Baked Chicken-Fried Steak with Mushroom Gravy image

Very easy and comforting autumn or winter steak and gravy dish. Serve with rice, wild rice, mashed potatoes, or noodles. Great on biscuits, as well.

1 cup all-purpose flour
6 (4 ounce) cube steaks
1 cup peanut or vegetable oil, for frying
1 pinch seasoned salt, or to taste
1 pinch garlic powder, or to taste
1 pinch black pepper, or to taste
⅔ cup finely diced onion
1 (10.75 ounce) can condensed cream of chicken soup
2 (4.5 ounce) cans sliced mushrooms with juice
½ (10.75 ounce) can water, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12 inch baking dish. Place flour in a shallow dish. Dredge steaks in the flour to coat evenly.
  • Heat peanut oil in a skillet over medium heat, and cook the steaks for about 5 to 8 minutes per side, until golden brown.
  • Place 3 fried cube steaks in the bottom of the prepared baking dish. Sprinkle the steaks lightly with seasoned salt, garlic powder, and pepper, and scatter 1/3 cup of diced onions over the steaks. Layer the remaining 3 steaks on top, repeat the seasoning, and sprinkle with the rest of the onion.
  • Pour the condensed soup in a bowl, and drain the juice from the canned mushrooms into the empty soup can. Pour in enough water to fill the can, and whisk the liquid and mushrooms into the soup. Pour the soup mixture over the layered steaks.
  • Cover and bake for 30 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C) and bake for an additional 30 to 45 minutes, until the onions are tender and the gravy is thick and bubbling.

4 cube steaks
olive oil
salt and pepper
1 cup flour
1 cup Italian seasoned breadcrumbs
1 dash paprika
1 tablespoon seasoned garlic salt
1/3 cup grated parmesan cheese
1 package fresh sliced mushroom
2 -3 tablespoons flour
3 cups milk (depending on amount of gravy desired)

Steps:

  • Mix flour, breadcrumbs, parmesean cheese, and seasonings in a bowl.
  • Dip steaks into a small amount of milk and then dredge in the flour mixture.
  • Place 3-4 tablespoons of olive oil in frying pan over medium-high heat.
  • Cook steaks for 5 minutes on one side (cooking time depends on thickness of steak).
  • The juices from the steak might soak up the flour, so before you flip the steaks add some more of the flour mixture, patting it down with a spatula.
  • When brown, flip over and continue to cook for another 3 mintues (again cooking time varies).
  • When finished cooking, remove steaks and keep warm.
  • FOR GRAVY:.
  • Once steaks are finished cooking add a small amount of oil (most of oil, if not all, will have been used in cooking the steaks) and cook the mushrooms.
  • Add 1/4 water, salt&pepper, and continue cooking.
  • Make sure to get all of the scraps from the sides of the pan that the steaks left into the liquid you are cooking the mushrooms in.
  • When most of liquid is cooked off, sprinkle remaining flour over mushrooms and cook for 1 minute.
  • Add milk and cook until thickened to your liking.
  • Serve with mashed potatoes and enjoy!

4 portobello mushrooms
1/4 cup milk
4 eggs, beaten
Salt and pepper
1 cup flour
1 cup coarsely ground bread crumbs
1 tablespoon thyme
1/2 pound melted butter
Mashed Potatoes, recipe follows
Cream Gravy, recipe follows
5 baking potatoes like russets, unpeeled
1/4 pound butter
1/4 cup heavy cream
Salt and pepper
2 tablespoons butter
2 tablespoons flour
2 cups heavy cream
Salt and pepper

Steps:

  • Stem and brush off surface debris from mushrooms. Whisk milk and eggs until incorporated. Add salt and pepper. Mix flour, bread crumbs, thyme, and additional salt and pepper.
  • Heat butter in skillet. Dredge mushroom in egg wash, then in crumb mixture. Fry mushroom until golden brown on both sides. Serve with Mashed Potatoes and Gravy.
  • Boil potatoes until fork tender. Drain well. Add remaining ingredients and mash well.
  • Make the roux by melting butter in a saucepan. Add flour and stir until incorporated. Add heavy cream and stir well until simmering. Remove from heat and season with salt and pepper.

