YUMMY MUMMY MEATLOAF

Meatloaf:
1 1/2 pounds ground beef
1 egg
1 medium onion, chopped
1 cup milk
1 cup dry breadcrumbs
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared mustard
8 ounces pappardelle pasta
1 3-ounce mozzarella ball
1 can pitted large black olives
Sauce:
3/4 cup ketchup
3/4 cup water
1/4 cup brown sugar
1/2 teaspoon prepared mustard

Steps:

  • To make the meatloaf:
  • 1. Heat the oven to 350°F. Lightly oil a 10 x 13-inch (or 10-inch round) baking dish. Combine the meat, egg, onion, milk, breadcrumbs, salt, and pepper in a large bowl. Shape the mixture into a 10-inch round dome and place it in the baking dish. Mix the 1/3 cup ketchup, 2 tablespoons brown sugar, and 2 tablespoons prepared mustard in a small bowl until blended. Spread the mixture over the meatloaf. Bake for 1 hour. Transfer the meatloaf to a wire rack and let rest for 20 minutes.
  • 2. Cook the pappardelle according to the package directions; drain and keep warm while meatloaf rests.
  • To make the sauce:
  • 1. Combine all the ingredients in a small saucepan. Cook over medium heat, stirring, until bubbly and thickened, about 3 minutes. Keep warm until ready to serve.
  • 2. Remove the meatloaf from the pan and place on a serving plate. Cut the mozzarella ball in half. Layer the pasta strands one by one over the meatloaf to look like a mummy's wrappings, adding the mozzarella and two olives for eyes as shown. Surround the meatloaf with more olives. Serve with the sauce on the side.

Parchment paper
1 cup ricotta, drained
1 cup grated Parmigiano-Reggiano, a couple of handfuls
1/2 pound fresh mozzarella, small dice
A handful of chopped flat-leaf parsley, a couple of tablespoons
1 egg yolk, beaten
2 cloves garlic, finely chopped
Few grinds black pepper
1 teaspoon Essence, recipe follows
1/2 pound thinly sliced prosciutto, about 10 slices
6 sheets phyllo dough, from frozen foods aisle of your market
1/2 stick melted butter
Black olives, for eyes
Red and green bell peppers, to cut into Egyptian shapes to decorate the mummy
1 jar, 16 to 18 ounces, roasted red peppers, drained
6 basil leaves
1 small clove garlic
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat oven to 400 degrees F.
  • Place parchment paper on baking sheet.
  • Mix together cheeses, parsley, egg yolk, garlic, pepper and Essence.
  • Lay out the prosciutto on a flat surface so it overlaps slightly. It should create a surface that is about 12 to 13 inches long.
  • Place the cheese mixture in the center of the prosciutto and roughly shape into a mummy form.
  • Wrap the prosciutto around the cheese mixture sealing it in completely and reshape the mixture to look like a mummy with a rounded head and the body tapering at the bottom.
  • Place a sheet of phyllo on a work surface, brush with melted butter, repeat with 2 more sheets, placing them on top of one another. Do not brush top sheet with butter.
  • Lay the prosciutto wrapped cheese in the center of the phyllo and wrap the phyllo around the "mummy".
  • Butter the outside of the phyllo and then reshape into the mummy shape.
  • Place 1 of the remaining sheets of phyllo on the parchment lined baking sheet, brush with melted butter, repeat with the remaining 2 sheets, placing them on top of one another.
  • Carefully slice the phyllo into 1/2-inch wide strips horizontally. Lay the wrapped mummy in the center of the sliced strips and wrap the sliced pieces around the mummy so it looks like bandages. Gently brush the top with butter.
  • Bake for 20 minutes, or until golden brown on the outside.
  • When the mummy is just a few minutes from coming out of the oven, place drained roasted red peppers, basil leaves, and garlic in the food processor and pulse grind into a pepper puree. Transfer to a small serving bowl.
  • Decorate the mummy with black olives and pepper shapes and transfer him to his "coffin" with 2 wide, long, offset spatulas.
  • Serve with red pepper puree.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

2 (12 ounce) logs port wine cheese
8 ounces cream cheese
2 tablespoons milk
2 peppercorns
1 slice pimiento, strip

Steps:

  • Cut the cheese logs into pieces for the mummy's head (make it a square shape) arms (smaller and thinner) and legs (longer than the arms).
  • Arrange on the platter.
  • Beat cream cheese ( softened at room temperature) and milk until smooth.
  • Use a pastry or plastic bag and cut a small slit for piping.
  • use a basket weave tip #47 and pipe mixture over the entire mummy ( I use a cookie decorating tool. It works almost like a caulking gun. I squeeze the trigger and the mixture pipes out).
  • Leave one or two longer like the mummy is coming undone.
  • Add two whole peppercorns for the eyes.
  • Add the pimento strip for the mouth.
  • Chill until ready to serve.
  • Serve with crackers.

