RASPBERRY WHITE CHOCOLATE CHIP BROWNIES RECIPE

Raspberry White Chocolate Chip Brownies Recipe image

Number Of Ingredients 10

1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter
1 cup unsweetened cocoa powder
2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
2 cups white chocolate chips
1 cup raspberry pie filling

Steps:

  • Preheat oven to 350 degrees. Combine flour, baking powder and salt in a small bowl.
  • Melt butter in a large saucepan.
  • Remove from heat. Whisk in cocoa. Mix in sugar, eggs and vanilla.
  • Add dry ingredients and mix until combined. Fold in white chocolate chips.
  • Spread half of the batter in a greased 9x13 inch baking pan.
  • Spread raspberry pie filling over the top. Spread the second half of the batter over the top. The batter will be sticky, so it may be easiest to spray hands with nonstick cook spray and flatten out pieces of batter than lay them on top, trying to cover as much of the raspberry filling as possible.
  • Bake for 30-35 minutes or until an inserted toothpick comes out clean.

KRISTI'S WHITE CHOCOLATE CHIP BROWNIES (GLUTEN FREE!)

Kristi's White Chocolate Chip Brownies (Gluten Free!) image

This recipe is based loosely on Recipe #118242. Baking time will vary depending on how firm you want your brownies. 45 minutes will leave them a little loose in the middle, 1 h 15 will make them very solid.

Time 1h25m

Yield 12 brownies, 12 serving(s)

Number Of Ingredients 15

1 cup butter, softened
2 cups granulated sugar
1 cup dutch process cocoa
4 eggs
2 teaspoons vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons xanthan gum
3/8 cup potato starch
3/8 cup almond meal
1/2 cup sorghum flour
1/4 cup coconut flour
1/4 cup milk (moo, almond, soy, whatever)
1 cup walnuts (or pecans or macadamias, etc)
1 cup white chocolate chips

Steps:

  • Cream butter and sugar together in the bowl of your stand mixer. (You will need a stand mixer for this unless you are super strong).
  • Add eggs, cocoa, vanilla, baking powder and salt. Mix until well combined.
  • Add xanthan gum, all flours and starches and mix until combined. Add milk and mix until integrated.
  • Last, once the batter is all together (it will be VERY sticky and somewhat stiff), add nuts and choc chips. Stir on low until integrated.
  • Grease a 13x9 glass baking dish. Scoop batter out with a silicone spatula (you'll be thankful you did) and do the best you can to work it into the corners and make it sort of level. The levener will do the rest if you get it close.
  • Bake at 350 F for 45-75 minutes. At 45, pull and check for doneness by inserting a toothpick into the center. If it pulls out clean, it's completely done (I like mine a little raw, so I pull at 45 minutes). Allow to rest for at least 20 minutes before cutting.
  • Be sure to Zmail if you have questions. :).

WHITE CHOCOLATE CHIP COFFEE BROWNIES

White Chocolate Chip Coffee Brownies image

Because coffee and brownies go together- why not combine the two-after baking- make a colorful design on top with melted chocolate to swirl or make a heart design on top. Great treat for Valentine's Day!

Provided by Pat Duran @kitchenChatter

Categories     Cakes

Number Of Ingredients 10

1 1/2 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) unsalted butter ,softened to room temperature
3/4 cup(s) brown sugar, firmly packed
1/2 cup(s) granulated sugar
2 large eggs
2 tablespoon(s) instant coffee powder dissolved in 2 tablespoons warm water
1 teaspoon(s) vanilla
1 1/4 cup(s) vanilla or white chocolate chips

Steps:

  • Move oven rack to the center position of the oven. Spray a foil lined 9-inch baking pan(foil extending over edge), with butter spray. In a small bowl, stir the flour, baking powder and salt together; set aside.
  • In a large mixer bowl, beat together sugars and butter until blended well. Add the eggs, dissolved coffee, and vanilla and mix until combined. The mixture may look curdled(it's ok). On low speed add the flour mixture, mixing to incorporate. Mix in 1 cup of the white chips until evenly mixed in.
  • Pour the batter into the pan. Bake in 350^ oven for about 30 minutes- testing with toothpick. Remove from oven and sprinkle on or design a pattern with the remaining white chips,( let set on brownies for about 5 minutes to melt slightly) and gently with the back of a spoon or other device swirl the melted chips to your liking or just smear all over the top. Cool till chocolate topping is firm, about 1 hour.
  • Loosen the sides of the brownies from the unlined sides and lift out of the pan with the foil. Use a sharp knife to cut into desired pieces- use a spatula to serve cut pieces. Enjoy with a cup of your favorite beverage.
