4 oz cream cheese *see notes
2 teaspoons dijon mustard
3 to rtillas
3 large lettuce leaves
6 slices turkey (sliced from the deli counter)
6 pieces bacon (cooked)
3 slices swiss cheese
Avocado and tomato (sliced)
Salt and pepper

Steps:

  • Add the cream cheese and Dijon into a small dish. Stir to combine.
  • Spread 1-2 tablespoons of the cream cheese mixture onto each tortilla, spreading 1/4 inch from the edge.
  • Layer the lettuce, turkey, bacon, Swiss, avocado, and tomato in the bottom third of your tortilla.
  • Season with salt and pepper.
  • Fold, burrito style, being sure to fold in the ends of the tortilla.
  • Slice in half, slightly diagonal, and serve.

2 tablespoons water
2 tablespoons red wine vinegar
1 tablespoon olive oil
1/8 teaspoon pepper
3/4 pound sliced deli turkey
6 flour tortillas (8 inches), room temperature
4 cups spring mix salad greens
2 medium pears, peeled and sliced
6 tablespoons crumbled blue cheese
6 tablespoons dried cranberries
1/4 cup chopped walnuts

Steps:

  • In a small bowl, whisk the water, vinegar, oil and pepper., Divide turkey among tortillas; top with salad greens, pears, cheese, cranberries and walnuts. Drizzle with dressing. Roll up tightly. Secure with toothpicks.

1 (8 ounce) package cream cheese with chives
2 tablespoons Dijon mustard
6 (8 inch) whole wheat tortillas
1 ½ cups finely shredded iceberg lettuce
12 slices thinly sliced deli turkey
¾ cup shredded Swiss cheese
1 large tomato, seeded and diced
1 large avocado, sliced
6 slices bacon, cooked and crumbled

Steps:

  • Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
  • Arrange about 1/4 cup of shredded lettuce on each tortilla, and press the lettuce down into the cream cheese mixture. Place 2 turkey slices per tortilla over the lettuce, and sprinkle with 2 tablespoons of shredded Swiss cheese. Top each tortilla evenly with tomato, avocado slices, and crumbled bacon.
  • Roll each tortilla up tightly, and cut in half across the middle with a slightly diagonal cut.

2 ounces sliced turkey meat
2 ounces lettuce
3 -4 slices tomatoes
1/4 green bell pepper
1/4 onion
4 -5 jalapenos
1 teaspoon salt
1 teaspoon pepper
1 tablespoon mustard
1 teaspoon butter
1 slice provolone cheese
1 flour tortilla

Steps:

  • slice up all the veggies just like you would for a sandwich or a fajita. place on flour tortilla.
  • add turkey meat, cheese, salt and pepper, and mustard to the wrap.
  • fold in half just like a soft taco. butter the outside of the tortilla. this part is tricky because you have to keep the tortilla closed with one hand. i used spray butter and it was a bit easier.
  • place the folded tortilla in the PREHEATED George Foreman Grill (a toaster oven would also work). be careful to make sure the tortilla stays closed while you put the lid down.
  • grill for 3-5 minutes or until golden brown.
  • enjoy.

1 1/2 cups kosher salt
1/4 cup light brown sugar
1 fresh turkey (12 pounds)

Steps:

  • Dissolve the salt and sugar in 2 gallons cold water in a large (at least 16 quart) stockpot or a clean bucket. (You can also add fresh herbs like rosemary, thyme or bay leaf, or aromatics like onions and garlic.) Add the turkey, cover and refrigerate, or set in a very cold place (that stays somewhere between 32 to 40 degrees F) for at least 12 hours and up to 24 hours.
  • Remove the turkey from the brine 1 hour before grilling. Rinse well under cold water and pat dry to remove the salt.
  • Prepare a charcoal grill for indirect grilling. The temperature inside the grill should be 350 degrees F.
  • Place the turkey on the grill, cover and grill until an instant-read thermometer inserted in the thigh registers 175 degrees F, 2 hours 15 minutes to 2 1/2 hours. Let the turkey rest 1 hour before carving.

4 ounces Jalapeno Cream Cheese, recipe follows
8 ounces Romaine lettuce, shredded
8 ounces tomatoes, seeded and diced
4 ounces red onions, diced
16 ounces smoked turkey, julienned
8 ounces avocado spread (such as guacamole)
1 1/2 jalapeno peppers, seeded and minced
8 ounces cream cheese, softened
2 1/2 teaspoons ground black pepper
1/4 teaspoon salt

Steps:

  • Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with avocado spread. Roll burrito style, making sure the ends are tucked in. Slice in half on the bias and serve.
  • Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.

The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

1 tablespoon vegetable oil
1 teaspoon Italian seasoning

Steps:

  • Prepare an outdoor grill for indirect medium-high heat.
  • Rinse turkey and pat dry. Turn wings back to hold neck skin in place. Return legs to tucked position. Brush turkey with oil. Season inside and out with Italian seasonings, salt, and pepper.
