1 package (7 ounces) angel hair pasta or thin spaghetti
2 small zucchini, cut into 1/4-inch pieces
2 garlic cloves, minced
3 tablespoons olive oil
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
1/4 cup minced fresh parsley
1 teaspoon dried oregano
1/8 to 1/2 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute zucchini and garlic in oil until zucchini is crisp-tender. , Add the tomatoes, parsley, oregano and pepper flakes; heat through. Drain pasta; serve with zucchini mixture.

1 tablespoon olive oil
1 pound bulk Italian sausage
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon Italian seasoning
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes
4 medium potatoes, cubed
4 cups chicken broth
4 cups chopped kale
1 cup half-and-half

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
  • Heat oil in the cooker. Add sausage and cook until no longer pink, about 3 minutes. Stir in onion and garlic; cook until softened and translucent, about 3 minutes. Stir in Italian seasoning, salt, pepper, and red pepper flakes. Add potatoes and chicken broth. Close and lock the lid. Select high pressure and set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
  • Stir kale into the cooker. Select Saute function. Cook, uncovered, for 2 minutes. Stir in half-and-half. Turn off the cooker and serve.

3/4 pound ground beef
1 tablespoon butter
2 medium zucchini, thinly sliced
1/4 pound sliced fresh mushrooms, sliced
2 tablespoons sliced green onions
1-1/2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon garlic powder
1-1/2 cups cooked rice
1 can (4 ounces) chopped green chilies
1/2 cup sour cream
1 cup shredded Monterey Jack cheese, divided

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the butter, zucchini, mushrooms and onions; cook and stir until vegetables are tender. Drain. Stir in the chili powder, salt and garlic powder. Add the rice, chilies, sour cream and half of the cheese. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 20-22 minutes or until cheese is melted.

1 Tbs. each black pepper (coarse ground) chipotle (Hatch Mild), cumin, garlic powder, Himalayan Crystal salt, NM green chile powder (Hatch HOT!), onion powder, paprika, thyme
1 tsp. each: cayenne chives, cilantro, coriander, lemon oil (OR lemon peel OR lemon zest), NM red chile powder (Hatch XXX-HOT!), oregano
(Yields 1 large spice container full)
Hot 'n Spicy NM Hummus
Step 1 (Blend these ingredients until smooth)
3 Tbs. olive oil (extra virgin cold pressed)
1/2 cup lemon juice
1 avocado
1 or 2 bell peppers (red or orange)
3 sun-dried tomatoes
2 cloves garlic minced
1/4 cup tahini
Step 2 (Blend in these ingredients until creamy)
2 cups butter beans (OR lima beans OR garbanzo beans)
1 to 3 tsp. Himalayan Crystal salts to taste
1 tsp. Mediterranean herbs
1 tsp. cumin
1 to 3 tsp. Zia Zip Spice Mix

1 to 3 Hot NM green chili peppers to taste

(Yields 1 quart Zia Hot 'n Spicy PeaCado Hummus refrigerate)

  • Zia Zip Spice Mix (Formerly: NM Zippy Spice Mix) Mix the spices up. Put some in a shaker for present use. Put excess in an air tight bag and freeze or store in a cool dark place for use later. Hot 'n Spicy NM Hummus Step 1: In a food processor or blender, process the oil, lemon juice, avocado, bell peppers, sun-dried tomatoes, garlic, and tahini until smooth (15-20 minutes). Step 2: Add the beans and seasonings and process until creamy (15-20 minutes). 1/2 cup chopped green pepper
2 cans (15 ounces each) tomato sauce

1/2 pound sliced fresh mushrooms
1 cup grated Parmesan cheese
1/2 to 3/4 cup dry red wine or beef broth
1/2 cup sliced pimiento-stuffed olives
1/4 cup dried parsley flakes
1 to 2 tablespoons dried oregano
2 teaspoons Italian seasoning
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon pepper
Hot cooked spaghetti

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. , Transfer to a 5-qt. slow cooker.
