BROCCOLI AND VELVEETA CASSEROLE

A friend gave me this recipe when I was looking for a vegetable dish to make with ham. My husband filled his plate three times during dinner and it is very hard for me to get him to eat his veggies! Everyone has loved making this dish because it is so easy and everyone goes back for seconds and thirds!

1 (16 ounce) bag frozen broccoli
1/2 a box of 16oz Ritz cracker
3/4 lb Velveeta cheese
1/2 cup butter

Steps:

  • Cook broccoli and drain water.
  • Add Velvetta and cook until melted.
  • In a seperate pan melt butter, then remove from heat.
  • Add crumbled Ritz crackers to the butter and stir until mixed well.(You can crumble the crackers by hand or by putting them in a storage bag and crush with a rolling pin).
  • Spray a 1 3/4 quart cassarole dish with cooking spray.
  • Spoon in half the crackers into the dish.
  • Pour broccoli and cheese mixture in and cover with the rest of the crackers.
  • Bake for 15-20 minutes uncovered at 350 degrees or until top browns.

1 (16 ounce) bag frozen broccoli
1/2 cup onion
1 (10 1/4 ounce) can cream of celery soup (I use Recipe #425183) or 1 (10 1/4 ounce) can cream of chicken soup (I use Cream of Anything Soup Mix)
1 cup milk
1/2 lb Velveeta cheese
3 cups cooked rice (I use brown rice)
1/2 teaspoon pepper

Steps:

  • Spray a 2-quart baking dish with cooking spray and preheat oven to 350°F.
  • Saute onion until soft and translucent.
  • Cook broccoli in boiling water for about ten minutes or until almost tender; drain very well.
  • Mix all ingredients and place in baking dish.
  • Bake for 25 minutes.

1 lb velveeta cheese
2 c cooked white rice
1 can(s) cream of mushroom soup
1 onion to taste
chopped celery to taste

Steps:

  • 1. cook broccoli according to package directions, and drain.
  • 2. add cheese, cooked rice and soup.
  • 3. add finely chopped onion and celery if you want them.
  • 4. Mix well and pour into a casserole dish.
  • 5. bake at 375 until bubbling on top.

2 tablespoons butter
1 (10 1/2 ounce) can reduced-fat cream of chicken soup
1/2 cup skim milk
8 ounces Velveeta cheese
1 cup instant rice
1 (10 ounce) package chopped broccoli

Steps:

  • Saute onion in butter until soft. Add cream of chicken soup, milk and Velveeta. Heat the mixture until the cheese melts. Add rice to the mixture
  • Prepare the broccoli according to package directions. Add to soup mixture.
  • Pour in a greased casserole and top with slices of Velveeta. Bake at 350 degrees for 30 minutes.

1/2 cup water
8 ounces velveeta cheese spread in a glass jars
2 (10 ounce) boxes frozen chopped spinach, drained and thawed
3 eggs, beaten well
10 saltine crackers, to crumble on top (as many as you like)
3 tablespoons butter

  • Saute onion in margarine.
  • add flour and water and bring to a low boil.
  • add cheese.

  • add eggs and stir to combine.

8 oz Velveeta Cheese, cubed
8 oz cream cheese, softened
1 stick butter
1 sleeve round buttery-type crackers (Ritz), broken or crushed

Steps:

  • Rinse broccoli with hot water in colander. No need to thaw completely. Drain. Toss together broccoli, Velveeta and cream cheese in greased 2-quart casserole.
  • Melt butter and toss with crushed crackers. Sprinkle on top of casserole.
  • Bake at 350 degrees F for 30 minutes or until top is nicely browned.
