Another great and healthy dish for your table! I like them baked cause they are much healthier and lighter than fried. They were golden brown and crunchy on the outside and nicely roasted on the inside. The zucchini sticks were tasty by themselves but they were even better when dipped in the marinara sauce.

1 lb zuchinni (sliced into sticks & pat dry)
1/2 c bread crumbs (panko)
1/2 c parmigiano-reggiano, grated
1 tsp oregano
1 large egg (lightly beated)
salt and pepper

Steps:

  • 1. Preheat oven to 425 degrees F.
  • 2. Mix the bread crumbs, parmigiano reggiano and oregano in a bowl.
  • 3. Season the zucchini sticks with salt and pepper.
  • 4. In a shallow bowl, Dip the zucchini in the egg.
  • 5. Use zip-lock bag for panko, then dredge in zucchini sticks in crumb mixture.
  • 6. Place the zucchini on a baking sheet in a single layer with the skin side down.
  • 7. Bake in a preheated 425F oven until golden brown, about 20-25 minutes.

1 (15 ounce) jar marinara sauce (or the equivalent amount of homemade)
1/2 cup red wine
1 clove garlic, minced
1/4 teaspoon basil leaves, crushed
1/8 teaspoon dried oregano, crushed
1 cup shredded monterey jack cheese (4 ounces)

Steps:

  • Saute zucchini in 3 Tablespoons olive oil until lightly browned; drain.
  • Place in 1-1/2 quart casserole.
  • Combine marinara sauce, wine, remaining oil, garlic, basil and oregano in small saucepan; stir well.
  • Simmer for 15 minutes, stirring occasionally.
  • Spoon sauce over zucchini; mix well.
  • Sprinkle cheese over sauce; cover.
  • Bake at 325 degrees for 30 minutes.
  • Bake, uncovered, for 5 minutes longer.

1/3 cup prepared Italian salad dressing
1 cup Italian-style panko bread crumbs
2 medium zucchini, cut diagonally into 1/4-inch slices

Steps:

  • In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until thickened, stirring occasionally., Meanwhile, in a shallow bowl, whisk egg and salad dressing. Place bread crumbs in another shallow bowl. Dip zucchini slices in egg mixture, then coat with bread crumbs. Cook on an indoor grill for 2-3 minutes or until golden brown. Serve with marinara.

2 zucchini, spiralized, or more to taste
sea salt and freshly ground black pepper to taste
½ cup dry lentils
4 tablespoons olive oil, divided
¼ cup onion, chopped
3 cloves garlic, minced, divided
1 carrot, chopped, or more to taste
1 (14.5 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 teaspoon sea salt
½ teaspoon freshly ground black pepper

Steps:

  • Place zucchini in a bowl and season with salt and pepper.
  • Bring lentils to a boil in a pot of 1 1/2 cups water. Cover and reduce heat; simmer until tender, 15 to 20 minutes. Drain.
  • Heat 1 tablespoon oil in a Dutch oven over medium heat. Add onions; cook and stir until translucent, about 2 minutes. Stir in 1 clove garlic and carrots. Cook for 1 minute. 1 large onion, divided in 1/2
8 garlic cloves, minced divided in 1/2
4 tablespoons olive oil
1 1/2 large zucchini, chopped into circles and then into 4 's
8 ounces of sliced portabella mushrooms
15 ounces cannellini beans
2 ounces pecorino romano grated cheese
2 ounces shredded part-skim mozzarella cheese
1 lb penne pasta
2 (28 ounce) cans of tuttorusso crushed tomatoes
basil

Steps:

  • Set up 3 pots: 1 with water for pasta, 1 for zucchini, onion, mushroom & beans & 1 for marinara sauce.
  • In two of the three pots set up 2 tbsp of olive oil and saute onion (1/2 & 1/2) until cooked but not brown, add 4 cloves minced garlic to onion in each pot and again cook DO NOT brown. Add crushed tomatoes to 1 pot and basil, cook on a low flame for about a 1/2 hour. In the other pot add zucchini, mushroom and cook until zucchini is soft, add beans and cook for 2 more minutes, remove from heat. Cook pasta according to box.
  • Add veggies to top of pasta, add shredded mozzarella, top with marinara sauce and grated cheese.

