3 to 4 zucchini, (trimmed and cut length-wise into quarters (sticks))
Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.
  • Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
  • Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
  • Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.
  • Serve immediately as an appetizer with a dipping sauce, or as a side next to your protein of choice.

3 cups shredded zucchini
1 medium carrot, sliced,approximately 1/2 cup
1 small onion, chopped
2 tablespoons parsley, snipped
1 cup biscuit mix
3/4 cup cheddar cheese or 3/4 cup American cheese, shredded
1/4 cup oil
3 eggs, slightly beaten
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • Combine all ingredients and pour into greased casserole or baking dishes.
  • Bake 350 degrees for 30 to 35 minutes or until golden brown.
  • Can also be used as a vegetable side dish for chicken or meatloaf.

4-5 zucchini, peeled & sliced
3 medium carrots, sliced
1 medium onion, chopped
1/3 c butter
1 can(s) cream of chicken soup
1 c sour cream
1 c seasoned croutons

Steps:

  • 1. *Boil zucchini until tender. *Saute carrots & onions in butter until limp. *Add soup & sour cream to carrot/onion mixture and stir thoroughly. *Add 3/4 c. croutons and zucchini, stirring gently. *Pour into greased cassarole pan.
  • 2. Mix the remaining croutons with 1 Tbsp melted butter.
  • 3. Spread the croutons on top of the cassarole. Bake at 350 degrees for 20-25 minutes.
