2 garlic cloves, peeled
2 teaspoons minced fresh rosemary
1 (16 ounce) can white beans, undrained

Steps:

  • Place olive oil, garlic and rosemary in a 10-inch skillet. Heat pan until ingredients start to sizzle. Add beans and their liquid to the pan. As beans cook, mash them with a wooden spoon or potato masher. Cook until mixture is a loose spread consistency (it will thicken as it cools). Transfer to a serving bowl or storage container.

2 (16 ounce) cans cannellini, rinsed and drained
2 garlic cloves, chopped (1 teaspoon)
1/4 cup extra virgin olive oil
1 lemon, juice and zest of
2 teaspoons chopped fresh rosemary leaves
1/2 cup chopped flat leaf parsley
2 -3 sun-dried tomatoes packed in oil, chopped (optional)
1/8-1/4 cup olive, sliced (optional)
1/4 cup toased nuts (optional)
rosemary sprig (to garnish)

Steps:

  • Combine all the ingredients except garnish and optional ingredients in the food processor bowl fitted with the steel blade. Process until smooth, about 30 seconds, then divide into two or three or leave as is.Then adding tomatoes to one, olives to the other and one as is, season to taste with salt and pepper. Transfer to a bowl and refrigerate until 20 minutes-overnight.
  • To serve, place the bean spread in a bowl and garnish it with rosemary sprigs. Set the bowl on a platter and surround it with fresh crisp bread bread chunks and veggies.

1 teaspoon finely chopped fresh oregano
1 teaspoon red wine vinegar
3 tablespoons extra-virgin olive oil
1 whole boneless, skinless chicken breast, (about 12 ounces), split and pounded to 1/2 inch thick
1 tablespoon minced garlic
1 cup drained jarred or canned white beans, (reserve 1/4 cup liquid)
1 teaspoon finely chopped fresh rosemary
3/4 teaspoon coarse salt
Freshly ground pepper
Vegetable oil, cooking spray
8 slices multigrain bread
4 small radishes, thinly sliced
1 cup thinly sliced escarole

Steps:

  • Whisk together oregano, vinegar, and 1 tablespoon oil. Brush marinade onto both sides of chicken. Transfer chicken to a nonreactive dish; cover, and refrigerate at least 2 hours or overnight.
  • Put remaining 2 tablespoons oil and the garlic into a large skillet. Cook over medium heat, stirring occasionally, until garlic has softened, about 2 minutes. Add beans and reserved liquid, and rosemary. Cook, mashing beans with the back of a wooden spoon, 5 minutes. Add 1/4 teaspoon salt; season with pepper. Transfer to a small bowl. Cover, and set aside
  • Heat a large grill pan over medium-high heat. Coat with cooking spray. Add chicken. Grill, turning once, until cooked through, 3 to 4 minutes per side. Season with remaining 1/2 teaspoon salt. Transfer to a plate; let cool slightly. Cut chicken into 1/4-inch-thick slices; set aside.
  • Toast bread. Spread each slice with white-bean spread, dividing evenly. Top 4 slices with the chicken, radishes, and escarole, and then the remaining bread.

2 medium size artichokes
2 tablespoons olive oil
1 tablespoon chopped shallots
1 tablespoon chopped thyme
1 1/2 cups cooked white beans, cannelini, or navy beans
2 ounces goat cheese
1 head garlic, separated into cloves and peeled
1 lemon, juiced
4 artichokes
1 cup all-purpose flour
1 cup vegetable oil
2 cups balsamic vinegar
4 slices sour dough bread
2 tablespoons olive oil
Arugula leaves

Steps:

  • Preheat a grill.
  • Begin by peeling 2 of the artichokes until you get to the hearts. Saute the artichokes in a medium size skillet with olive oil, shallots, thyme, and the white beans on medium high heat for 10 minutes or until softened. Place mixture into a blender and add remaining ingredients, and pulse until all ingredients are blended.
  • Heat the vegetable oil in a large pot.
  • To make the crisp artichokes, simply cut the tough leaves around the artichokes until you reach the heart, keeping part of the stem. Cut into quarters, toss lightly in flour, and fry until crisp in the oil. Remove from pan, and drain on paper towels.
  • To make the balsamic reduction, simply put the balsamic vinegar in a small saucepan on high heat, and reduce down to almost a syrup consistency. Remove from heat, and let cool to room temperature.
  • To serve, grill 4 slices of sourdough bread rubbed with olive oil. Place on a serving plate. Top each slice with a few arugula leaves. Lightly spread a spoonful of the pureed artichoke mixture on the bread, and then top with crisp artichoke pieces. Drizzle a little balsamic reduction around bruschetta, and season with salt and pepper.

