WHITE CHRISTMAS MARGARITA

Change up the holidays by serving this traditionally warm-weather cocktail at your next Christmas party. To make it snowy white, we added a touch of coconut milk. Cranberry ice cubes add a touch of cheer.

1 1/2 cups frozen cranberries
1 cup tequila blanco
2/3 cup fresh lime juice (from about 6 limes), plus 4 lime slices, for serving
6 tablespoons orange-flavored liqueur, such as triple sec
3 tablespoons unsweetened coconut milk
3 tablespoons superfine sugar
1/2 cup light corn syrup
2 tablespoons extra-fine shredded unsweetened coconut
Kosher salt

Steps:

  • Divide the cranberries among the sections of a standard (12-cube) ice cube tray. Fill the tray sections with water and freeze until frozen, at least 4 hours and up to overnight.
  • Add 1/2 cup of the tequila, 1/3 cup of the lime juice, 3 tablespoons of the orange liqueur, 1 1/2 tablespoons of the coconut milk and 1 tablespoon of the superfine sugar to a large cocktail shaker. Fill with plain ice cubes and shake vigorously until well mixed and very cold.
  • Pour the corn syrup onto a small shallow plate. Mix 1 tablespoon of the superfine sugar with the shredded coconut and 1 tablespoon salt on another shallow plate. Dip the rim of a margarita (or other wide-mouth) glass in the corn syrup, then dip the rim in the sugar mixture until well coated. Repeat with 3 more glasses. Pour the shaken margarita mixture into 2 of the prepared glasses. Add 3 of the cranberry ice cubes to each and garnish with a single lime slice.
  • Repeat with the remaining cocktail ingredients, dividing it between the remaining 2 prepared glasses and adding 3 cranberry ice cubes and a lime slice to each.

THE PERFECT MARGARITA

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 lime wedge
1 pinch coarse sea salt to taste
1 large ice cube
ice
2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1 tablespoon Lime-salt-sugar, recipe follows
1 cup sugar
1 cup water
Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Blend together lime, salt and sugar in a small blender or mini food chopper.

WHITE ZINFANDEL JELLY

We make Christmas baskets every year and fill them with homemade "goodies". I am always looking for something fun and unusual to put in them. This jelly was well received and everyone liked it. You can substitute the white zinfandel with champagne, rose wine or sangria if you like. The original recipe came from the Sure-jell website. (Cooking time includes, prep, cooking and processing).

3 cups white zinfandel wine
1 (1 3/4 ounce) box sure-jell fruit pectin
1/2 teaspoon butter or 1/2 teaspoon margarine (optional)
4 cups sugar, measured into separate bowl

Steps:

  • Bring boiling water canner, half-full with water, to simmer.
  • Wash jars and screw bands in hot soapy water, rinse with warm water.
  • Pour boiling water over the flat lids in saucepan off the heat.
  • Let sand in hot water until ready to use.
  • Measure the wine into a 6 or 8 quart saucepan.
  • Stir pectin into wine in the saucepan.
  • Add butter (if desired) to reduce foaming.
  • Bring mixture to a full rolling boil (a boil that does not stop bubbling when stirred) on high leat, stirring constantly.
  • Stir in all sugar quickly.
  • Bring to full rolling boil and allow to boil exactly 1 minute, stirring constantly.
  • Remove from heat.
  • Skim off any foam with metal spoon.
  • Ladle quickly into prepared jars, filling to within 1/8" of rim.
  • Wipe jar rims and threads.
  • Screw bands tightly.
  • Place jars on elevated rack in canner.
  • Water must cover jars by 1 to 2 inches, add boiling water if needed.
  • Cover, bring to a gentle boil and process for 5 minutes.
  • Remove jars and place upright on a towel to cool completely.
  • After jars cool, check seals by pressing middle of lid with finger, if it springs back, it did not seal completely and refrigeration would be necessary.