Lightly score 4-in.-wide rectangle in the center of the triangle 2 in. from the top and bottom. , On each long side, cut 1-in.-wide strips at an angle up to the score line, leaving a triangle in the top center of the wide end for the head., Inside the scored rectangle in the center, layer the cheese, pizza sauce, pepperoni and green pepper. 2 teaspoons vanilla
1 egg
3 cups Gold Medal™ all-purpose flour
64 miniature chocolate chips (about 2 teaspoons)
1 cup white vanilla baking chips

Steps:

  • In large bowl, beat butter, sugar, vanilla and egg with electric mixer on medium speed until light and fluffy. Add flour; beat on low speed until dough forms. Roll dough into a ball. Cover with plastic wrap; refrigerate 30 to 45 minutes for easier handling.
  • Heat oven to 350°F. Divide dough into 8 equal pieces. On lightly floured surface, roll each piece into rope 14 inches long. Cut each rope into 4 (3-inch) and 4 (1/2-inch) lengths of dough. Roll the 4 (1/2-inch) pieces into balls and attach to 4 (3-inch) pieces as heads. On ungreased cookie sheet, place 1 inch apart. Press 2 chocolate chips, point sides down, in each mummy head for eyes.
  • Bake 8 to 10 minutes or until very light golden brown and tops are set. Immediately remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
  • In small resealable freezer plastic bag, place vanilla chips; seal bag. Microwave on High 40 to 60 seconds or until softened. Gently squeeze bag until chips are smooth; cut off tiny corner of bag. Squeeze bag to drizzle frosting in a crisscross pattern over cookies to look like mummy bandages. Let stand until set, about 20 minutes.

  • In a small skillet, bring cream and mustard to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until mixture is reduced to about 2/3 cup. Remove from the heat; stir in thyme., Meanwhile, place pork on a rack in a shallow baking pan. Brush with oil; sprinkle with salt and pepper. Broil 6 in. from the heat for 6 minutes. 1 (10 ounce) package frozen chopped spinach, thawed, well drained
1 green onion, sliced
1/2 cup finely chopped red pepper
1/4 cup Kraft® Grated Parmesan Cheese
1/4 teaspoon ground black pepper
wheat thins crackers, original snacks

Steps:

  • Pat dough into 12x16-inch oval on baking sheet sprayed with cooking spray. Indent dough, about 3 inches from one end of oval, for the mummy's head. Let rise in warm place 20 minutes or until doubled in volume.
  • Heat oven to 375°F Brush dough with egg. Bake 18 to 20 minutes or until golden brown and sounds hollow when tapped lightly. A recipe that I came up with after skimming through seemingly hundreds of recipes that either had ingredients that I can't eat or ingredients that we don't like... Perhaps you will like this too, and if so, enjoy!

6 lamb shanks
2 tablespoons garlic oil
2 onions
3 carrots
1 stick celery
3 tablespoons tomato paste
1 tablespoon mustard powder
1/4 cup balsamic vinegar
1/4 cup white wine vinegar
1 tablespoon rice flour

Steps:

  • Preheat the oven to 150°C Finely dice the onions, carrots and celery.
  • Heat the oil in a heavy casserole dish or dutch oven until shimmering and brown the lamb shanks on all sides, then set aside.
  • Reduce the heat and gently cook the onion, carrot, celery until they are soft and translucent.
  • Stir in tomato paste and mustard powder and cook for a few minutes more.
  • Stir in the vinegars then return the shanks to the pan.
  • Add water to almost cover the meat.
  • Place in the oven and cook gently until the meat is falling off the bones, approximately 3 1/2 hours.
  • Remove the shanks from the stew, skim the fat from the top, mash the veges into the liquid.
  • Bring to a simmer and reduce until nice and thick.
  • Stir in the rice flour if the sauce still needs more thickening.
  • Add the shanks back to the sauce and bring back to serving temperature, then serve over creamy mashed potatoes, polenta or your favorite starch, add a green vege and you are all balanced and good to go.

1 loaf (1 pound) frozen bread dough, thawed
3 pieces string cheese
2 cups sour cream
1 envelope fiesta ranch dip mix

Steps:

  • Let dough rise according to package directions. Place dough on a greased baking sheet. For mummy, roll out dough into a 12-in. oval that is narrower at the bottom. For the neck, make an indentation on each side, about 1 in. down from the top. Let rise in a warm place 20 minutes., Preheat oven to 350°. Bake 20-25 minutes or until golden brown. Arrange strips of string cheese over bread; bake 1-2 minutes longer or until cheese is melted. Remove from pan to a wire rack to cool., Meanwhile, in a small bowl, combine sour cream and dip mix. Chill until serving., Cut mummy in half horizontally. Hollow out bottom half, leaving a 3/4-in. shell. Cut removed bread into cubes; set aside. Place bread bottom on a serving plate. pizza toppings

Steps:

  • Roll out dough into a tall, rounded pyramid shape and cut slits all around the outside edge.
  • Layer the cheese, sauce and toppings in the middle.

At the wide end of the pyramid, lift up the large triangle and tuck the edges behind, before rounding them to form the head. 2 loaves (1 pound each) frozen bread dough, thawed
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese
1/2 cup pizza sauce
50 slices pepperoni
1/2 cup chopped green pepper
1 egg, lightly beaten
1 pitted ripe olive, sliced and cut in half

Steps:

  • Roll out each piece of dough into a rounded triangle shape, about 14-in. high x 11-in. wide at the base of the triangle. Place each on a parchment-lined baking sheet with the tip of the triangle toward you. Lightly score 4-in.-wide rectangle in the center of the triangle 2 in. from the top and bottom.
  • On each long side, cut 1-in.-wide strips at an angle up to the score line, leaving a triangle in the top center of the wide end for the head.
  • Inside the scored rectangle in the center, layer the cheese, pizza sauce, pepperoni and green pepper. Shape the top center triangle into a head. Starting at the head, fold alternating strips of dough at an angle across filling stopping at the last strip on each side. Fold the bottom dough tip up over the filling, then fold the remaining two strips over the top; press down firmly.
  • Brush dough with egg. Cover and let rise for 15 minutes. For eyes, press 1 olive slice into each head. Discard or save the remaining slices for another use.
  • Bake at 350 ° for 25-28 minutes or until golden brown. Let stand for 5 minutes before slicing. Yield: 8-10 servings.