2 Tbsp mayonnaise
2 Tbsp chopped onion
1/2 c whole wheat or unbleached flour

1 Tbsp butter
1 Tbsp olive oil
1/2 tsp salt
1/2 tsp small grind fresh ground pepper
marinara sauce
3 Tbsp olive oil
1 large onion chopped
2 Tbsp chopped garlic
1 tsp basil
1 tsp oregano
1 large can of crushed tomatoes
1 can(s) 16 oz. of petite diced tomatoes
1 can(s) tomato paste
2 packets of sweet n low
2 tsp salt
1 tsp medium grind fresh ground pepper
fresh grated parmesan (optional)

Steps:

  • 1. Combine egg, mayo., zucchini, and onion. Add flour, Parmesan, oregano, garlic powder, salt, and pepper.
  • 2. Melt butter and olive in a large skillet. Form zucchini mixture into patties by dropping about one cup of mixture into the frying pan and spreading the mixture in the shape of a patty. Fry over medium heat until well browned, approximately 2 minutes on each side.
  • 3. For marinara sauce, saute onion and garlic in olive oil until onion is transparent. Add 1 large can of crushed tomatoes, 1 can of petite diced tomatoes, one can of tomato paste and one tomatoe paste can of water. Add basil, oregano, salt, pepper, and sweet n low.
  • 4. Bring to boil and reduce heat to simmer for 30 minutes. Serve sauce over zucchini patties and, if desired, sprinkle with fresh grated parmesan.

3 cups dry penne pasta

1 cup dried french lentils
2 cups water
2 tablespoons olive oil, divided
1 medium yellow onion, diced
2 garlic cloves, minced
2-15 oz cans organic tomato sauce
1/2 cup red wine
Dash of red wine vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon dried thyme
4-6 medium zucchini, spiralized into pasta
salt and black pepper to taste

Steps:

  • INSTRUCTIONS Add lentils and 2 cups of water to a medium pot. Bring to a boil and then lower to a simmer and cook until lentils are tender and liquid is evaporated, about 30 minutes. Meanwhile, add 1 tablespoon olive oil to a pan over medium heat. Add the onion and saute for 5 minutes, or until translucent. Add the garlic and saute for an additional minute, until fragrant. Add the tomato sauce, wine, vinegar, basil, oregano, thyme, and salt and pepper to taste. Simmer on low for 20 minutes. When lentils are done cooking, add them to the sauce and simmer for an additional 5 - 10 min. In a separate pan, add the remaining tablespoon of olive oil and saute the zucchini pasta for 5 - 10 minutes, until desired tenderness is achieved. Puree 1 cup of the marinara sauce and reincorporate back into the sauce to increase thickness. Divide the pasta among four plates and top with lentil marinara. Serve hot. NOTES Fresh zucchini will often lose moisture as the zucchini pasta cooks so be sure to drain any liquid that has built up in the pan. The recipe holds well as leftovers, but the zucchini does tend to release extra moisture as it sits so be sure to drain pasta before serving. There will be a lot of leftover sauce, but it is yummy on regular pasta too. ;)

3 tablespoon(s) plain yogurt
1/3 cup(s) ritz cracker crumbs
1/3 cup(s) parmesan cheese, grated
MARINARA SAUCE
1 can(s) 16-oz. can stewed tomatoes, undrained and chopped
3 tablespoon(s) tomato paste
1 small onion, minced
2 clove(s) garlic, minced or pressed
1 teaspoon(s) olive oil
1 teaspoon(s) sugar
1/2 teaspoon(s) italian seasoning
1/2 teaspoon(s) dried basil flakes
pinch of cayenne

Steps:

  • Spread each slice of zucchini with a thin layer of yogurt. Mix crumbs and parmesan together and sprinkle on both sides of zucchini.
  • Preheat oven to 400 degrees. Place zucchini on parchment paper and bake until golden brown - approx. 20 min.
  • Carefully flip zucchini and brown on the other side. Remove and place on a platter along with marinara sauce.
  • For Marinara Sauce -- add all ingredients and mix well - cover and simmer for approx. 30 minutes or until sauce is thickened.

