven to 350°.
  • 2. Peel potatoes and cut into large, even chunks (try to have all of the potato chunks the same size, for even cooking). Place in a shallow baking pan.
  • 3. Pour melted butter over the potatoes and toss until well coated. Sprinkle with the Cajun seasoning and salt.
  • 4. Bake, uncovered, for 45-60 minutes, or until potatoes are tender.
