Here's what you need: yum yums, milk, double cream, eggs, strawberry jam

16 yum yums
1 cup milk
1 ⅛ cups double cream
3 eggs
strawberry jam, as needed

Steps:

  • Cut each yum yum into four pieces and set aside in large bowl
  • Add milk, double cream and eggs to a different bowl and whisk until smooth.
  • Soak the yum yum pieces in the mixture.
  • Layer soaked yum yum pieces in a baking tin.
  • Cover first layer in strawberry jam.
  • Add second layer of yum yums.
  • Bake for 45 mins at 190°C/375°F
  • Serve and enjoy!

8 c artisan cranberry walnut bread (can use other breads such as raisin, cinnamon or plain white bread)
2 c heavy whipping cream
2 c whole milk
1/2 c unsalted butter
4 eggs
4 tsp vanilla extract
2 Tbsp ground cinnamon
SAUCE
2/3 c heavy cream
2 c granulated sugar
1 c unsalted butter
4 Tbsp rum extract (I use Adam's Jamaican rum extract)

Steps:

  • 1. Preheat your oven to 350 degrees.
  • 2. Coat a large casserole dish with non-stick baking spray, I use Baker's Joy.
  • 3. Cut bread into 1" pieces, placing them in a large mixing bowl.
  • 4. Mix whipping cream and milk together. Stir in 1/2 cup of unsalted butter and cook over a medium heat until butter is melted.
  • 5. Stir this milk mixture into the bowl of bread cubes. Let mixture stand for 20 minutes so liquid can absorb into bread pieces.
  • 6. Beat eggs slightly to blend. Add vanilla and ground cinnamon.
  • 7. Pour into mixture. Mix well.
  • 8. Pour into prepared baking dish.
  • 9. Bake for 1 to 1 1/2 hours until bread pudding is set and golden brown.
  • 10. SAUCE: Put heavy cream, butter, and sugar in a saucepan. Cook on low heat until sugar is dissolved. Do not boil. Add rum extract and stir well.
  • 11. Pour rum sauce over hot bread pudding just before serving.
  • 12. Keep refrigerated in separate containers and heat before serving leftover bread pudding.

1 teaspoon baking soda
1/4 cup melted butter

Steps:

  • Pre-heat oven to 350 degrees F or 180°C.
  • Grease and flour one loaf pan.
  • Mix ingredients in the order given.
  • Pour into loaf pan and bake for one hour or until the loaf tests clean.
  • If the top starts to brown too much, cover with aluminium foil and continue cooking until bread is done.

1 1/2 loaves white or wheat bread (day-old bread works great)
1 1/2 cups whole milk
1 cup sugar
3/4 cup melted butter or margarine
2 tablespoons vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 eggs, beaten
16-ounce can fruit cocktail
8 1/4-ounce can crushed pineapple
1/2 cup chopped pecans
1/2 cup dark raisins

Steps:

  • Preheat 350 degrees F.
  • Tear each slice of bread into about 5 or 6 pieces and place in a large bowl. In a separate bowl, place the milk, sugar, butter, vanilla, cinnamon, nutmeg, and eggs. Mix well, until the sugar dissolves. Add the fruit cocktail, pineapple, pecans, and raisins, and then gently fold in the torn bread, making sure it soaks up the liquid ingredients. Pour equal amounts of the mixture into 2 greased 9 by 13-inch baking pans. Bake for 40 minutes, stirring once after 15 or 20 minutes. Stirring helps rich bread pudding bake evenly. Serve cold or hot, depending on the season and your mood.

2 eggs beaten
1 1/3 c sugar
2 tsp vanilla
3 c grated fresh zucchini
2/3 c melted unsalted butter
2 tsp baking soda
pinch salt
3 c all-purpose flour
1/2 tsp nutmeg (my clan does not care for this, so it can be omitted)
2 tsp cinnamon
1 c chopped pecans or walnuts (optional)
1 c dried cranberries ir raisins (optional)

Steps:

  • 1. Preheat oven to 350*F. In a large bowl, mix together the sugar, eggs, and vanilla. Mix in the grated zucchini and then the melted butter.
  • 2. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, a third at a time. Sprinkle in the cinnamon and nutmeg, and mix. Fold in the nuts and dried cranberries or raisins if using.
  • 3. Divide the batter equally between two greased 5x9 inch loaf pans. Bake for 1 hour (check for doneness at 50 minutes) or until a wooden pick inserted in the center of the bread comes out clean.
  • 4. Cool in pans for 10 minutes. Turn out onto wire racks to cool completely. Makes 2 loaves :)
