I love meatloaf, but not as much as I love meatloaf sandwiches. In fact, I'll make a meatloaf just for the leftovers. I'll fry the cold slice in a buttered pan until hot and crusty, and enjoy it on toast with ketchup. This recipe is basically that, plus bacon, in burger form.

1 large egg, beaten
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon brown sugar
½ teaspoon onion powder
¼ teaspoon garlic powder
pinch dried thyme
cayenne pepper to taste
¼ cup plain bread crumbs
⅔ cup chopped cooked bacon
1 pound ground chuck beef (85% lean)

Steps:

  • Whisk egg, ketchup, Worcestershire sauce, salt, brown sugar, onion powder, garlic powder, thyme, and cayenne pepper together in a bowl. Add breadcrumbs and chopped cooked bacon. Crumble in the ground beef. Mix with your fingers until bacon and breadcrumbs are distributed evenly.
  • Form mixture into 4 burgers with your wet hands. Cover with plastic wrap and refrigerate until chilled thoroughly, about 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place burgers on the grate and cook, turing occasionally, until firm and cooked to your desired doneness. An instant-read thermometer inserted into the center should read between 145 and 150 degrees F (63 degrees C). Let burgers rest for a few minutes before serving.

1 1/2 cups ketchup
1 1/2 teaspoons apple cider vinegar
2 tablespoons sriracha
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 white onion, chopped
8 to 10 fresh oregano leaves, finely chopped
2 sprigs fresh thyme, finely chopped
1 teaspoon kosher salt
Freshly ground black pepper
2 stale slices white bread, rubbed between hands to make sand
1 large egg
One 212-milliliter jar sun-dried tomato or basil pesto (about 3/4 cup)
2 teaspoons Worcestershire sauce
2 ounces freshly grated Parmesan
2 cloves garlic, grated on a rasp
1 pound ground chuck (80/20)
3 to 4 burger buns, warmed
Thin potato chips, for topping

Steps:

  • For the sauce: Combine the ketchup, vinegar, sriracha and pepper in a small pot. Simmer, stirring occasionally, until reduced slightly, 10 to 15 minutes. Remove and refrigerate.
  • For the patties: Add the olive oil to a small pan on medium-high heat, then add the onion, oregano, thyme, salt, pepper and 1 tablespoon water. Stir to coat everything and cook until the onions are translucent but not browned, 3 to 5 minutes.
  • Meanwhile, combine the bread, egg, pesto, Worsterschire sauce, Parmesan and garlic in a medium bowl. Add the sauteed onions to the breadcrumb mixture and stir to completely combine. Break up the beef in a large bowl with your hands or a wooden spatula. Add the breadcrumb mixture and gently mix together.
  • Preheat the grill for cooking with direct and indirect heat at 350 degrees F or heat a pan over medium-high heat.
  • Evenly divide the mixture into 3 or 4 balls and form into patties. Place on the direct heat of the grill or into the pan. Cook on one side until the patties release, 5 to 6 minutes, then flip, transferring to the indirect heat of the grill. If using a pan, simply lower the heat and cover the patties with a lid or upside-down metal bowl. Cook until the internal temperature reaches 160 degrees F, 5 to 6 minutes more. Remove from the heat and let rest, covered, for 5 minutes.
  • For the burgers: Add a patty to each bun bottom, then top with the sauce and a pile of potato chips. Top with the bun tops. Enjoy!

Steps:

  • Place a large skillet over medium heat while you prepare the meatloaf burgers.

1/4 cup fresh parsley, chopped
1/2 cup breadcrumbs (preferably panko)
1 large egg
1 teaspoon sweet or smoked paprika
1/3 cup ketchup
1/3 cup duck sauce
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
4 potato buns or other rolls, split
Lettuce, sliced tomato and pickle slices, for topping
Sweet potato chips, for serving (optional)

Steps:

  • Preheat a grill to medium high. Soak the onion rings in a bowl of cold water. Meanwhile, combine the meatloaf mix with the diced onion, parsley, breadcrumbs, egg, paprika, 1 tablespoon each ketchup and duck sauce, 1 teaspoon salt and 1/2 teaspoon pepper. Gently form into four 1-inch-thick patties; make an indentation in the center of each.
  • Brush the patties with the olive oil and grill until marked on the bottom, about 6 minutes. Meanwhile, mix the remaining ketchup and duck sauce in a small bowl for brushing; set aside a few tablespoons. Turn the patties, brush with the ketchup mixture and continue grilling until cooked through, about 5 more minutes. Toast the buns, if desired.

1/2 cup onion (diced (about 1/2 a small onion))
1 egg
1/2 cup saltine cracker crumbs (about 12 crackers*)
1 teaspoon dried oregano
1 teaspoon garlic powder
1/3 cup ketchup
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/3 cup ketchup
3 Tablespoons brown sugar

Steps:

  • In a large bowl, combine all of the meatloaf ingredients and mix together by hand. Shape into 4-5 individual patties.
  • Make the topping by combining 1/3 cup ketchup and the brown sugar in a small bowl and stirring until smooth.
  • Heat a large cast iron skillet over medium heat then add a little oil to it. When the oil is hot, carefully place each hamburger patty into the skillet and cook for about 5-7 minutes until nicely browned on the bottom, then flip to cook the other side. Immediately top each hamburger patty with some of the brown sugar ketchup topping while the patties cook for another 5 minutes on the other side.
  • When the meatloaf patties are no longer pink in the center, remove from the skillet and let rest for 5 minutes so the juices can redisperse. Serve with mashed potatoes and green beans, or on hamburger buns for a meatloaf sandwich.

This recipe is a mixture of 2 or 3 recipes I've found on the Zaar and my mothers. Came out absolutely amazing. I don't remember the specific amount of anything I used, but I couldn't submit the recipe without some measurements. So below are some absolute guesses as to how much of each ingredient I put in.

2 tablespoons mayonnaise
3/4 cup crushed crackers and crushed pretzel
2 teaspoons oregano
2 teaspoons basil

1 tablespoon barbecue sauce
1 teaspoon hot sauce
1/4 cup brown sugar
1 tablespoon seasoning salt
1 tablespoon ground red pepper
1 1/2 tablespoons ground black pepper

0.5 (7/8 ounce) package brown gravy mix

Steps:

  • Grease baking pan with butter. Make a layer of brown sugar with the brown sugar. (Approximating the size of your meatloaf. You want to over-shoot it, rather than under-toss it.).
  • On top of the brown sugar, throw on the ketchup, barbecue sauce, and hotsauce. Using a fork, make a layer on top of the brown sugar without messing it up. (This could have been done in a bowl.).
  • In a large (mixing) bowl, combine the ground beef, seasoned salt, black pepper, oregano, basil, crushed pretzels and crackers, (I just threw the crackers and pretzels in whole and crushed them while combining.) garlic powder, mayonnaise, brown gravy mix, and ground red pepper.
  • Mold your loaf on the layers of brown sugar and condiments. There should be some of the under layers being squished out of the sides, use a fork and scrape that up and slap it on top of the loaf.
  • Place in 350 degree temperature oven for about 30 minutes, depending on how much ground beef you're using.
