  • Blend watermelon in a blender or food processor until pureed. Stir pureed watermelon into sugar mixture. Transfer watermelon mixture to an ice cream maker and freeze according to manufacturer's instructions.

Very light and refreshing with the perfect amount of sweetness. Lime juice brightens up the flavor and adds a delightful zing. 2 medium limes, zested and juiced, divided
2 tablespoons honey
1 pinch chili-lime seasoning (such as Tajin®)

Steps:

  • Place watermelon cubes in a single layer on a sheet pan. Freeze at least 5 hours or overnight.
  • Zest limes; set aside for garnish. Juice limes until you have 2 tablespoons juice.
  • Place 1/2 of watermelon cubes in food processor with 1 tablespoon honey and 1 tablespoon lime juice. Blend until smooth and creamy and transfer to a large bowl. Repeat with remaining watermelon, honey, and lime juice.

1/2 cup water
1/4 cup lemon juice
3 cups watermelon

Steps:

  • Cook the sugar, water and lemon juice together, stirring occasionally until the sugar is dissolved.
  • Remove from heat and chill.
  • Cut up the watermelon and remove all seeds.
  • Puree in a blender or food processor.
  • Stir into chilled syrup.
  • Freeze in an ice-cream maker according to the manufacturer's instructions.
  • Pack into an airtight container and store in the freezer.

3 sprigs fresh mint
6 pounds seedless watermelon, flesh roughly chopped (about 8 cups)
Juice of 2 limes

Steps:

  • Cook sugar and 1 cup water, stirring constantly, in a small saucepan over low heat until sugar has dissolved. Add mint. Bring to a boil. Cook 5 minutes. Remove from heat. Cover; let stand 20 minutes.
  • Working in batches, puree watermelon in a blender. Pour through a fine sieve into a large bowl; discard solids.
  • Pour mint syrup through a fine sieve into a bowl; discard mint. Stir syrup into puree. Stir in lime juice. Refrigerate, covered, at least 2 hours (up to overnight).
  • Freeze in an ice cream maker according to manufacturer's instructions. Transfer to an airtight container; freeze at least 1 hour (up to 4 days). Let stand at room temperature 10 minutes before serving.

900 grams (2 pounds) watermelon, seedless if possible, or seeded if seedless is not available, cut into 1-inch chunks
75 grams (about 1/3 cup) sugar
33 grams (about 1 tablespoon plus 2 teaspoons) corn syrup (for sorbet version only)
2 tablespoons fresh lime juice
Pinch of sea salt

Steps:

  • Place all of the ingredients in a blender, and blend until smooth. Chill in the refrigerator for 2 hours or overnight.
  • If you are making granita, place a 9-by-11-inch baking dish in the freezer. Omit the corn syrup and reduce the sugar if desired.
  • Place a container in the freezer. Using an immersion blender, blend the watermelon mixture for 30 seconds. If making sorbet, freeze in an ice cream maker following the manufacturer's directions. If making granita, scrape into the chilled baking dish and place back in the freezer. Set the timer for 30 minutes. Using a fork, scrape the ice crystals from the outside of the baking dish toward the center. Return to the freezer and set the timer for another 30 minutes. Continue to scrape the mixture with a fork every 30 minutes until you have a uniform frozen mixture. It should not be frozen solid. If you forget to scrape and the mixture does freeze like an ice cube, cut into chunks and use a food processor fitted with the steel blade to break it up. Transfer to a container and freeze. Allow to soften for 15 minutes in the refrigerator before serving.

1 watermelon (about 2kg)
200ml prosecco , plus a little extra
3 mint sprigs, plus extra to serve
½ lemon , zest pared
50g sugar

Steps:

  • Cut the watermelon into quarters and remove the pips using a teaspoon. If you're serving the same day or next day, keep six wedges or slices back for decorating and chill. Cut the flesh into 3cm cubes (you should have about 1kg fruit, with the rind discarded) and sit in a baking parchment-lined container where the cubes fit snugly. Pour the prosecco over the fruit, cover and freeze for 4 hrs, or up to 1 week.
  • Put the mint, lemon and sugar in a small pan with 50ml water, and bring to a gentle simmer for 3-5 mins until the sugar dissolves and turns syrupy. Cover and leave to cool completely, then strain.
  • Put the frozen prosecco-soaked watermelon cubes in a food processor with the sugar syrup. Blend well, stopping and pushing the mixture towards the blades with a spatula every few seconds, if you need to, until it's a slushy consistency. Add a splash more prosecco to make a smooth slush. Spoon or pour into six chilled glasses. Garnish with the chilled watermelon wedges and little mint sprigs.

