1 tablespoon olive oil
1 red onion, chopped
2 garlic cloves, minced
1 1/2 lbs chicken tenders
1 (14 1/2 ounce) can reduced-sodium chicken broth
1/2 teaspoon poultry seasoning
1/2 teaspoon blsack pepper
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
3/4 cup uncooked yellow rice mix
1 (15 ounce) can black-eyed peas, drained
1 tablespoon fresh thyme, chopped

Steps:

  • Heat oil in a large skillet over medium heat. Add the onions and cook 4 minutes, or until soft. Add garlic and chicken and cook until chicken is browned.
  • Stir in the broth, poultry seasoning, black pepper, red pepper flakes, and salt. Bring mixture to a boil over high heat.
  • Stir in rice and reduce heat to low. Cover and cook until rice is almost tender, about 10 minutes.
  • Stir in peas and thyme. Cover and cook until heated through, about 10 minutes more.

We are always looking for a twist on tradition. I found yellow eyed peas and decided to give try for our New Year's Day meal. Our family loved them.

Number Of Ingredients 6

1 pkg dried yellow eyed peas
1 small onion, vidalia, diced
1 large carrot, diced
1 bay leaf
1 Tbsp garlic, minced
1 1/2 Tbsp kosher salt

Steps:

  • 1. look and wash peas
  • 2. add peas to 6 cups of water and bring to a boil
  • 3. cover and remove from heat, allow to soak 1 hour
  • 4. drain and rinse beans
  • 5. cover with water( about 5 cups) add everything except salt.
  • 6. bring to a boil
  • 7. cover and simmer for about 4 hours
  • 8. add salt, uncover and simmer for about 30 minutes
