This one-pan pasta that combines lean chicken breast and sautéed spinach for a one-bowl meal is garlicky, lemony and best served with a little Parm on top. I call it "Mom's Skillet Pasta" and she called it "Devon's Favorite Pasta." Either way it's a quick and easy weeknight dinner we created together and scribbled on a little recipe card more than a decade ago, and it remains in my weekly dinner rotation to this day. It's a simple dinner the whole family will love.

8 ounces gluten-free penne pasta or whole-wheat penne pasta
2 tablespoons extra-virgin olive oil
1 pound boneless, skinless chicken breast or thighs, trimmed, if necessary, and cut into bite-size pieces
½ teaspoon salt
¼ teaspoon ground pepper
4 cloves garlic, minced
½ cup dry white wine
Juice and zest of 1 lemon
10 cups chopped fresh spinach
4 tablespoons grated Parmesan cheese, divided

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile, heat oil in a large high-sided skillet over medium-high heat. Add chicken, salt and pepper; cook, stirring occasionally, until just cooked through, 5 to 7 minutes.
  • Add garlic and cook, stirring, until fragrant, about 1 minute. Stir in wine, lemon juice and zest; bring to a simmer.
  • Remove from heat. Stir in spinach and the cooked pasta.
  • Cover and let stand until the spinach is just wilted.
  • Divide among 4 plates and top each serving with 1 tablespoon Parmesan.

1-1/4 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 large red pepper, chopped
1 clove garlic, minced
2 cups water
2 cups medium pasta shell, uncooked
1/2 lb. (8 oz.) 2% Milk VELVEETA, cut into 1/2-inch cubes
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

Steps:

  • Cook and stir chicken, peppers and garlic in large nonstick skillet on medium heat 5 to 7 min. or until chicken is done.
  • Add water; stir. Bring to boil. Stir in pasta; cover. Simmer on medium-low heat 12 to 15 min. or until pasta is tender and most of the water is absorbed.
  • Add 2% Milk VELVEETA and spinach; cook 3 to 5 min. or until VELVEETA is completely melted, and pasta mixture is heated through and well blended, stirring frequently.

4 tablespoons olive oil
3 tablespoons salt, divided
1 lb penne pasta
3 cloves garlic, chopped
2 chicken breasts, cubed
1 tablespoon pepper
28 oz crushed tomato, 1 can
½ teaspoon red chili flakes
½ cup heavy cream
5 oz spinach
½ cup parmesan cheese
parmesan cheese, to taste

Steps:

  • Boil water in a large pot over high heat.
  • Add 2 tablespoons of salt to water and add pasta. Cook pasta until almost al dente, or for 1-2 minutes less than the recommended cook time. Drain.
  • Heat 2 tablespoons olive oil in a large pot on medium heat. Add chicken, salt, and pepper. Brown chicken, making sure to cook through. Set chicken aside.
  • Add 2 tablespoon olive oil, garlic, and red chili flakes into the pot and stir.
  • Add crushed tomatoes, stirring for a few minutes.
  • Add cream, stirring until incorporated.
  • Add spinach and stir until the spinach cooks down and incorporates.
  • Add chicken, pasta, and parmesan, stirring until pasta is evenly coated.
  • Garnish with more parmesan cheese and serve!

10 ounces boneless skinless chicken breasts, cut into 1 inch pieces
1 tablespoon olive oil
1 medium onion, chopped
0.25 cup red wine
1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano, undrained
1 cup Swanson® Chicken Broth
4 ounces uncooked penne pasta
0.75 cup water
4 cups baby spinach

Steps:

  • Season the chicken as desired. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often. Remove the chicken from the skillet.
  • Add the onion to the skillet and cook until tender-crisp, stirring occasionally. Add the wine and heat to a boil, stirring to scrape up any browned bits from the bottom of the skillet.
  • Stir in the tomatoes, Swanson® Chicken Broth, penne and water and heat to a boil. Reduce the heat to medium. Cook for 10 minutes or until the penne is tender, stirring occasionally. Return the chicken to the skillet. Cook for 2 minutes or until the chicken is cooked through. Stir in the spinach and cook for 1 minute or until the spinach is wilted.

Don't use the thinner spaghetti and cook a minute or two less if you usually like your pasta al dente! Oh my goodness... A fellow RN brought this to work once. I have been asking her for TWO YEARS for the recipe and have searched and searched the internet. Finally she emailed it to me! This one dish meal is so freaking good!!!!! Don't be afraid of the ingredients , just try it! Your family will probably fight over the leftovers!

1 lb Velveeta cheese, cubed
1 lb chicken, deboned, boiled and cut up
1 lb spaghetti, cooked according to package al dente
10 ounces Rotel Tomatoes
10 1/2 ounces cream of mushroom soup
1/2 cup butter
1 large onion, diced
1 cup celery, diced
3 7/8 ounces black olives, drained diced
4 ounces mushrooms, drained sliced
1 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degreees.
  • Cook spaghetti as directed on package, minus a minute or two if you like your pasta firmer.
  • Melt butter in large deep pan, and saute onions and celery.
  • Add chicken, cheese, cooked spaghetti, mushroom soup, black olives, rotel tomatoes, garlic powder and mix well.
  • Transfer to a casserole dish and bake in preheated oven for 45 minutes.

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, cook and stir onions and peppers in Dutch oven or large deep skillet sprayed with cooking spray on medium-high heat 3 to 4 min. or until crisp-tender. Stir in tomatoes, broth and tomato paste. Bring to boil; simmer on low heat 10 min., stirring occasionally. Add VELVEETA; cook 1 min. or until VELEETA is completely melted and sauce is well blended, stirring frequently.
  • Drain spaghetti. Add to sauce in skillet along with the chicken; cook 2 to 3 min. or until heated through, stirring occasionally.
