1 zucchini, sliced
1 yellow squash, sliced
½ small head cabbage, sliced
1 large onion, sliced
1 (14.5 ounce) can fat-free chicken broth

Steps:

  • In a large pot place zucchini, yellow squash, cabbage and onion. Pour broth over vegetables and bring to a boil over medium heat. Reduce heat to low, cover and simmer for 20 to 30 minutes.

3 zucchini, sliced
1 onion, chopped
1 (14.5 ounce) can canned peeled and diced tomatoes
½ cup shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice zucchini and onion and place in a glass dish baking dish. Add can of tomatoes, salt and pepper. Sprinkle cheese over top. Place lid on dish.
  • Bake in the preheated 350 degrees F (175 degrees C) until zucchini becomes tender, 20 minutes.

4 cups sliced and quartered zucchini (unpeeled) 1/4 inch thick
2 cups boiling water
2 eggs
1 cup Miracle Whip
1 medium onion, chopped
1/4 cup green pepper, chopped
3/4 cup Kraft Parmesan Cheese
1/2 cup feta cheese
1 1/2 tsp dried Basil
1/4 tsp salt
1/2 tsp pepper
2 Tbsp butter

Steps:

  • Cook zucchini until tender in boiling water, approx. 15 minutes. Drain.
  • In large bowl beat eggs. Stir in remaining ingredients except butter. Add well drained zucchini.
  • Turn into greased (butter spray) 1 1/2 quart casserole dish. Dot with butter. Bake at 350 degrees F oven for 45 minutes or till browned slightly.

1 (10 3/4 ounce) can condensed tomato soup, undiluted
1 tablespoon lemon juice
1 teaspoon sugar
2 garlic cloves, minced
1/2 teaspoon salt
6 cups zucchini, sliced 1/2-inch thick
1 cup onion, thinly sliced
1 cup bell pepper, coarsely chopped
1 cup mushroom, sliced
2 tablespoons parmesan cheese, grated

Steps:

  • Combine soup, lemon juice, sugar, garlic and salt in large saucepan; mix well.
  • Add zucchini, onion, bell pepper and mushrooms; mix well.
  • Bring to a boil, reduce heat.
  • Cover and cook 20 - 25 minutes or until vegetables are crisp-tender, stirring occasionally.
  • Sprinkle with cheese.

4 Eggs
1 Cup Bisquick Mix
1/2 Cup Vegetable Oil
3 Cups Zuchinni(cut in small cubes,skin left on)approx.3 small zuchinni.)
1/2 Cup grated Parmigiano Cheese.
1 Med.onion (finely chopped).
1 small bunch italian parsley(washed,stems removed)& finely choppped.
2 small garlic cloves(peeled & finely chopped).
Pinch dried oregano.
Pinch salt.
Black pepper,freshly ground.
(Be generous with the pepper, as it should be 'slightly' pronounced in this recipe.)

Steps:

  • AFTER all vegetables are diced, preheat oven to 350 degrees. Beat the eggs in large bowl. Add the Bisquick mix and Oil, stirring until blended(with a wooden spoon.) Add all the other ingredients, blending until all ingredients are incorporated. Butter a medium-size square baking pan (Preferably a glass pyrex dish). Add the zucchini mixture to the baking pan. Before placing baking pan in oven "Tap"-it slightly (on your counter) to release any air bubbles. Place in the middle of the oven, (DO NOT cover.) Bake for 30-35 minutes. Should be light golden brown. DO NOT open the oven while baking. After 30 minutes, peek in oven.It should be slightly golden in color. If not, bake for 5 additional minutes or until 'slightly' golden in color. Remove from oven, and let settle on hot plate for 5 minutes. Cut in squares and serve. Cooking spray
8 cups sliced zucchini (about 2 1/2 pounds)
1 cup chopped onion
1/2 cup chicken broth (see page 200)
2 cups cooked long-grain white rice (see page 195)
1 cup sour cream
4 ounces sharp Cheddar cheese, shredded (1 cup)
1/4 cup grated Parmesan cheese (1 ounce)
1/4 cup seasoned bread crumbs (see page 196)
2 large eggs, lightly beaten
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Coat a 9 x 13-inch baking dish with cooking spray.
  • Combine the zucchini, onion, and chicken broth in a large pot set over medium-high heat, and bring to a boil. Cover, reduce the heat to low, and simmer for 20 minutes or until the vegetables are tender. Drain well, transfer to a large bowl, and partially mash the vegetables. Add the rice, sour cream, Cheddar cheese, 2 tablespoons of the Parmesan cheese, the bread crumbs, eggs, salt, and pepper to the vegetables, and stir gently to combine. Spoon the zucchini mixture into the prepared baking dish. Sprinkle the top with the remaining 2 tablespoons Parmesan cheese.
  • Bake for 30 minutes or until the top is golden brown.

Another great way to use up some of that delicious zucchini in your garden. This is a recipe I created a long time ago, that the family has always enjoyed. I hope you enjoy it too. Its also great with some browned sausage. Enjoy!

3 medium zucchini, sliced 1/4 inch thick
5 - 6 slice bacon, diced
1 medium onion, chopped
2 clove garlic, chopped
1 tsp each, salt, pepper and italian seasoning
3 slice bread, cubed
4 oz cheddar cheese, shredded
1 - 15 oz tomato sauce
Shredded mozzarella cheese for top

Steps:

  • 1. In a Dutch oven, cover zucchini slices with water and bring to a boil, cook 5 minutes or until just tender. Drain well.
  • 2. In a small skillet, brown bacon with onions and garlic.
  • 3. Preheat oven to 350 degree F. In a large bowl, add drained zucchini, sauce, seasoning, bacon mixture, bread cubes, cheddar cheese, carefully toss until blended. Spread into a medium, greased casserole dish. Top generously with mozzarella cheese.
  • 4. Bake for 35 - 40 minutes or until bubbly and cheese is melted.

1 large green bell pepper, diced
8 ounce(s) sour cream
1 can(s) cream of mushroom soup
2 cup(s) prepared stuffing mix

Steps:

  • NOTE: Use undiluted mushroom soup. Cook zucchinis, onion and pepper until just tender and drain.
  • Combine sour cream and mushroom soup in a separate bowl.
  • Butter 10\" baking dish; place half of the vegetable mixture in dish; spread half of the sour cream and soup mixture over vegetables; cover with half the stuffing mix.
  • Sprinkle with half of the melted butter; repeat for second layer. Bake at 350 for 25 minutes, or until bubbly and top is browned.
