CREAM CHEESE ZUCCHINI BREAD (LOAF AND/OR MUFFINS)



Cream Cheese Zucchini Bread (Loaf And/Or Muffins) image

This was a forgotten recipe in Private Recipes folder. I vaguely remember working on it a year or so ago! I tried it out again this morning, and it's very good if I do say so myself. I use Splenda and low fat ingredients and am posting it that way for the nutritional info, but feel free to use regular ingredients if you desire. This makes two loaves so you can eat one and give one away or freeze for later use. When I made it this morning, I made a loaf and 10 muffins. Because I was using it as a breakfast bread I left out the brown sugar to make it less sweet. For a sweeter, snack type bread, make as written. Hope you enjoy!

3 eggs
1 cup Splenda granular, sugar substitute
1/2 cup sugar
1/2 cup packed brown sugar
1 cup canola oil or 1 cup vegetable oil
1 teaspoon vanilla
8 ounces fat free cream cheese, softened
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cups chopped pecans (optional)
2 cups shredded zucchini (about 2 medium)

Steps:

  • Preheat oven to 350 degrees. Greas and flour 2 9x5 loaf pans.
  • Beat eggs, sugar, oil and vanilla 2-3 minutes until smooth.
  • Add cream cheese and beat until blended.
  • In a separate bowl, combine dry ingredients.
  • Slowly add flour mixture to egg mixture, beating constantly until combined.
  • Fold in nuts and zucchini.
  • Pour evenly into prepared pans and bake for 1 hour or until a toothpick inserted in center of loaf comes out clean.
  • Cool for 10 minutes in pan before turning out.

½ cup warm water
6 tablespoons flax seed meal
1 cup turbinado sugar
¾ cup unsweetened applesauce
¼ cup safflower oil
1 teaspoon vanilla extract
2 ½ cups zucchini, grated
2 cups oat flour
1 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon salt
½ teaspoon baking soda
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 muffin pans.
  • Whisk warm water and flaxseed together in a large bowl. Mix in sugar, applesauce, oil, and vanilla extract. Stir in zucchini until well combined.
  • Sift oat flour, all-purpose flour, baking powder, cinnamon, nutmeg, salt, and baking soda into a bowl. Stir in raisins and combine with the zucchini mixture until batter is just mixed.
  • Transfer batter into muffin cups using 1/4 cup measure.
  • Bake in the preheated oven until a knife inserted into a muffin comes out clean, 50 to 55 minutes.

I inherited a old recipe from a family friend for a traditional (read unhealthy) zucchini and set about fixing it and making it just a bit different. I use cherries as I spent my summers in Northern Michigan eating the cherries right off the trees but feel free to mix it up according to your tastes - my sons favorite is cherry and chocolate chip and my husband prefers chocolate pecan. The recipe can handle up to 2 cups of "add-ins"

2 cups zucchini, shredded
1 cup unsweetened applesauce
1/4 cup canola oil or 1/4 cup blended vegetable oil
3/4-1 cup sugar (I have used all kinds including natural fruit derived sugars and they all work, amount of sugar is u)
3 eggs
1 tablespoon vanilla extract
2 cups white whole wheat flour
2 teaspoons baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon cinnamon
1 cup dried cherries
1 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 350.
  • Combine eggs, applesauce, oil, sugar, zucchini, and vanilla in a bowl and mix until well blended.
  • Add in flour, baking soda and powder, salt, and cinnamon and mix until just combined.
  • Fold in dried cherries and pecans (if using).
  • Pour into 2 8 X 5 loaf pans or 24 lined muffin cups.
  • Bake 15-20 minutes for muffins or 25-30 minutes for loaves - be sure not to over bake!

4 eggs (or vegan substitute or equivilant)
1/3 cup water
2 cups zucchini, shredded

2 teaspoons baking soda

The batter will look runny but when you take them out of the oven they will be nice and soft. I can't keep them long, they go so fast!

2 cups zucchini, seeded and grated
2 1/2 cups whole wheat flour
1 1/2 teaspoons stevia powder
2 teaspoons baking soda
1 1/2 teaspoons allspice
1 teaspoon cinnamon
8 prunes, pitted & finely chopped (see note below)
1/2 cup walnuts (optional)
1/2 cup raw cocoa nibs (optional)
1/2 cup blackstrap molasses
1/2 cup unsweetened applesauce
2 eggs

Steps:

  • Preheat oven to 350°F.
  • Line a colander with several layers of paper towels. Place zucchini on top and cover with several more layers of paper towels. Add weight and set aside at least 15 minutes, pressing occasionally to remove water.
  • In a large bowl, combine flour, stevia, baking soda, spices, prunes, walnuts, and cocoa nibs; add zucchini and toss to coat.
  • In a separate bowl, beat the molasses with the applesauce and the eggs.
  • Create a well in the dry ingredients and add wet ingredients; stir until uniformly combined.
  • Pour into greased loaf pans and bake 50-55 minutes OR into 18 lined muffin tins and bake 25-30 minutes.

1 1/2 cup flour ( I use Gold Medal flour)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1 cup zucchini, shredded ( about 1 medium zucchini)
1 egg
1 Tbsp vanilla extract
2 Tbsp brown sugar substitute ( I use Lakanto Monkfruit Golden Sweetener)
4 Tbsp white granulated sugar substitute ( I use Lakanto Monkfuit Classic Sweetener)
1/2 cup water
2 Tbsp Land o' Lakes made with canola oil light butter melted or 3 Tbsp of unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees. Spray a 12-cup muffin tin or bread pan (8x4 inch) with non stick cooking spray.
  • In a medium bowl mix together, self rising flour, baking powder, baking soda, white sugar substitute, cinnamon, and nutmeg. Set aside.
  • In a separate bowl combine, egg, zucchini, water, vanilla, and brown sugar. Stir to combine.
  • Gradually add wet ingredients into the dry ingredients. Stir just to combine.

  • Remove from oven. Let it cool for 5 minutes before removing them from pan.Store the loaf or muffins in an air tight container in the fridge for 5-7 days or freeze for up to a month.

1 1/2 teaspoons baking soda
1 tablespoon cinnamon
1 cup chopped walnuts
1/4 teaspoon almond extract