Vegetarian Chicken-Fried Steak with Mushroom Gravy image

This started out as a way to use up leftover brown rice. I was expecting something edible but not remarkable, and was oh so pleasantly surprised to find this delicious! I topped the patties with stewed mushrooms in a creamy mushroom gravy with a hint of garlic. I was expecting something stroganoff flavored from the sauce, but it tastes just like chicken fried steak - only without the chewy, gristly steak. I should have taken a picture of this, but unfortunately I didn't since I wasn't expecting it to be so good. Maybe next time! I served it with sides of glazed butternut squash and steamed broccoli.

1 1/2 cup(s) cooked brown rice
1/2 cup(s) finely chopped walnuts
6 - green onions, minced, green and white parts
1 large egg
1/4 teaspoon(s) salt

GRAVY
1/2 package(s) mushrooms, diced
1 clove(s) garlic, minced

Steps:

  • Preheat oven to 350. Heat butter over medium low in a saucepan. Add mushrooms and garlic. The mushrooms will begin to release water - if they look dry, add water. You want them in around an inch of water as they cook, not completely covered. They will shrink.
  • While that cooks, use a food processor to coarsely grind up rice and walnuts. You want some texture to remain, not a paste! Pieces like the size of the chopped peanuts you'd get for ice cream topping or a bit smaller are good.
  • Pour enough oil into a heavy skillet to shallowly cover the bottom. Begin to heat over medium.
  • Combine rice, walnuts, green onion, egg, salt, pepper, garlic powder and Italian seasoning in a large bowl.
  • Form the mixture into 6 balls. Roll each ball in bread crumbs to coat, flattening as you go like a burger patty.
  • Fry the patties in oil just to brown them, then transfer to a cookie sheet. When they're all browned, bake at 350 for about 30 minutes.
  • Occasionally stir mushrooms while they cook. When they've cooked down, use a slotted spoon to remove mushrooms and set aside. Add water to the broth if necessary to make about 2/3 cup total liquid. In a jar with a lid, combine flour and milk. Shake to combine until no lumps remain (or stir together well, but the jar method seems to remove lumps easier).
  • Bring the mushroom broth to a simmer, then slowly stir in milk/flour mixture. Add parmesan cheese. Cook and stir, being sure to scrape the bottom, until mixture thickens. Season to taste with salt and pepper.
  • To serve, top each rice patty with some mushrooms and pour mushroom gravy over it.

14 ounces vegetarian chicken substitute (Worthington's Chickette)
1 cup flour
1/3 cup cornmeal
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 cup plain soymilk
2 tablespoons flour
4 tablespoons vegetable oil
1 1/4 cups vegetable stock
2 tablespoons fresh parsley
1/4 cup soy cream

Steps:

  • Slice the mock chicken into small, round steaks.
  • Pour 1/2 cup of the flour into a shallow dish.
  • Pour 1/2 cup of the flour into a second shallow dish and add the cornmeal, paprika, salt, and pepper.
  • Pour the soy milk into a third shallow dish.
  • Dip the steaks into the soy milk and then into the plain flour.
  • Dip into the soy milk again and then into the seasoned flour and cornmeal mixture.
  • Add 2 tablespoons of the oil to the heated skillet and cook 3 "steaks" at a time.
  • Brown for approximately 2 minutes on each side or until thoroughly cooked.
  • Transfer to a serving platter.
  • Repeat with the remaining oil and steaks.
  • Add the remaining flour to the skillet and cook for 2 minutes.
  • Whisk in the stock and the parsley and season with the salt and pepper.
  • Whisk the nondairy cream into the gravy.
  • Remove from the heat when bubbling.
  • Serve with warm biscuits topped with the gravy.

4 (5 ounce) chicken breasts
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons olive oil
1 (8 ounce) package sliced fresh mushrooms
2 cloves garlic, sliced
¾ cup water
¼ cup dry white wine
1 (1.25 ounce) envelope dry chicken gravy mix

Steps:

  • Sprinkle both sides of the chicken breasts with onion powder, salt, and pepper.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5 minutes per side.
  • Add garlic and mushrooms and cook until mushrooms have released their liquid and are reduced in size, about 5 minutes.
  • Stir together water, white wine, and gravy packet in a small bowl and pour into the skillet.
  • Bring liquid to a simmer, cover, reduce heat to medium, and cook for 5 minutes. Turn chicken breasts and continue cooking until chicken is no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
