2 large sweet onions, chopped
1 medium leek (white portion only), chopped
2 tablespoons olive oil
6 garlic cloves, minced
6 medium yellow summer squash, seeded and cubed (about 6 cups)
4 cups reduced-sodium chicken broth
4 fresh thyme sprigs
1/4 teaspoon salt
2 tablespoons lemon juice
1/8 teaspoon hot pepper sauce
1 tablespoon shredded Parmesan cheese
2 teaspoons grated lemon zest

Steps:

  • In a large saucepan, heat oil over medium heat. Add onions and leek; cook and stir until crisp-tender, 5 minutes. Add squash; cook and stir 5 minutes. Add garlic; cook and stir 1 minute longer. Stir in broth, thyme and salt. Bring to a boil. Reduce heat; cover and simmer until squash is tender, 15-20 minutes. , Discard thyme sprigs. Cool slightly. In a blender, process soup in batches until smooth. Return all to the pan. Stir in lemon juice and hot pepper sauce; heat through. Sprinkle each serving with cheese and lemon zest.

1 large Spanish onion, coarsely chopped
2 lbs summer squash, stem cut off and the rest coarsely chopped
2 tablespoons butter
1 (10 1/2 ounce) can chicken broth
salt and pepper
3/4 cup cream or 3/4 cup half-and-half
chervil or parsley, if desired

Steps:

  • Put the chopped onion, squash, and butter into a big pot and pour in the chicken broth until it is about two-thirds of the way up the vegetables. (Do not cover vegetables with the broth).
  • Bring to boil and continue to boil gently for about 20 minutes.
  • Take off heat and cool.
  • When mixture is cool enough to handle, put it in a blender or food processor and blend.
  • Return mixture to the pot and season with salt and pepper.
  • Slowly stir in the cream or half-and-half. (you may use less than 3/4 cup).
  • Add herbs, if desired.
  • Serve hot or cold.

2 pounds yellow crookneck squash, trimmed and roughly chopped
1/2 cup olive oil, plus more to garnish
1/8 teaspoon red-pepper flakes
1/2 teaspoon cumin seeds, toasted and ground
1/4 teaspoon coriander seeds, toasted and ground
1/8, teaspoon ground turmeric
Salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon lime juice
Chopped mint, to garnish

Steps:

  • Combine the squash, olive oil, red pepper, cumin, coriander, turmeric and 1 1/2 cups water in a pot with a large pinch of salt. Bring to a boil, then simmer, covered, until the squash is very tender.
  • Once the squash has cooled, purée it in a blender on high for 30 seconds. Pass through a fine-mesh sieve. When completely cool, season to taste with the lime juice, salt and pepper. Ladle into bowls, and garnish with mint and a few drops of olive oil.

2 tablespoons olive oil
2 pounds yellow summer squash - halved, seeded, and sliced
1 onion, chopped
2 quarts vegetable broth
4 ounces plain yogurt
salt and pepper to taste
½ teaspoon lemon juice, or to taste
2 tablespoons minced fresh dill

Steps:

  • Heat olive oil in a large saucepan over medium heat and cook onion until soft and translucent, about 5 minutes. Add yellow squash. Cook and stir until starting to soften, about 5 minutes. Pour in broth and bring to a simmer. Cover, reduce heat, and simmer until soft, about 20 minutes.
  • Puree soup using a stick blender until smooth. Let cool to lukewarm. Stir in yogurt and season with salt, pepper, and lemon juice. Stir in dill and chill in the refrigerator at least 4 hours. Serve chilled

1 pound yellow summer squash
2 ears corn
3 large shallots
2 large garlic cloves
1 fresh jalapeño chile
1 tablespoon olive oil
1/4 teaspoon ground cumin
2 1/2 cups water
Garnish: corn kernels, chopped fresh jalapeño chiles, fresh cilantro leaves, sour cream, and thinly sliced yellow summer squash

  • Cut summer squash crosswise into 1/2-inch-thick slices. Shuck corn and, working over a bowl, cut kernels from cobs. Halve cobs. Chop shallots and mince garlic. Wearing rubber gloves, chop chile, with seeds if desired.
  • In a 5-quart heavy kettle combine all ingredients (including cobs) except water and cook over moderate heat, stirring, 3 minutes. Stir in water and simmer mixture until squash is very tender, about 15 minutes. Discard cobs. In a blender puree mixture in batches until smooth (use caution when blending hot liquids), transferring to another bowl. Season soup with salt and pepper. Divide soup between 2 bowls and garnish with corn, chiles, cilantro, small dollops of sour cream, and squash.

