VENISON AND LENTIL RAGOUT

1 pound boneless venison in 1-inch cubes
1/4 cup balsamic vinegar
4 tablespoons olive oil
1 cup chopped onions
2 cups small mushrooms, quartered
1/2 cup chopped carrot
2 cloves garlic, minced
1 cup dry red wine
2 1/2 cups water
1 teaspoon dried thyme
Freshly ground black pepper
1 1/2 cups lentils
1/2 cup beef stock
Salt

Steps:

  • Mix the venison with the vinegar and two tablespoons of the olive oil. Allow to marinate for two hours.
  • Heat two tablespoons of the olive oil in a heavy casserole. Add the onion, saute until it begins to soften, then add the mushrooms and carrot and saute about six minutes longer. Stir in the garlic.
  • Add the wine, water, thyme, pepper, lentils and the venison with the marinade. Bring to a simmer, cover and allow to simmer for about one hour, until the lentils and the venison are tender. Stir in the beef stock and continue to cook about 20 minutes longer, until the stock is absorbed. Season to taste with salt and serve.

2 tablespoons extra-virgin olive oil
1 large onion, chopped
2 carrots, chopped
1 bulb garlic, chopped, or to taste
1 cup red wine
3 (6 ounce) 3/4-inch-thick venison steaks, frozen
¼ cup butter, cut into 4 pieces, divided
½ teaspoon coarse kosher salt, or to taste
¼ teaspoon coarse ground black pepper
1 pinch red pepper flakes
1 (28 ounce) can crushed tomatoes
1 (16 ounce) package uncooked orzo pasta

Steps:

  • Heat oil in the pot of a multi-functional pressure cooker (such as Instant Pot®) on the Saute setting. Saute onion, carrots, and garlic until onion is translucent, about 5 minutes. Add red wine.
  • Lay venison into the pot; top with 1/2 the butter. Mix in salt, pepper, and red pepper flakes. Add crushed tomatoes. Close and lock the lid. Select the Stew setting according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 11 minutes. Drain and stir in the remaining butter.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove venison and cut into bite-sized pieces; meat should be fall-apart tender. Mix venison back into the pot. Serve the ragout over the orzo.

1 lb ground venison or 1 lb ground beef
1 (10 ounce) can mushroom soup
1 (10 ounce) package white mushrooms, slice them up
1 medium onion, sliced up
1 ounce canola oil
1 ounce butter (optional)
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb egg noodles, cooked

Steps:

  • In a large frying pan brown the meat, add onions and mushrooms and butter and fry.
  • till onions are soft and the mushrooms soften, About 10 minutes on medium.
  • Put into a crock pot and add all the rest of the ingred.
  • Cook on auto for 2 hours. Add 1 tbs corn starch to thicken and cook for 1/2 hour more.
  • Serve over the noodles.
  • You can serve over rice for a change.
  • You can add red pepper for a little kick.
  • You can spice it up using other ingred's.

Arcticberry Crusted Venison with Cauliflower Ragout, Mocha Reduction image

20-ounce venison loin
Vegetable oil, for searing
1/2 cup Arctic berry chutney
1/2 cup panko bread crumbs
2 tablespoons green coffee beans
1/2 head fennel, halved, cored and thinly sliced
1 tablespoon fennel seeds
1/2 tablespoon olive oil
2 cups veal stock
1/2 tablespoon bitter cocoa powder
Cauliflower Puree, recipe follows
1 head cauliflower
1 cup vegetable stock
Salt and pepper
1/2 cup cream
1/2 cup butter
1/2 lemon

Steps:

  • For the Venison:
  • Preheat the oven to 400 degrees F.
  • Cut the venison into 5-ounce pieces. Heat a large saute pan over high heat. When the pan is hot, add the oil and heat. Add the venison and sear until brown on both sides, about 2 minutes per side. Transfer the pan to the oven and cook to rare, about 5 minutes. Remove from the oven. Spread the chutney on the venison and then press the panko into the chutney so it sticks. Return to the oven and cook to medium rare, about 5 more minutes.
  • For the Mocha Sauce:
  • Crush the coffee beans and toast lightly in a hot pan. Remove from the heat and set aside. Clean and slice the fennel. In a pot, toast fennel seeds on low heat to golden brown. Add the olive oil and fennel and sweat until soft. Add coffee beans and veal stock and bring to a simmer for 15 to 20 minutes. Strain. Whisk in the cocoa powder and cook for 2 minutes. Place the cauliflower puree on 4 plates. Top with a venison steak and finish with a little of the sauce.
  • Clean and trim the cauliflower into small bouquets.
  • Cook the scraps and 1/2 of the white parts in vegetable stock until soft, about 10 to 15 minutes. Add the cream. Remove from the heat and puree. Season, to taste, with salt and pepper.
  • Saute the remaining cauliflower bouquets in a hot saute pan with a little butter. When the cauliflower just starts to get tender, but is still crunchy, add the puree and mix well. Season, to taste, with lemon and salt and pepper.

My husband is a deer hunter but I'm not crazy about venison. I keep searching for recipes that disguise the gamey taste. Wine, anyone? (Plus we grow black currents!)

3 Tbsp olive oil
2 lb venison, cut into 1 inch pieces
salt and pepper
4 medium onion, sliced
6 sprig(s) fresh thyme
2 bay leaves
1 sprig(s) fresh rosemary
1 Tbsp crushed juniper berries
2 c red wine
1/4 - 1/2 c black current preserves
1/2 c fresh or frozen cranberries
3 Tbsp butter
6 oz chanterelles, cleaned, trimmed and halved (or use any other mushrooms)
1 Tbsp fresh parsley

Steps:

  • 1. Tie all herbs into a cheesecloth bag forming a bouquet garni.
  • 2. Heat oil in heavy pot over medium-high heat. Season meat with salt and pepper. In batches, brown meat about 6 or 7 minutes. Transfer to bowl as batches are done.
  • 3. Reduce heat to medium. Add onions and cook, scraping off browned bits stuck to bottom until fully browned - about 10- 15 minutes. Return meat and accumulated juices to pot. Add bouquet garni and wine, bring stew to a simmer, cover, and reduce heat. Simmer, stirring occasionally, until meat is tender, 2-3 hours.
  • 4. Strain stew into a colander set over a large bowl and discard bouquet garni and onions. Return broth to pot and bring to a simmer over medium heat. Whisk in preserves, then add cranberries. Simmer until berries pop - 10 to 12 minutes. Return meat to pot and adjust seasonings. Keep warm.
  • 5. Melt butter in large skillet over medium-high heat. Add chanterelles or other mushrooms and sauté until tender - 4 to 5 minutes. Season to taste with salt and pepper. Serve stew garnished with mushrooms and chopped parsley. Accompany with pasta, rice or potatoes.
