Slow Cooked Winter Bread Pudding with Dried Pears image

1 loaf (about 1 pound) whole-wheat multi-grain bread, preferably stale, cut into large cubes (about 6 cups)
1 quart (4 cups) half-and-half
4 large eggs
3/4 cup sugar
2 tablespoons whiskey or bourbon
2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
Pinch freshly grated nutmeg
12 ounces dried pears or a combination of pears and apricots, chopped
1/4 cup sugar and 1/4 teaspoon ground cinnamon mixed together
1 1/2 cups walnuts or pecans, toasted
Whipped cream or yogurt

Steps:

  • If bread is not stale: Preheat an oven to 400 degrees F. Spread the bread cubes out on a baking sheet and cook until toasted, about 10 minutes.
  • Whisk the half-and-half, eggs, sugar, whiskey, vanilla, salt and nutmeg together in a large bowl. Toss bread cubes and dried fruit together and place into the slow cooker. Pour custard over top and press down lightly until all bread is covered with custard.
  • Cover and cook on LOW until pudding puffs and is just set, about 3 1/2 hours. Remove insert from the slow cooker and cool on a rack, about 20 minutes.
  • Spoon pudding into large cups or bowls and sprinkle each serving with cinnamon sugar, and toasted nuts. Top with whipped cream or yogurt, if desired.

1 (6 ounce) can orange juice concentrate
1 (3 1/2 ounce) instant lemon pudding
3 bananas, sliced
1 (2 1/2 lb) can pears, cut up
1 (2 1/2 lb) can apricots, cut up
1 (2 1/2 lb) can peaches, cut up
1 (15 ounce) can mandarin oranges, drained

Steps:

  • Drain pineapple, reserve juice. Dissolve orange juice concentrate in the pineapple juice.
  • Mix instant pudding into the juice, add sliced bananas, pears, apricots, and peaches (bite sizes). Add drained oranges and pineapple. Mix and let stand for 24 hours in refrigerator.

1 cup margarine
1 cup peanut butter
4 cups cereal (cornmeal, rolled oats, roman meal and/or cream of wheat)
chopped fruit (raisins, dates, apples)
sunflower seeds or bird seed

Steps:

  • In a large kettle, bring water and margarine to boiling.
  • Slowly add cereals and cook, stirring constantly until the mixture is fully cooked and thick.
  • Remove from heat.
  • Add peanut butter and desired amount of chopped fruit, nuts, and seeds.
  • Cool and place in plastic containers.
  • Serving amounts depend on how large you make your bird feeders so the"yield" is a guess.
  • Note: pack the mixture into chopped off chunks of panty hose or put in pine cones.
  • Hang the mixture in protected crooks of trees.
  • You can also spread the mixture onto a surface area (don't use aluminum pans; when it's freezing, little bird feet can stick to the metal and suffer injury), set out on ground or picnic bench.
  • By placing the food at different elevations, you will attract many species of birds.
  • The food can be preserved in a freezer (if there is any left over).
  • Just be sure to use it within three to four months.

1/3 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup currants
2 apples, cored and unpeeled
1/2 cup milk
2 tablespoons butter, melted
1 3/4 cups boiling water
1 cup packed brown sugar
1 tablespoon all-purpose flour
1 tablespoon butter, softened
2 teaspoons vanilla

Steps:

  • In a bowl combine 1 cup flour, 1/3 cup brown sugar, baking poowder, cinnamon, salt and currants.
  • Thinly slice one half of one of the apples; set aside.
  • Chop remaining apples and add to flour mixture along with milk and melted butter; mix well.
  • Spread in buttered nine inch square metal cake pan.
  • Arrange slices on top.
  • Sauce: In a bowl, whisk together water, brown sugar, flour, butter and vanilla; gently pour over batter.

a 12-ounce bag of fresh cranberries, picked over
1 firm ripe-pear, peeled, cored, and chopped fine
3/4 cup firmly packed light brown sugar
1/2 cup dried sour cherries (available at specialty foods shops) or golden raisins
1/3 cup finely chopped dried apricots
two 2-inch strips of lemon zest removed with a vegetable peeler
a 3-inch cinnamon stick
2 cups cranberry juice cocktail
1/4 teaspoon vanilla
about 10 slices of homemade-type white bread, crusts removed
lightly sweetened whipped cream as an accompaniment

Steps:

  • In a saucepan combine the cranberries, the pear, the brown sugar, the dried fruit, the zest, the cinnamon stick, the cranberry juice cocktail, the vanilla, and a pinch of salt and simmer the mixture for 10 minutes. Strain the mixture through a sieve into a bowl, reserving the solids, and transfer the cranberry liquid to a shallow dish. Line a 1 1/2-quart soufflé dish with plastic wrap and trim enough of the bread slices to cover the bottom and the side of the dish. Soak the trimmed slices in the cranberry liquid and line the bottom and the side of the soufflé dish with them.
  • Discard the zest and the cinnamon stick from the reserved cranberry solids and add the solids to the soufflé dish. Trim enough of the remaining bread slices to cover the cranberry solids, soak the trimmed slices in the cranberry liquid, and top the cranberry solids with them. Cover the pudding with plastic wrap, put a plate on top of the plastic wrap, and weight the pudding with three 1-pound cans. Chill the pudding, weighted, for at least 12 hours and up to 1 day. Invert the pudding onto a serving plate, discarding the plastic wrap, and serve it, cut into wedges, with the whipped cream.