4 oz. 100% Olive Oil
1 oz. Sweet Basil
½ teaspoon Black Pepper
1 tablespoon Chicken Base
1 tablespoon Sugar
1 28 oz. Can Whole Peeled Tomatoes (drained & smashed)
1 clove Fresh Garlic chopped

Steps:

  • Cut ends off zucchini and discard. Cut zucchini in half lengthwise. Slice zucchini in pieces approximately 1/4" wide. In a medium size frying pan, combine all of the ingredients except the tomatoes. Saute' on medium high heat until the zucchini starts to soften, approximately 5 to 6 minutes, mixing often. Add the tomatoes and cook an additional 20 minutes mixing often, being careful not to over cook. If desired you may skim off any excess oil.

  • 1) Mix bread crumbs and 1/4 cup of the parmesan cheese. Coat chicken pieces with flour. Dip into egg. Coat both sides with crumb-cheese mixture. Heat oil in 10-inch skillet with cover. Add chicken. Brown on both sides over medium heat.
  • 2) Mix marinara sauce, parsley and hot pepper sauce. Spoon half over chicken. Arrange zucchini slices over chicken. Sprinkle with mozzarella cheese and 1/4 cup of the parmesan cheese. Top with remaining sauce.
  • 3) Cover and bring to a boil. Reduce heat and simmer 25 minutes or until chicken is tender. Serve with the pasta. Sprinkle with the extra parmesan cheese.

4 boneless, skinless chicken breast halves (about 1 lb total)
1/4 tsp salt
1/4 tsp pepper
1/4 cup flour
1 egg lightly beaten
1/2 cup dry bread crumbs
2 Tbsp Olive oil
1 Cup sliced fresh mushrooms
1 Cup Marinara
1 Tbsp chopped fresh parsley
1 medium zucchini cut lengthwise into eighths
1 Tbsp water
1 Cup grated Mozz Cheese

Steps:

  • Preheat ove to 375. Place chicken between 2 sheets of waxed paper. Pound to 1/2 inch thickness. Sprinkle with salt and pepper and set aside. Place flour beaten egg, and bread crumbs into 3 seperate shallow dishes. Dredge chicken in flour, shaking off excess, then in egg and then in crumbs, pressing firmly to coat. In a large skillet, heat olive oil over medium high heat. Add chicken and cook until golden, 3-4 min per side. Remove from skillet and transfer to large baking dish. Add mushrooms to same skillet and cook 30 seconds. Add Marinara sauce an parsley. Cook 3 mins stirring freq. Place zucchini slices in shallow microwave safe dish. Sprinke with 1 tablespoon water. Cover and microwave on high 2 min. Remove and drain. Place 2 of the zucchini slices on each chicken breast forming an "X". Pour Marinara mixture evenly over zucchini and sprinkle with Mozz. Bake 10-15 in or until cheese is melted.

2 tablespoons Pure Wesson® Canola Oil, divided
1 pkg (8 oz each) sliced fresh button mushrooms, chopped
1/2 cup chopped yellow onion
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
1 can (8 oz each) Hunt's® Tomato Sauce
1 tablespoon balsamic vinegar
1/2 teaspoon garlic salt, divided
6 medium zucchini (6 = about 3 pounds)
Grated Parmesan cheese, optional

  • Heat 1 tablespoon oil in large saucepan over medium-high heat. Add mushrooms and onion; cook 5 minutes or until tender, stirring occasionally.
