Creamy Greek Yogurt Dressing image

This wonderfully light and creamy yogurt dressing is a cinch to make and is delicious on just about anything, even grilled meats.

Provided by Jennifer Segal, modestly adapted from Ana Sortun via Fine Cooking April/May 2015

Yield About 1 cup, enough for 4-5 salads

Number Of Ingredients 9

2 tablespoons fresh lemon juice, from one lemon
1 tablespoon white wine vinegar, best quality such as Lucini
1½ teaspoons sugar
1 teaspoon minced garlic, from about 2 cloves
½ cup plain whole milk Greek yogurt
⅓ cup extra virgin olive oil, best quality such as Lucini
½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried dill

Steps:

  • Combine all of the ingredients in a bowl and whisk to combine. Refrigerate until ready to serve. The dressing keeps well for 3-4 days.

2 tbsp Dijon mustard
2 tbsp honey
1 1/2 tbsp cider vinegar

2 anchovy fillets or 3/4 tsp Anchovy paste ((Note 2))

  • Use milk to adjust to desired consistency.

2 cups grated English or Persian cucumber (unpeeled)
1 clove garlic, minced
4 sprigs fresh mint, leaves only, minced finely
1 teaspoon kosher salt
2 tablespoons golden raisins
Freshly ground black pepper

  • Whisk the yogurt until smooth. Add the rest of the ingredients, plus a little freshly ground black pepper if you like. Stir, chill, and serve.

1/2 cup walnuts
1 Persian cucumber, finely chopped
3 cups plain whole-milk Greek yogurt
3 tablespoons chopped golden raisins
1 tablespoon finely grated green garlic, or 1 garlic clove, finely grated
1 teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice
1 tablespoon crushed dried mint leaves, plus more for serving
1 tablespoon olive oil, plus more for drizzling
2 teaspoons crushed dried rose petals; plus more for serving (optional)
Kosher salt, freshly ground pepper
2-3 tablespoons whole milk (optional)
Aleppo-style pepper (for serving)

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing occasionally, until golden brown, 8-10 minutes. Let cool, then finely chop.
  • Mix walnuts, cucumber, yogurt, raisins, green garlic, lemon zest, lemon juice, 1 Tbsp. mint, 1 Tbsp. oil, and 2 tsp. rose petals, if using, in a medium bowl to combine; season with salt and pepper. If yogurt looks thick, stir in milk as needed.
  • Serve topped with Aleppo-style pepper and more dried mint and rose petals and drizzled with more oil.
