EASY PEACH COMPOTE
Only 4 ingredients and 15 minutes are needed to make this flavorful peach sauce. Spoon it on top of yogurt, waffles, vanilla ice cream and more!

Steps:
- Heat a medium sized skillet or saucepan oven medium high heat. Add all ingredients to the pan.
- Cook, stirring occasionally, until the mixture comes to a boil. Reduce heat to medium low and simmer, stirring occasionally until the peaches are soft and the liquid has mostly reduced, about 10 minutes.
- Cool slightly before serving, or transfer to a container to store in the refrigerator for up to 4 days.

White peaches and lavender are a lovely combination as long as you use the lavender sparingly to avoid an overwhelming lavender flavor. You can use yellow peaches if you can't find white ones.

- Combine peaches, honey, and lavender flowers in a microwave-safe bowl and cook for 5 minutes on high power. Discard lavender flowers.
- Transfer peach mixture to a blender; blend until smooth. Cover with plastic wrap and refrigerate for 1 hour. Serve chilled.

- In a large heavy saucepan, combine the milk, cardamom pods and lavender. Split vanilla bean and scrape seeds; add bean and seeds to milk mixture. Heat until bubbles form around sides of pan. Remove from the heat; cover and let steep for 10 minutes. Strain, discarding flowers and spices., Return milk to the heat; stir in sugar. Cook until bubbles form around sides of pan. Whisk a small amount of hot mixture into the egg yolks. Return all to the pan, whisking constantly., Cook and stir over low heat until mixture is thickened and coats the back of a spoon. Quickly transfer to a bowl; place in ice water and stir for 2 minutes. Press waxed paper onto surface of custard. Refrigerate for several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. When gelato is frozen, stir in peaches. Transfer to a freezer container; freeze for 2-4 hours before serving.
