  • Arrange 1 segmented red grapefruit on an oiled baking sheet; sprinkle with 2 tablespoons brown sugar and 1¿2 teaspoon smoked paprika. Broil until browned, 4 minutes. Whisk 2 tablespoons rice vinegar and 1 teaspoon dijon mustard in a large bowl; season with salt and pepper. Whisk in 2 tablespoons olive oil. Add the grapefruit, 5 ounces baby spinach and 1¿2 cup chopped walnuts; toss.

1 large red grapefruit
2 to 3 teaspoons chopped crystallized ginger
2 teaspoons sugar

Steps:

  • Preheat broiler. Cut grapefruit crosswise in half. With a small knife, cut around the membrane in the center of each half and discard. Cut around each section to loosen fruit. Place on a baking sheet, cut side up. , Mix ginger and sugar; sprinkle over fruit. Broil 4 in. from heat until sugar is melted, about 4 minutes.

2 red grapefruits
6 cups about 5 ounces baby spinach leaves, washed and dried
1 avocado, peeled, pitted, and sliced into crescents
1/4 cup toasted pine nuts
1/4 cup crumbled gorgonzola (optional)
1/4 cup honey
1/4 cup white wine vinegar
1 teaspoon Dijon mustard
1/2 cup canola oil or 1/2 cup grapeseed oil
2 teaspoons poppy seeds

Steps:

  • 1. To make dressing, mix together honey, vinegar, and mustard. Using a wisk, add oil in a slow stream and mix well. Stir in poppy seeds. This makes about a cup of dressing.
  • 2. Using a serrated knife, cut, and peel the membranes from grapefruit. Section fruit and throw away the membranes.
  • 3. Gently arrange spinach on individual plates. Top with sliced avocado and grapefruit sections. Drizzle 1 tablespoon dressing over each salad. Sprinkle with toasted pine nuts and gorgonzola, if desired.

1 package (10 ounces) fresh spinach, torn
2 tablespoons chopped green onion
2 teaspoons cider vinegar
2 teaspoons olive oil
2 teaspoons honey
2 teaspoons prepared mustard

Steps:

  • Cut grapefruit in half; with a sharp knife, cut around each section to loosen fruit, reserving juice. In a salad bowl, toss the spinach, onion and grapefruit sections. In a jar with a tight-fitting lid, combine the vinegar, oil, honey, mustard and reserved grapefruit juice; shake well. Drizzle over salad and toss to coat. Serve immediately.

3 tablespoons extra-virgin olive oil
4 slices thick-cut bacon or 4 slices pancetta, chopped
3 shallots, thinly sliced
2 cloves garlic, chopped
3 tablespoons sherry vinegar
2 pounds triple washed spinach, stems removed
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
4 hard-boiled eggs, quartered lengthwise
Parmigiano-Reggiano, for topping

Steps:

  • Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

1 10-ounce head radicchio, torn into bite-size pieces
8 ounces baby spinach leaves
1/2 cup Kalamata olives or other brine-cured black olives, pitted

Steps:

  • Combine vinegar and fennel seeds in medium bowl. Gradually whisk in oil. Season dressing with salt and pepper.
  • Cut all peel and white pith from grapefruits. Cut grapefruits between membranes to release segments. Stir segments into dressing. Let stand at least 15 minutes and up to 1 hour.
  • Toss radicchio, spinach and olives in bowl. Add grapefruit segments and dressing to coat. Season with salt and pepper.