Four 15 1/2 ounce cans white beans, drained and liquid reserved
1/2 cup chopped onion
1 cup bean liquid
2 garlic cloves, peeled and chopped
3 tablespoons fresh lemon juice
4 teaspoon salt
1 tablespoon liquid hickory smoke flavoring
1 teaspoon freshly ground black pepper
10 large basil leaves, chopped
1 tablespoon finely chopped sage, optional

Steps:

  • In a food processor, combine the beans, chopped onion, 2/3 cup bean liquid, garlic, lemon juice, salt, smoke flavoring and pepper. Process until smooth, stopping several times to scrape down the sides of the work bowl and adding additional bean liquid if the mixture seems too thick. Transfer to a bowl and stir in the basil and sage. Adjust the seasoning. The spread can be used immediately or covered and refrigerated for up to 3 days. Return it to room temperature before serving.

1 large red bell pepper, stem, seeds, and ribs removed
1 can (15 1/2 ounces) small white beans, rinsed and drained
1/4 teaspoon ground ginger
Pinch of chili powder
1 teaspoon red-wine or balsamic vinegar
Coarse salt and freshly ground black pepper

Steps:

  • Roast pepper over a gas-stove burner, turning with tongs as each section blisters and blackens. (Alternatively, place pepper on a baking sheet and roast under the broiler.) Transfer to a bowl,and cover with plastic wrap. Let cool slightly, about 15 minutes. Peel off and discard blackened skin. Roughly chop pepper, reserving collected juices.
  • In the bowl of a food processor, combine roasted pepper and juices, beans, ginger, chili powder, and vinegar. Process until smooth, about 2 minutes, scraping sides with a rubber spatula as needed. Season with salt and pepper. Serve immediately, or refrigerate in an airtight container up to 1 week.

WHITE BEAN, ROSEMARY AND SUN-DRIED TOMATO SPREAD



White Bean, Rosemary and Sun-Dried Tomato Spread image

My rendition of a Weight Watchers classic. This is yummy and you can happily serve this with vegetables and pita chips to family and guests who will never know it is both Core and points friendly. If your sun-dried tomatoes are very dry, soak them in boiling water for 5 minutes before chopping. A word of caution: this recipe does not do well over time as after two or three days the lemon becomes too pronounced and spoils the balance of flavors. My suggestion if you want to enjoy this over many days is to reduce the amount of juice and zest by half.

To clean the mushroom caps, wipe them with a damp paper towel; do not rinse or soak, or they will remain soggy even after cooking. This recipe is featured in the"Power Foods" cookbook.

2 tablespoons chopped fresh thyme
1 cup canned cannellini beans, drained and rinsed
2 tablespoons plus 2 teaspoons extra-virgin olive oil
Freshly ground pepper
8 large portobello mushroom caps (about 1 pound), cleaned
1 tablespoon plus 1 teaspoon balsamic vinegar
2 large red onions (about 1 pound), sliced 1/4 inch thick
4 whole-grain hamburger buns
4 thin slices cheddar cheese (2 ounces)
1/2 small bunch arugula (about 2 1/2 ounces), washed and dried

Steps:

  • Heat a grill or grill pan to medium (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 6 to 8 seconds). In a food processor, puree one-quarter of the garlic (about 1/2 teaspoon), 1 tablespoon thyme, the cannellini beans, and 1 teaspoon oil until smooth. If mixture is too thick to spread, add a bit of water. Season with pepper, and pulse to combine.
  • Combine the remaining garlic and remaining 1 tablespoon thyme with 1 tablespoon plus 2 teaspoons oil in a shallow dish. Place the mushroom caps in the garlic mixture, and turn to coat. Season with pepper; drizzle with vinegar.
  • Place onion slices on a plate, and lightly coat each side with remaining 2 teaspoons oil. Grill the onions until lightly charred on the first side, about 3 minutes. Flip the onions, and continue grilling until tender and charred on the other side, about 3 minutes more. Transfer onions to a clean plate; cover to keep warm.
  • Working in batches if necessary, place mushrooms on the grill, stem side up. Grill until browned on the first side and juices have begun to collect in the centers, about 5 minutes. Flip mushrooms, and continue cooking until stem side of each cap is browned and center is tender, about 4 minutes more.
  • Split hamburger buns, and place cut side down on grill; cook just until warm and toasted. Spread 1/4 cup bean puree on the bottom half of each bun, and top with 2 grilled mushroom caps. MEDITERRANEAN WHITE BEAN SPREAD WITH FRESH HERBS



Mediterranean White Bean Spread With Fresh Herbs image

This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.

Steps:

  • Rinse and drain beans. To a food processor with motor running add desired amount of garlic and blend until minced. Add beans and remaining ingredients and blend until smooth. Transfer spread to a serving bowl. Spread may be made 1 day ahead and chilled, covered. Bring spread to room temperature before serving.
  • Just before serving, garnish spread with parsley and/or paprika. Serve spread with crackers or baguette slices.

  • Slice bread. Broil until golden brown. Brush each side with olive oil and rub with garlic clove. Process 2/3 beans in processor with 2 tbsps oil, 2 tbsp water, lemon juice, salt and pepper (to taste). Process until smooth. Add remaining beans and the rosemary. Pulse until just combined. Spread on toasts and top with tomato mixture.

