Beefy Cornbread Casserole is a simple and filling supper! Seasoned ground beef with salsa and cornbread mix with melty cheese. So good!

2 lbs ground beef
1 small onion (diced)
2 cloves garlic (minced)
1 16 oz jar salsa
2 6.5 oz packets Martha White Yellow Cornbread Mix (divided use)
1 ⅓ cups water (divided use)
1 14.75 oz cream style corn (divided use)
2 cups shredded Mexican-style cheese
16 slices pickled jalapenos
Optional toppings:
sour cream
pico de gallo
salsa

Steps:

  • Preheat oven to 425f degrees. Spray a 9x13 baking dish with Crisco no-stick cooking spray.
  • In a large pan, brown ground beef with onions and garlic. Drain excess grease.
  • Put back in pan and stir in salsa.
  • Prepare one packet of Martha White Yellow Cornbread mix with ⅔ cups water. Stir well then add ½ can cream style corn.
  • Mix well then pour evenly into prepared baking dish.
  • Spread ground beef mixture on top of cornbread mixture.
  • Prepare second packet of Martha White Yellow Cornbread mix with ⅔ cups water. Stir well then add ½ can cream style corn. Mix well then pour evenly on top of ground beef mixture.
  • Top with shredded cheese. Then evenly place pickled jalapeno slices on top.
  • Cover with aluminum foil and cook for 15 minutes.
  • Then remove foil and cook for an additional 10 minutes.
  • Slice and serve with sour cream, pico de gallo or salsa!

1 pound ground beef
1 cup chopped green pepper
1 cup chopped onion
2 cans (8 ounces each) tomato sauce
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg, room temperature, beaten
1 cup 2% milk
1/4 cup canola oil

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, lightly brown ground beef, green pepper and onion; drain. Add tomato sauce, chili powder, salt and pepper; simmer 10-15 minutes. , Meanwhile, combine dry ingredients. Combine egg, milk and oil; stir into dry ingredients just until moistened. Pour over beef mixture. , Bake at 400° until golden, 20-25 minutes. Serve in skillet, or cool briefly, then run a knife around edge of skillet and invert on a serving plate; cut into wedges.

1 medium onion, chopped
4 tablespoons vegetable oil
2 garlic cloves, finely chopped
1 pound ground beef chuck
1 teaspoon sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne
1/4 teaspoon ground allspice
1/4 teaspoon black pepper
3/4 teaspoon ground ginger
1 1/4 teaspoons salt
1 (14- to 15-ounce) can diced tomatoes in juice
2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1 teaspoon baking powder
1/3 cup whole milk
1 large egg
2 ounces coarsely grated sharp Cheddar (1/2 cup plus 2 tablespoons)

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Lightly oil a 9 1/2-inch (6-cup capacity) pie plate.
  • Cook onion in 2 tablespoons oil in a deep 10-inch heavy skillet over moderate heat, stirring occasionally, until edges are golden, 3 to 4 minutes. Add garlic and cook, stirring, 1 minute. Add beef and cook, breaking up large lumps, until no longer pink, 4 to 5 minutes. Add sugar, spices, and 1 teaspoon salt and cook, stirring, 1 minute. Add tomatoes with juice and briskly simmer, stirring occasionally, until liquid is reduced to about 1/4 cup, 8 to 10 minutes.
  • While beef simmers, whisk together cornmeal, flour, baking powder, and remaining 1/4 teaspoon salt in a medium bowl. Whisk together milk, egg, and remaining 2 tablespoons oil in a small bowl, then stir into cornmeal mixture until just combined. Fold in 1/2 cup cheese.
  • Spoon cooked spiced beef into pie plate with a slotted spoon, reserving juices in skillet. Skim off and discard fat from juices if desired, then pour juices over beef in pie plate.
  • Spoon 4 mounds of corn bread batter over beef, then sprinkle remaining 2 tablespoons cheese over batter. Bake until a wooden pick or skewer inserted into center of corn bread comes out clean, 15 to 25 minutes.
