West Coast Dry Rub With Salmon image

This rub would work wonders for salmon or steelhead trout, done on a grilling plank. It would also enhance chicken and vegetables

2 tablespoons salt
2 tablespoons brown sugar
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon basil
1 tablespoon paprika
1 tablespoon tarragon
3 lbs salmon (or steelhead trout)
cedar plank, soak for a minimum of 1 hour

Steps:

  • Cedar Plank: the longer you soak the plank the more uses you have out of it. They can be used a number of times as long as they are not too charred and the fish fits on the plank.
  • Rub: Combine the ingredients and sprinkle over the fish. Grill for 15 - 20 minutes or until the fish flakes.

There's nothing better than a chowder for your soul! This recipe is loaded with flavor and everyone in your family will enjoy it!

1 Tbsp butter
1 large leek, washed, white and green parts only (about 1 cup), thinly sliced
1/2 c celery, finely chopped
1/2 c red peppers, finely chopped
2 large cloves garlic, minced
2 Tbsp unbleached all-purpose flour
1/2 c carrots, shredded
1 large red potato, small diced
1 can(s) (8 ounces) cream-style corn
1/2 c low-sodium chicken broth
1/2 c clam juice
1 large bay leaf
4-5 oz smoked salmon, cut into small pieces
1 1/4 c half-and-half
1 Tbsp tomato paste
freshly ground black pepper, to taste (i always use mixed peppercorns)
ground himalayan sea salt, to taste
2 Tbsp fresh dill, chopped
1/2 tsp dried thyme
1 Tbsp freshly squeezed lemon juice
1/2 tsp smoked paprika

Steps:

  • 1. In a large pot over medium heat, melt butter. Add leek and celery: cook for 3-5 minutes or until soft. Add red pepper and cook for 3 minutes. Add garlic and sauté for 1 minute. Add flour and stir well to coat the veggies. Add carrot, potato, cream corn, broth, clam juice and bay leaf. Bring to a boil, reduce heat to simmer and stir very often: cook for 15 minutes or until potato is tender.
  • 2. Add smoked salmon, half-and-half and tomato paste. Bring back to simmer and cook for 5 minutes. Add dill, black pepper, sea salt, thyme, lemon juice and paprika. Let it sit 15 minutes before serving with crusty bread

Number Of Ingredients 14

2 slices of bacon - diced
1/2 yellow onion - diced
2 cloves garlic - diced
1 lb. salmon filet (no bones)
1 celery stalk - diced
3 medium sized yellow potatoes - skin left on cubed 1 inch cubes
8 asparagus stems - diced
4 cups chicken, veggie or fish stock
1 can cream corn
1/2 cup whole corn kernels
1 cup coconut milk (full fat)
1/2 tsp. curry powder (or to taste)
1 tsp. dried parsley
Salt and Pepper to taste

Steps:

  • 1. Season salmon with salt and pepper and cook until just flaky, set aside. 2. Sauté bacon, onions, garlic, celery, asparagus and curry powder together in a large pot until bacon is crispy and onions are translucent. 3. Add stock and potatoes - cook until potatoes are soft. Totally optional, but if you want your chowder a little less chunky - use potato masher and mash together ingredients in pot until desired consistency. 4. Add in creamed corn, corn kernels, coconut milk, and stir until combined. 5. Just before serving, flake salmon into chowder, checking for bones. 6. Add in parsley, and salt and pepper and cook until salmon is warmed.

5 -6 lbs fresh whole salmon or 5 -6 lbs frozen salmon
1 -2 tablespoon soy sauce
2 teaspoons garlic granules
2 tablespoons brown sugar
1 tablespoon chopped chives
1 sprig fresh parsley
1/2 lemon

Steps:

  • Preheat oven 350 F Fillet salmon, leaving skin on.
  • Place fillets, skin side down on a buttered pan.
  • Drizzle soya sauce over fillets.
  • Sprinkle granulated garlic and brown sugar over salmon Bake 1 hour at 350 F Garnish with parsley and sliced lemon.
  • **This can also be Barbequed over medium heat and cooked until white juices appear on the top of the flesh**** I have also baked this using a whole cleaned salmon, for a nice pesentation.