3 cups ripe watermelon flesh

Steps:

  • Place sugar and 3/4 cup water in a small saucepan. Bring to a boil over medium heat, stirring occasionally. When sugar has dissolved, remove pan from heat, and stir in creme de menthe, if using. Chill the syrup.
  • Remove seeds from watermelon flesh. Place flesh in the bowl of a food processor; process until liquefied, about 2 minutes. Add puree to chilled syrup; stir to combine.
  • Freeze sorbet in an ice-cream maker according to the manufacturer's instructions. Store, frozen, in an airtight container.

One 18- to 20-pound seedless watermelon
3 pints assorted sorbet

Steps:

  • Set the watermelon on its side (stem end facing left or right) and cut off a small, flat piece of rind from the bottom so the watermelon is stable. Wrap a piece of thin masking tape horizontally around the watermelon about 1/2 inch above where the stem was. Wrap 2 more pieces over the top at the center to make a band/handle for the basket that is 1 1/2 inches wide.
  • Using the tape as a guide, cut out the wedges that remain on either side of the handle to make a basket shape, down to the horizontal tape. Scoop out 4 cups of watermelon balls using a melon baller and reserve. Remove the remaining watermelon flesh and save for another use. Use a paring knife to trim the flesh from the handle to create a small, neat strip of melon. Use a spoon to do the same for the inside of the basket. Freeze the basket for at least 3 hours. Refrigerate the watermelon balls.
  • Put 3 cups of the watermelon balls in the bottom of the basket. Scoop balls of sorbet and arrange on top of the watermelon. Decorate with the remaining watermelon balls. Serve immediately or put back in the freezer until serving, up to 1 hour.

1 bottle sparkling rosé, or any sparkling wine
1 cup diced peach, or cantaloupe, honeydew, watermelon
1 cup blueberries

Steps:

  • Watermelon-Rosemary Sorbet: Freeze the canister of an ice cream or sorbet maker overnight (or according to manufacturer's directions). Meanwhile, prepare a simple syrup by combining water, sugar, and rosemary sprigs in a small saucepan. Over medium-high heat, bring to a simmer, uncovered, then immediately turn off heat and let rosemary steep as syrup cools to room temperature, 10 minutes.
  • Remove and discard rosemary sprigs. Pour syrup into a blender, then add watermelon, lime juice, and tequila. Cover and blend until smooth. Place a strainer over a storage container and strain watermelon mixture, separating the pulp and foam from the liquid; discard pulp and foam. Cover and chill liquid overnight in the refrigerator. (Alternatively, mixture can be chilled quickly by placing the container into an ice bath.)
  • Set up ice cream maker and pour watermelon base into the frozen canister. Turn on and churn mixture until it's thick and looks frozen, about 30 minutes. Transfer sorbet into a container and freeze, covered, at least 2 hours. Makes 1 quart.
  • Assembly: Place a scoop of sorbet into a chilled glass; add a tablespoon each of diced peaches and blueberries. Top with sparkling rosé and serve immediately, with a spoon, straw, or both.

NOTE: I made this the other day and used 1/4 cup Splenda and 1/4 cup sugar PLUS I misread the directions and just threw all of the ingredients in to the blender and I have to say it worked great without the heating of the "syrup".

1 cup water (I used the juice from the watermelon)
1/2 cup sugar
2 cups cubed seedless watermelon
2 cups fresh strawberries, hulled (I used 1/2 raspberries and 1/2 strawberries)
1 tablespoon minced of fresh mint (or more if you like)

Steps:

  • In a small heavy saucepan, bring the water and sugar to a boil. Cook and stir until sugar is dissolved. Remove from the heat; cool slightly.
  • Place the watermelon and strawberries in a blender; add sugar syrup. Cover and process for 2-3 minutes or until smooth. If you want, strain and discard seeds and pulp. Transfer mixture to a 13-in. x 9-in. dish. Freeze for 1 hour or until edges begin to firm.
  • Stir in mint. Freeze 2 hours longer or until firm. Just before serving, transfer to a blender; cover and process for 2-3 minutes or until smooth.
