These super healthy black bean brownies are the ultra fudgy and decadent chocolate treat.

1 1/2 cups black beans ((1 15-oz can, drained and rinsed very well) (250g after draining))
2 tbsp cocoa powder ((10g))
1/2 cup quick oats ((40g) (See nutrition link below for substitutions))
1/4 tsp salt
1/3 cup pure maple syrup, (honey, or agave (75g))
pinch uncut stevia OR 2 tbsp sugar ((or omit and increase maple syrup to 1/2 cup))
1/4 cup coconut or vegetable oil ((40g) (See nutrition link for substitution notes))
2 tsp pure vanilla extract
1/2 tsp baking powder
1/2 cup to 2/3 cup chocolate chips ((Not optional. Omit at your own risk))
optional: more chips, (for presentation)

Steps:

  • Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture-and even the taste-will be much better in a food processor. I use this food processor.) Stir in the chips, then pour into a greased 8x8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies. If you make this recipe, don't forget to leave a review! 0.5 cup(s) Canned black beans rinsed and drained
0.25 cup(s) Black coffee strong
0.5 cup(s) Unsalted butter
4 oz Bittersweet chocolate
4 large Raw egg(s)
1.25 cup(s) Sugar
1 tsp(s) Vanilla extract
0.125 tsp(s) Table salt
1 cup(s) All-purpose flour

Steps:

  • Preheat oven to 350ºF. Coat a 9- X 13-inch pan with cooking spray; line with aluminum foil and coat foil with cooking spray.
  • In a blender or mini food processor, process beans with coffee until smooth; set aside.
  • In a double boiler over very low heat, melt butter and chocolate.
  • Meanwhile, in a medium bowl, using an electric mixer, beat eggs and sugar until light and fluffy. With mixer on low speed, add melted chocolate to eggs; incorporate well. Add black bean mixture, vanilla and salt; mix well. Add flour; combine thoroughly on low speed.
  • Pour batter into prepared pan and bake until a tester inserted in center of brownies comes out clean, about 25 to 30 minutes. Remove pan to a cooling rack. After 10 minutes, remove brownies from pan by pulling up on foil and placing brownies on cooling rack to cool more. Cut into 24 pieces and serve. Yields 1 piece per serving.

nonstick cooking spray
1 (15 ounce) can black beans, rinsed and drained
6 egg whites or 1/2 cup fat free egg substitute
4 ounces unsweetened chocolate
1 tablespoon light butter
2 cups granulated sugar
2 tablespoons instant coffee powder (regular or espresso)
3 tablespoons all-purpose flour
1/2 cup chopped walnuts (optional)

Steps:

  • Heat oven to 350 degrees F; coat a 9 x 13-inch pan with nonstick spray.
  • Blend drained beans and 2 egg whites or 1/3 of 1/2 cup egg substitute) in food processor or blender until smooth. Set aside.
  • Place chocolate and lite butter in small microwave safe bowl. Microwave for 60-90 seconds. Stir every 30 seconds until smooth. Set aside.
  • Combine bean puree, sugar, flour, coffee powder and remaining egg whites or egg substitute in a mixing bowl. Beat until well combined. Blend in melted chocolate, pour mix into pan, sprinkle with walnuts. Bake 30-35 minutes.
  • Makes 30 at 1.5 WW points.
