Butter Pecan Scones image

I love a good scone. However, some scones can be really dry and dense. These butter pecan scones are so soft and amazing! You get the wonderful texture of a moist scone, but it has just the right amount of crumble to it. The crunch from the toasted pecans gives a wonderful texture and contrast from the soft scone. Number Of Ingredients 12

1 c Pecans Chopped
1 T Butter
3 c Allpurpose Flour
2 T Sugar
1/2 t Salt
2 T Baking Powder
1 stick Unsalted Cold Butter
1-1/4 c Buttermilk
1/4 c Sour Cream
1 c Powdered Sugar
3 T Maple Syrup
1/2 t Vanilla

Steps:

  • Pre heat your oven to 400 degrees.
  • In a sauce pan melt 1T of butter on a medium heat.
  • Add the pecans to the melted butter and cook them until they are fragrant.
  • Take the pecans off the heat and put them in a bowl to cool down.
  • In a separate bowl combine the flour, salt, sugar, and baking powder. Then give it a mix.
  • Use a cheese grater to grate your butter into the flour. Then mix the flour and butter together until the butter is coated with flour and is evenly distributed.
  • Add in your cooled pecans and mix until the pecans are distributed throughout the dry ingredients.
  • In a separate bowl. Whisk together the buttermilk and sour cream.
  • Make a well in the middle of your dry ingredients, and pour the cold buttermilk mixture in it.
  • Use a spatula to mix the dough together until its just combined. Be careful not to over mix the dough.
  • Pour the dough on your work surface and gently press it into a rectangle. The short side of the rectangle should be 5 inches long and 3/4 inches tall.
  • Cut out 8 triangles with a knife. Your 8th triangle will be made of the two ends pressed together. You can watch the above video for clarity.
  • Place your scones on a lined baking sheet. The scones should not be touching.
  • Brush off any excess flour and brush the scones with egg wash.
  • Bake in the oven for 20 minutes or until the scones brown on the top.
  • While the scones are in the oven make your icing.
  • Mix together the powdered sugar, maple syrup, and vanilla into a thick icing.
  • As soon as the scones come out of the oven add the icing on top. The heat from the scones will melt the icing and you can spread it thickly.
  • Now it's time to enjoy!