2 cups fresh or frozen cranberries (about 8 ounces)
3/4 cup sugar
1/2 cup plus 1 tablespoon water
7 slices very thin firm white sandwich bread, crusts discarded
3 Golden Delicious apples (about 1 1/2 pounds total)
2 cinnamon sticks
10 whole cloves tied in cheesecloth
1 1/4 teaspoons unflavored gelatin

Steps:

  • In a food processor chop cranberries fine and in a saucepan combine with sugar and 1/2 cup water. Simmer mixture, stirring occasionally, until sugar is dissolved, about 5 minutes. On a baking sheet arrange bread slices and brush tops and edges with some cranberry cooking liquid.
  • Peel, quarter, and core apples. Cut apples into 1-inch chunks and add to cranberry mixture with cinnamon sticks and cloves, stirring. Simmer mixture, stirring occasionally, 10 minutes, or until apples are just tender and most liquid is evaporated.
  • While apple mixture is simmering, in a very small bowl sprinkle gelatin over remaining tablespoon water and let soften 1 minute. Stir gelatin mixture into fruit mixture until dissolved.
  • Arrange 6 bread slices, overlapping slightly, against inside of a deep 1-quart bowl or pudding mold with coated side against inside of bowl or mold. Gently press remaining bread slice into bottom and spoon fruit mixture over bread. Chill pudding, covered with plastic wrap, until completely cold, at least 6 hours, and up to 2 days.
  • To unmold pudding, run a thin knife around edge of bowl or mold and invert pudding onto a plate. Serve pudding cut into wedges.

MOM'S WINTER TOMATO PUDDING

If you have home canned tomatoes, by all means use them; the best store bought substitute is imported Italian plum tomatoes.

1/4 cup butter, plus
2 tablespoons butter, for top
1 medium onion, finely chopped
2 tablespoons firmly packed dark brown sugar
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 teaspoon dried marjoram
3 cups bread cubes, toasted, white or whole wheat
1 (28 ounce) can plum tomatoes, imported
1 (6 ounce) can tomato paste
1 small onion, thinly sliced

Steps:

  • Melt the butter in a skillet over medium low heat and add the chopped onion. Saute until the onion is transparent, about 10 minutes. Add the brown sugar, salt, pepper, and marjoram and stir well to combine. Add the bread cubes and toss to coat with the seasoned butter. Remove from the heat and reserve.
  • Place the tomatoes in a mixing bowl and break them up into chunks by crushing against the side of the bowl with the back of a heavy spoon. Add the tomato paste and blend until smooth. Reserve.
  • Preheat the oven to 350°F Generously butter a shallow 2 ½ quart baking dish. Spoon about half of the tomato mixture into the baking dish and top with half of the bread mixture. Repeat. Scatter the sliced onion over the bread cubes and dot with additional butter.
  • Bake for 35 to 40 minutes, or until tomatoes are thick and bubbling and onion is nicely browned. Serve warm. Serves 10-12.

• 2 x 500ml tubs of good-quality vanilla ice cream (I like Green and Blacks)
• 1 x 1kg panettone
• 125ml Vin Santo
• 3 heaped tablespoons good raspberry jam
• 25g shelled pistachios
• 75g tinned sour cherries, drained
• 40g glacé clementines (or other glacé fruit), thinly sliced
• 2 clementines, 1 peeled and sliced into rounds
• 200g good-quality dark chocolate (70% cocoa solids), bashed up

Steps:

  • Get your ice cream out of the freezer so it can soften a little while you get things ready. Line a 2 litre pudding bowl with 3 layers of cling film. Use a serrated knife to slice a four 2cm thick rounds off of your panettone then cut them in half. You'll have some panettone left over, so keep this for another time. Arrange six of the slices in a single layer around the bowl and push them down if they overlap. Drizzle some Vin Santo around the sponge so it soaks in, then use the back of a spoon to smear the jam over the sponge. Add 1 tub of ice cream to the bowl and use the spoon to spread it around in a thick layer. Sprinkle in the pistachios, cherries and glacé fruit then layer the clementine slices on top. Add the other tub of ice cream. Spread it out, working quickly so the ice cream doesn't completely melt. Put the rest of the panettone slices on top of the ice cream, drizzle over some more Vin Santo then cover the bowl tightly with cling film. Press a plate down on top to press everything down, then freeze overnight, or longer. When you're ready to serve it, put the bashed-up chocolate in a bowl and get that over a pan of simmering water on a really low heat. Leave the chocolate to melt while you unwrap your amazing winter bombe and carefully turn it onto a beautiful serving dish. Add a few gratings of clementine zest to the chocolate and when it's nicely melted, pour it over the top so it oozes down the sides and looks delicious

1 chocolate cookie crumb crust (6 oz.)
2 cups JET-PUFFED HOLIDAY MALLOWS Marshmallows, divided
1 tub (8 oz.) COOL WHIP Whipped Topping, divided
5 starlight mints, crushed
1 tsp. powdered sugar

Steps:

  • Pour milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.)
  • Spoon 1-1/2 cups of the pudding into crust; top with 1 cup of the marshmallows. Gently stir 1-1/2 cups of the whipped topping into remaining pudding; spoon over marshmallows.
  • Refrigerate 3 hours. Cover with remaining whipped topping just before serving. Top with remaining 1 cup marshmallows and crushed candies; sprinkle with powdered sugar. Store any leftover pie in refrigerator.