4 ounces mascarpone, room temperature
1 teaspoon kosher salt
1 tablespoon grated lemon zest (2 small lemons)

One 6.7-ounce jar tuna packed in olive oil, drained and flaked
2 ribs celery with leaves, finely chopped

2 tablespoons finely chopped sun-dried tomatoes
1 tablespoon capers, drained and rinsed

With the machine running, add the olive oil and lemon juice; continue processing until smooth, another 30 seconds. Transfer the spread to a bowl and set aside while you make the tuna salad.
  • For the tuna salad: In a medium bowl, stir together the tuna, celery, fennel, fennel fronds, sun-dried tomatoes, capers, parsley, olive oil, lemon juice, salt and pepper.

ROASTED PEPPER AND WHITE BEAN SPREAD

1 cup drained bottled roasted red peppers (8 ounces), rinsed
1 cup drained canned white beans (6 ounces), rinsed
1/2 cup coarse fresh white bread crumbs (1 slice bread)
1 1/2 teaspoons chopped flat anchovy fillets (optional)
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

1 1/2 cups navy beans, soaked and drained
5 garlic cloves
10 sage leaves
2 bay leaves
3 tablespoons olive oil, divided
1 head garlic, outermost papery hush removed
salt & freshly ground black pepper, to taste
1 lemon, juice of
1 tablespoon thyme, chopped

Steps:

  • Boil the beans in a large pot with water to cover by 2 inches for 10 minutes.
  • Lower the heat and add the 5 garlic cloves, sage leaves, bay leaves, and 2 teaspoons of olive oil.
  • Simmer, covered until the beans are tender, about 1 1/2 hours.
  • Remove bay leaves and drain, reserving the broth.
  • Preheat oven to 350°F
  • Rub the head of garlic with a little of the remaining olive oil and put it in a small baking dish and add 1/3 cup water.
  • Cover and bake until soft and lightly caramelized, about 45 minutes.
  • Cool, then squeeze out the softened garlic.
  • Puree the beans in a food processor with all the garlic, the remaining olive oil, 1 teaspoon salt and enough bean broth to give the beans a soft, spreadable consistency.
  • Season to taste with lemon juice and pepper and taste again for salt.
  • Stir in thyme leaves and serve warm.

3 tablespoons extra-virgin olive oil
1/4 pound smoked tuna
3 tablespoons finely diced red onion
1 teaspoon finely chopped fresh rosemary
Tabasco to taste
Salt and freshly ground black pepper to taste

Steps:

  • Drain the beans completely. Place in a bowl and add the olive oil. Mash until fairly smooth.

1 (15 ounce) can white beans, rinsed and drained (such as navy or cannellini)
3 tablespoons extra virgin olive oil
2 teaspoons fresh lemon juice
1 small garlic clove
1 teaspoon fresh thyme leave
1 pinch kosher salt
1/4 teaspoon fresh ground pepper
4 (10 -12 inch) flour tortillas
3/4 lb thinly sliced roast turkey breast
1 large tomatoes, thinly sliced
1/4 medium red onion, thinly sliced
2 ounces shaved parmigiano-reggiano cheese
1 cup arugula or 1 cup baby spinach leaves
chips (optional)

Steps:

  • Combine bean, oil, juice, garlic, thyme, salt and pepper in a the bowl of a food processor. Purée until smooth, stopping once to scrape down sides, for bean spread. (Can be made ahead. Cover and chill up to 2 days.)
  • Spread bean spread on one side of each tortilla, leaving a 1-inch border around edge. Arrange turkey down center of each tortilla; layer with tomato, onion, cheese and arugula. Starting at one end, tightly roll each tortilla and place, seam side down, on a serving plate. Cut crosswise in half and serve with chips, if desired.

2 large zucchini, sliced into 1/8-inch thick circles
2 medium eggplant, sliced into 1/8-inch thick circles
¼ cup olive oil, divided
2 ½ teaspoons Kosher salt, divided
1 teaspoon freshly ground black pepper, divided
2 bell peppers, one red and one yellow
White bean spread:
2 15.5-ounce cans white beans, drained and rinsed
4 cloves garlic
1/3 cup chicken or vegetable stock
8 whole wheat pitas
½ cup packed fresh basil leaves

Steps:

  • Preheat oven to 400 F. On 2 baking sheets, toss zucchini and eggplant with 2 tablespoons olive oil, 2 teaspoons salt, and ½ teaspoon pepper. Roast, turning once, until well browned and cooked through, about 20 minutes for zucchini, 25 minutes for eggplant. Roast peppers over burner until blistering and slightly charred. Place in bowl, cover with plastic wrap, and let sit 10 minutes before running under cold water and removing skins. Cut into long thin slices. In food processor, combine beans, garlic, 2 tablespoons olive oil, chicken stock, ½ teaspoon salt, and ½ teaspoon pepper. Pulse until creamy and smooth, about 1 minute. To assemble, cut pitas into halves, spread approximately 2 tablespoon white bean puree in each half, and fill with ½ cup mixed vegetables and 1 tablespoon fresh basil leaves. Repeat with remaining halves. Serve two halves per person.
