6 tablespoons vanilla yogurt
6 tablespoons reduced-fat whipped topping
1/4 teaspoon plus 1/8 teaspoon ground cinnamon, divided
2 medium red apples, chopped
1 large Granny Smith apple, chopped
1/4 cup dried cranberries
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the yogurt, whipped topping and 1/4 teaspoon cinnamon. Add apples and cranberries; toss to coat. Refrigerate until serving. Sprinkle with walnuts and remaining cinnamon before serving.

2 cups diced, unpeeled Granny Smith or Golden Delicious apples ((about 1.5 medium apples))
2 cups diced unpeeled red apples (such as Red Delicious, Gala, or Honey Crisp) ((about 1.5 medium apples))
1/4 cup golden raisins
1 tablespoon apple juice ((or sub with orange juice or lemon juice))
5.3 ounces (about 1/2 cup) Greek-style vanilla yogurt
1/4 cup light mayonnaise
1/2 teaspoon apple pie spice ((can substitute with ¼ teaspoon cinnamon and 1/4 teaspoon of nutmeg))
¼ cup chopped toasted pecans
¼ cup unsweetened shredded coconut

Steps:

  • In a medium bowl, toss together apples, raisins, and juice.
  • In a small bowl, whisk together yogurt, mayonnaise and apple pie spice.
  • Gently combine yogurt mixture with apple mixture. Refrigerate until ready to serve.
  • Just before serving, sprinkle with pecans and coconut.

3/4 cup cooked plain whole-grain sorghum
1 apple
1 teaspoon virgin coconut oil
1 teaspoon brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
Pinch salt
1/2 cup plain Greek yogurt

Steps:

  • Heat the sorghum in a microwave-safe bowl for 1 1/2 minutes. Meanwhile, heat a skillet over medium-high heat and slice the apple (with skin) thinly. Add the coconut oil to the skillet along with the apple slices and cook, stirring, 2 minutes. Sprinkle the brown sugar, cinnamon, ginger and salt over the apples. Stir well, and cook, stirring, for another 2 minutes. Remove from the heat, then top the sorghum with the yogurt and cinnamon-ginger apple slices. Eat warm.

1 tablespoon raisins or 1 tablespoon currants
1 tablespoon sunflower seeds
1 teaspoon coconut flakes
1 teaspoon fresh lime juice
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
4 golden delicious apples or 4 Red Delicious apples

Steps:

  • In a mixing bowl, combine the yogurt, apple juice, raisins, sunflower seeds, coconut, lime juice, vanilla and cinnamon.
  • Core the apples and cut into thin wedges or bite-size pieces.
