BLUEBERRY MUFFINS (CAT'S MOM) image

½ cup butter
2 cups all purpose flour
2 tsp. Baking powder
¼ tsp. salt
2.5 cups blueberries
1 cup + 4-5 tbsp sugar
2 eggs, large at room temperature
½ cup milk
1 tsp. Vanilla extract
1 tbsp. lemon rind
1 tbsp. lemon juice, fresh squeezed

Steps:

  • Preheat Oven to 375º 1. Line 18 2.5" tins with margarine or butter and lightly dust with flour 2. Combine flour, baking powder and salt in a bowl 3. Toss 2 tsp. Flour mixture with berries 4. Beat butter and 1 cup sugar in large bowl until light & fluffy 5. Beat in eggs, 1 at a time 6. Add remaining flour mixture, alternating with milk and vanilla, starting and ending with flour 7. Crush ½ cup berries 8. Fold in whole and crushed berries and mix well 9. Spoon into tins 10. Sprinkle tops liberally with remaining sugar 11. bake 25-30 minutes until golden 12. Remove from tins carefully by running sharp, stiff knife along edges and let cool on rack Makes about 18 muffins
