VEGETARIAN HOT AND SOUR SOUP
My DH's favourite soup, which I make often, especially during the colder months. I especially like this vegetarian version.

Steps:
- In separate bowls, cover the lily buds and tree ear mushrooms with hot water; let soak until softened, about 30 minutes; drain and thoroughly rinse the lily buds and mushrooms; trim the tough ends from the buds and halve them crosswise.
- In a large pot, combine the broth, lily buds, mushrooms, bamboo shoots, ginger and salt; cover and bring to a boil over medium-high heat; reduce the heat and simmer for 10 minutes; stir in the vinegar and 1 tsp red pepper and boil over medium-high heat for 2 minutes; beat the cornstarch mixture into the soup in a steady stream; in a bowl, combine the egg and egg white and beat into the soup; stir in the soy sauce, tofu and sesame oil and cook over medium heat until warmed through; season with red pepper and garnish with spring onion.

After searching a while for a vegetarian Thai soup, I thought up this one. It's like a cross between hot & sour soup, and tom ka soup!

Steps:
- Bring broth to a boil in a large pot.
- Add all ingredients except green onions.
- Reduce heat to low, and simmer for at least 20 minutes.
- Add onions and allow to cook for 3 more minutes.

Steps:
- 1. Bring the chicken stock to a simmer in a medium saucepan.
- 2. Stir in soy sauce. Allow to simmer for 5 minutes.
- 3. Add the mushrooms and chili sauce. Bring back to a gentle simmer.
- 4. Add the white vinegar, pepper and bamboo shoots. Stir well and bring back to simmer.
- 5. Gently stir in the diced tofu. Don't worry if it gets a little cloudy. Tofu can just behave a little differently every time.
- 6. In a separate dish, stir the cornstarch into the cold water until smooth. Once smooth, add it to the soup and all to simmer for about 5 minutes, until thickened.
- 7. To save dishes, rinse out the dish you used to mix the cornstarch, and use it to beat the egg until smooth. Slowly drizzle the egg mixture into the soup in streams. Once all egg is in soup, gently stir. All to heat for about 3 minutes.
- 8. Add the green onions and sesame oil. Gently stir.
- 9. Serve hot. If desired, add a couple of drops of chili sauce to top of soup, just prior to serving.

- Heat sesame oil in a pan and sauté carrot, bamboo shoot, and shiitake mushrooms for a couple of minutes.
- Add vegetable broth, water, tamari, vinegar, chili paste, and salt. Cook until vegetables are tender.
- Add tofu and bring to boil.
- In a small bowl, dissolve potato starch in 2 Tbsp of water. Reduce heat and add it to the soup. Mix the soup.
- Beat an egg and slowly drizzle the egg in a soup. Remove from heat.
- Infuse love into the soup and serve!

- stir in the vinegar and sriracha and boil over medium-high heat for 2 minutes;
- beat the cornstarch with 3 tablespoons of water and add the mixture into the soup in a steady stream;
- beat the egg and add slowly to the soup;
- stir in the soy sauce, tofu and sesame oil and cook over medium heat until warmed through;
- garnish with spring onion.
