SHAI ADENI (ADENI TEA)

1 cinnamon stick
4 cloves
8 green cardamom pods (lightly smashed)
3 cups water
1/2 cup sweetened condensed milk
1 1/2 tablespoons black tea leaves

Steps:

  • In a small saucepan, combine the cinnamon stick, cloves, green cardamom pods, water, and sweetened condensed milk. Bring to a simmer and cook until the spices are fragrant, about 10 minutes.
  • Add the tea leaves and continue to simmer for another 2-4 minutes to desired strength. Strain the mixture and serve hot.

1/2 tbsp tea powder
1 small pc cinnamon
2 cloves
2 cardamom
1/2 cup milk
Sugar to taste

Steps:

  • Combine water, tea powder and spices in a saucepan and bring it to boil till the tea has brewed well.
  • Add the milk and bring it to a boil.
  • Add sugar, switch off the flame.
  • Strain into your favorite cup or mug and enjoy!

Chai Adani is one of my favorite teas. It's served every where all year round, you can get it at humble road side tea stands to fancy coffee shops. The ginger and cloves are the most dominant flavours in this lovely tea. If you don't have loose tea you may use a tea bag. Tea is drank very sweet here, so add sugar to taste.

1 rolled cinnamon stick, broken
3 green cardamom pods (slightly peeled)
5 cloves
1/4 teaspoon ground ginger
3/4 cup milk
3/4 cup water
1 teaspoon loose tea
sugar

Steps:

  • Add all the spices, milk and water to medium saucepan, cover with a lid. Place on stove on medium heat.
  • when milk mixture is almost at a boil add sugar and tea (don't forget to stir often other wise milk will scortch).
  • Allow chai to come to a boil. for a minute.
  • strain into a mug and enjoy.
  • I normally don't strain it, just fish out the spices and pour into my mug.

3 orange pekoe tea bags
3 cups water
¼ cup white sugar
10 cardamom seeds, or to taste
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
1 (12 fluid ounce) can evaporated milk

Steps:

  • Cut tea bags open and empty into a small bowl; discard tea bags.
  • Bring water to a boil in a saucepan; add loose tea. Boil tea until water becomes dark red, 3 to 5 minutes. Stir sugar into tea.
  • Grind cardamom seeds in an electric grinder or using a mortar and pestle. Stir ground cardamom, cinnamon, nutmeg, and ginger into tea; boil until flavors are infused, about 10 minutes.
  • Stir milk into tea and bring back to a boil for about 2 minutes. Pour tea through a sieve to separate out solids. Serve hot.

Add to onions and celery when making chicken soup; sprinkle on carrots before roasting; rub into steaks before searing.

1/3 cup caraway seeds (generous 1 ounce)
1/3 cup cumin seeds (about 1 ounce)
3 tablespoons cardamom seeds (about 1/2 ounce)
1 tablespoon whole black peppercorns
4 whole cloves
3 tablespoons coarse kosher salt
3 tablespoons ground turmeric

Steps:

  • Heat heavy large skillet over medium-high heat. Add first 5 ingredients; toast until aromatic and cumin seeds are slightly darker, stirring often, about 2 minutes. Cool slightly. Working in batches, finely grind spice mixture and salt in spice mill. Transfer to medium bowl. Whisk in turmeric. Transfer to airtight container. DO AHEAD: Can be made 1 month ahead. Store at room temperature.
