1/2 cup granulated sugar
1/2 cup light brown sugar
1 Tablespoon ground cinnamon
1 teaspoon salt
16 ounces unsalted pecans halves (, (about 4 cups))
1 large egg white
1/2 teaspoon vanilla extract
1 teaspoon water

Steps:

  • Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper.
  • Add granulated sugar, brown sugar, cinnamon, and salt to a bowl and stir to combine.
  • In a separate large bowl, beat the egg white, vanilla, and water until stiff peaks form.
  • Add the pecans to the egg whites mixture and gently toss to coat. Add the cinnamon sugar mixture and stir gently until the pecans are well coated.
  • Spread the pecans into a single layer on the prepared baking sheet. Bake for about 40-45 minutes, stirring every 15 minutes.
  • Remove from the oven and allow the pecans to cool completely on the baking sheet.
  • When completely cool, store in an airtight container for up to 1 month.

2-3/4 cups pecan halves
2 tablespoons butter, softened, divided
1 cup sugar
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Place pecans in a shallow baking pan in a 250° oven for 10 minutes or until warmed. Grease a 15x10x1-in. baking pan with 1 tablespoon butter; set aside. , Grease the sides of a large heavy saucepan with remaining butter; add sugar, water, salt and cinnamon. Bring to a boil, stirring constantly to dissolve sugar. Cover; cook 2 minutes to dissolve any sugar crystals that may form on the sides of pan., Cook, without stirring, until a candy thermometer reads 236° (soft-ball stage). Remove from the heat; add vanilla. Stir in warm pecans until evenly coated. , Spread onto prepared baking pan. Bake at 250° for 30 minutes, stirring every 10 minutes. Spread on a waxed paper-lined baking sheet to cool.

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix sugar, cinnamon, and salt together in a bowl.

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Line a cookie sheet with wax paper. Spray the wax paper with cooking spray.

My husband isn't normally a nut person either but he begged me to get the recipe from her (not typical). You can eat them plain but we like them in a simple salad with balsamic vinegarette dressing. Oh so good!
