SPEZZATINO DI CINGHIALE: WILD BOAR STEW

Number Of Ingredients 10

4 tablespoons/60 ml extra-virgin olive oil
1 onion, coarsely chopped
1 carrot, coarsely chopped
1 celery stalk, coarsely chopped
2 pounds/900 g wild boar, cubed
1/2 teaspoon/2.5 ml nutmeg
Salt and freshly ground black pepper
1 cup/250 ml red wine
1 (28-ounce/800 g) can pureed tomatoes
1 cup/250 ml beef broth

Steps:

  • Heat up the extra-virgin olive oil in a large stewing pot. Add the onion, carrot, and celery. Cook until the vegetables have become soft. Add the cubed wild boar and season with nutmeg, salt, and black pepper. Mix the ingredients together and add the wine. Allow the wine to reduce. Add the tomato puree, beef broth, and salt. Cover with a lid and cook for 2 hours.

Or you can just substitute domestic pork. I do quite often. Although I have now decided that if you do go with domestic pork, organically raised pork seems to substitute the best.

1 lb boned and cubed boar
1/2 lb bacon
1 onion, chopped
1 teaspoon crushed garlic
2 teaspoons curry powder
1/2 cup water
2 tablespoons parsley flakes
1 (16 ounce) can stewed tomatoes
1/4 cup sliced carrot
2 medium potatoes
2 tablespoons cornstarch

Steps:

  • In a skillet fry bacon until crisp.
  • Remove bacon, cool, crumble and set aside.
  • Pour off all but about 3 Tbsp of bacon grease.
  • Cook boar meat cubes, onion, garlic, and curry powder in remaining grease until meat is browned Stir during cooking.
  • Stir in 1/4 cup of water.
  • remove from heat and set aside.
  • In a 2 qt casserole combine, parsley, stewed tomatoes, carrots and potatoes.
  • Add meat mixture to casserole and mix well.
  • Bake at 350 degrees for 30 minutes.
  • Mix 2 Tbsp cornstarch with 1/4 cup water and stir into casserole.
  • Bake for 30 more minutes or until meat and vegetables are tender.

A wintery meat-lovers' casserole that's packed with smoky pancetta, chestnut mushrooms and aromatic herbs.

10g dried porcini mushrooms
500g venison and wild boar, cut into 4cm chunks
1 tbsp flour, seasoned with black pepper
1 - 2 tbsp olive oil
2 onions, roughly chopped
3 garlic cloves, crushed
4 wild boar sausages (optional)
85g pancetta, cubed
750ml red wine
200ml venison or beef stock
4 sprigs thyme
2 sprigs rosemary
250g chestnut mushrooms, quartered
cornflour, to thicken (optional)
To serve
Mashed potato or brown rice
4 sprigs rosemary

Steps:

  • Soak the porcini mushrooms in 200ml of boiling water and in a separate bowl, toss the chunks of meat in the seasoned flour.
  • Heat the olive oil in a large heavy-based saucepan. Fry the onions gently for 5 - 10 mins or until softened.
  • Stir in the garlic, floured meats, sausages (if using) and pancetta and once browned, pour in the red wine and stock. Add the porcini mushrooms and soaking water, and the herbs. Season with salt and freshly ground pepper and bring to the boil. Turn down to a simmer, cover and cook for an hour.
  • Add the chestnut mushrooms and cook for a further 30 mins or until the venison is tender. Thicken with cornflour, if using.
  • Season to taste, transfer to four plates and garnish with a sprig of rosemary. Serve with mashed potato or brown rice.

3 lbs wild boar
6 stalks celery, chopped
3 tblsp sage
3 tblsp rosemary
9 cloves garlic, minced
3 medium red or white onions, chopped
6-8 tblsp parsley
6 bay leaves
3 cups green olives, pitted
Red wine
1 cup tomato paste
salt and pepper to taste

Steps:

  • Finely chop celery, sage, rosemary, garlic, onions, and parsley. Add chopped ingredients to hot pan and saute without oil for 5 minutes; then add the meat and continue cooking. Salt and pepper to taste, Add enough broth (see recipe below) to cover and braise meat for 30 minutes. Add bay leaves and olives and stir. Add 1 bottle of red wine and 1 cup tomato paste. Cover pan and let cook 1 ½ hours. Serve over pappardelle pasta. Broth for Wild Boar Stew Use appropriate amounts of these ingredients to make as much as you like. Braise chopped carrots, onions, celery, bay leaves and sage with olive oil. Add red wine, cook and reduce. Add a meat stock such as chicken or veal. Reduce again and put through a strainer before adding stew.