2 large crookneck yellow squash, sliced into 1/4-inch thick rounds (about 1 1/2 cups)

Steps:

  • Heat oil in heavy large saucepan over medium-low heat.
  • Add onion,shallots and garlic and cook until onion is translucent,stirring occasionally, about 10 minutes.

  • Heat oil in heavy large saucepan over medium heat. Add leek and coriander and cook until almost tender, stirring often, about 6 minutes. Add squash; sprinkle with salt and pepper and sauté until squash begins to soften, about 3 minutes. Add broth. Bring to boil, reduce heat to medium, and simmer uncovered until vegetables are soft, about 10 minutes. Working in batches, puree soup in blender until smooth. 1 tablespoon Major Grey's chutney

Steps:

  • In a 3 1/2- to 4-quart heavy saucepan cook leek in oil over moderately low heat, stirring occasionally, until softened. Add curry powder and turmeric and cook, stirring, until fragrant, about 30 seconds. Add squash and water and simmer, stirring occasionally, until squash is very tender, about 15 minutes. Cool mixture slightly and in a blender purée in batches until smooth, transferring to a bowl. Season soup with salt and pepper. 1/4 cup butter
4 yellow squash, crookneck, coarsely chopped
1/2 yellow onion, coarse chopped
2 teaspoons garlic, chopped
6 chicken bouillon cubes
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
1 cup heavy whipping cream
2 tablespoons red bell peppers, small dice for garnish

Steps:

  • Preparation:.
  • Bring 2 cups of water to a boil and add the dried mushrooms. Cover and remove from heat. Allow mushrooms to soak for 45 minutes. Drain the softened mushroom and reserve the liquid. Cut the mushrooms into ¼ inch slices and rinse them under cool running water to remove and dirt particles.
  • Combine butter, squash, onion, garlic, bouillon cubes, spices and 2 cups of water in a sauce pan and bring to a boil. Cover and reduce heat and simmer for 20 minutes.
  • Pour cooked squash mixture into a blender and puree (carefully if hot). The mixture will be thick. Add heavy cream and ½ cup of the reserved mushroom liquid to the mixture and blend inches.
  • Add the sliced morels and the red bell peppers.

"Don't be afraid to make this straightforward, veggie-packed soup your own by using the vegetables you especially like or you have on hand. For instance, replace the zucchini and yellow squash with frozen green peas and frozen corn. If you're a tomato lover, two cups of chopped canned tomatoes can be substituted for two cups of the roth.   • Combine all ingredients except cream and garnish in the crock of your slow cooker and stir. Cover and cook on low for 7-8 hours or high for 3-4 hours, until squash is tender. Use a handheld blender to puree the soup, or transfer it to your food processor in batches. Stir in cream just before serving, then garnish. Serves four. Tips: You can substitute any other squash if you prefer. Try butternut squash for a sweeter taste. Simmer squash soup in a pot instead of a slow cooker by cooking until squash is tender.

SWISS CHARD/YELLOW SQUASH RAW GREEN SOUP (VITAMIX)



Swiss Chard/Yellow Squash Raw Green Soup (Vitamix) image

I just got my new Vitamix today, and am so excited, I had to make some of the recipes. Since I have lots of Swiss Chard and Yellow squash in my garden, I wanted to use them, but couldn't find a recipe. The Zucchini Soup recipe in the cookbook, that came with my machine, looked good, but didn't quite fit the bill. So, as I am known to do, I started improvising. I can't eat white potatoes, but can eat yams or sweet potatoes, so I made a substitution there. The flavor was a bit bland, so I added the garlic, onion and fresh basil, from my garden. I'm trying to transition to the Raw Food Lifestyle, and didn't want to get the soup too hot, so only blended it four, instead of the six minutes recommended. It got plenty hot. Next time, I will put my candy thermometer in it, to check the temp, as it should stay less than 105F, to preserve enzymes, in the vegetables. A piece of toasted, sprouted multi-grain bread, rounded out the meal. It was very creamy, really quite good, and very satisfying. My husband isn't quite on board, with the Raw Lifestyle yet, so the jury is still out there. However, he did scarf it down, without complaints. When asked what he thought, he said, "Very interesting flavor". :D He did say, that he would eat it again, though. This is technically not RAW, because of the cooked yam. But unless you are 100% raw, this makes a nice healthy (nearly raw) meal. I suppose you could finely chop the yam (in the Vitamix), before adding the rest, of the ingredients, and it should cook with the rest, of the soup. However, I don't think the soup would be as nice and creamy that way.

Number Of Ingredients 12

2 1/2 cups almond milk
1/2 cup raw cashew nuts (soaked in water, 4 hours to release enzymes)
2 teaspoons lemon juice
6 swiss chard leaves (cut up coarsely, to fit in the blending container)
1 yellow squash (8 inch, straight neck, cut up into cubes)
1 carrot (8 inch, sliced into 1 inch rounds)
1 red bell pepper (small pepper or 1/4 large)
1/4 onion (medium)
3/4 yam (medium, cooked, until soft)
12 -15 basil leaves
1 tablespoon bottled garlic (or 2 large cloves, minced)
1 1/2 teaspoons sea salt

Steps:

  • Place ingredients in the Vitamix container, in the order listed, and secure lid.
  • Set to "1" on the variable dial, and turn the machine on.
  • Increase the speed to "10" and set to High.
  • Blend for 4 minutes, until the jar feels hot, to the touch.
  • Serve with a sprig of fresh Basil.
  • NOTE: This could also be prepared in a food processor, but would probably not get as hot, as it does in the Vitamix. Although, I have had foods turn warm, when processed for more than a few minutes.

I am, always, looking for healthy, vegetable inspired recipes and this is all vegetables! The carrots add sweetness & color, the potatoes add thickening. 2/3 are pureed in blender or cuisinart. The Zucchini crisps are browned in olive oil. Zucchini recipe follows.

Number Of Ingredients 10

2 lbs pound(s) yellow summer squash-1/2" pieces
1 large yellow bell pepper 2" pcs
4 medium carrots 2" pieces
1/2 pound(s) yukon gold potatoes 2" pcs
1 medium onion, chopped
2 tablespoon(s) unsalted butter
1/2 teaspoon(s) kosher salt or to taste, 1/4 t pepper to taste
4 cup(s) chicken or vegetable stock, canned/homemade
12 large basil leaves for garnish
Recipe - zucchini crisps to follow

Steps:

  • Melt butter in large saucepan over medium heat. Add onion & 1/2 teas. salt. Cook 5 minutes or until onion is softened. Add squash, yellow pepper, carrots, potatoes to saucepan along with chicken or vegetable broth. Bring to a boil. Reduce heat to low and simmer, partially covered, until vegetables are tender. About 15 minutes. Remove from heat and cool 10 minutes.
  • Transfer 3 1/2 cups of vegetables to a small bowl & reserve. Working in small batches, puree the remaining soup in blender until smooth. Note: When blending something hot only fill blender 1/3 full, put the lid on a little askew (to let hot air out). Cover blender with kitchen towel. Start on low or pulse & work up to high. Transfer pureed soup to a bowl. Return pureed and reserved vegetables to saucepan. Add water or additional chicken/vegetable broth, if necessary, for desired consistency.
  • Add salt and pepper to taste. Heat to just barely boil. Divide among 4-6 bowls. Garnish with fresh, chopped basil leaves. Serve with zucchini crisps. Recipe to follow.
  • Zucchini Crisps Heat oven to 250 degrees. Cut 1 med zucchini into 1/2" thick slices.1 3/4 C 2/3 cups Panko bread crumbs 1 1/2 oz Parmigiano Reggio grated on box grater or Asiago cheese grated 1/3 cup Unbleached all purpose flour 1/2 teas Kosher salt 1/4 teas Pepper 1 Egg + 1 teas water, beaten 2 tbls Olive oil In large, non stick skillet over high heat until hot & then reduce heat to med-low. Mix bread crumbs & Parmigiano cheese in small bowl. Dredge zucchini in flour, shaking off excess flour. Dip into egg & then into bread crumbs/Parmigiano cheese mixture. Fry zucchini in batches 4-5 min or until browned on both sides. Add more olive oil as needed. Drain the crisps on paper towels. Sprinkle with salt. Transfer to rimmed baking sheet & keep warm in oven. Serve with soup and tomato frisee salad. Enjoy.

•2 large sweet onions, chopped
•1 medium leek (white portion only), chopped
•2 tablespoons olive oil
•6 garlic cloves, minced
•6 medium yellow summer squash, seeded and cubed
•4 cups reduced-sodium chicken broth
•4 fresh thyme sprigs
•1/4 teaspoon salt
•2 tablespoons lemon juice
•1/8 teaspoon hot pepper sauce
•1 tablespoon shredded Parmesan cheese
•2 teaspoons grated lemon peel

Steps:

  • •In a large saucepan, saute onions and leek in oil until tender. Add garlic; cook 1 minute longer. Add squash; saute 5 minutes. Stir in the broth, thyme and salt. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until squash is tender. • Discard thyme sprigs. Cool slightly. In a blender, process soup in batches until smooth. Return all to the pan. Stir in lemon juice and hot pepper sauce; heat through. Sprinkle each serving with cheese and lemon peel. Yield: 8 servings (2 quarts).
