CONFETTI RICE

Every forkful of tender rice is peppered with pretty pieces of pimientos, broccoli and carrots.

1 1/4 cups water
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 teaspoon salt-free seasoning blend
1 cup uncooked converted rice
1 cup chopped broccoli
1/2 cup shredded carrot (about 1 medium)
1 jar (2 oz) diced pimientos, drained

Steps:

  • In 3-quart saucepan, heat water, broth and seasoning blend to boiling. Stir in rice; reduce heat to low. Cover and simmer 15 minutes.
  • Stir in broccoli and carrot. Cover and cook about 5 minutes or until rice and broccoli are tender. Stir in pimientos. Let stand 5 minutes.

When making this side dish, I prefer to use a Rosemary & Sun-Dried Tomato blend with just a hint of garlic.

1 c brown rice, uncooked
1 1/4 c water, cold
1 can(s) (14 oz) 33%-less-sodium garden vegetable broth
1 tsp salt free seasoning blend
1 c broccoli, fresh
1/2 c carrots, shredded (about 1 med.)
1 jar(s) pimientos, diced (2 oz. jar drained)

Steps:

  • 1. In 3-quart saucepan, heat water, broth and seasoning blend to boiling. Stir in rice; reduce heat to low. Cover and simmer 15 minutes.

1 tablespoon butter
1 teaspoon chicken flavor instant bouillon (or 1 cube)
1 cup uncooked rice (I use basmati)
1/2 cup shredded carrot
1/2 cup sliced celery
1 tablespoon finely chopped onion

Steps:

  • In a medium saucepan, bring water, butter and bouillon to a boil; stir to dissolve bouillon.
  • Stir in remaining ingredients and return to a boil.
  • Reduce heat, cover and simmer for 20 minutes until rice is tender.

1 3/4 cups chicken stock
1 tablespoon butter
1 cup light brown rice (recommended: Texmati)
2 cups finely chopped bell peppers in 3 colors, such as orange, yellow and red
1 lime, juiced

Steps:

  • Heat the stock and butter in a sauce pot over medium heat and bring to a boil. Stir in the rice, then reduce heat to a simmer. Cover and cook for 18 minutes, then fluff the rice with a fork and transfer it to a serving bowl. Stir in the peppers and the lime juice and serve.

A great side or main dish. Feel free to add additional veggies. This has been in my recipe file for many years. Prep time does not include cooking time for rice.

vegetable oil (or your choice of oil, coconut, etc.)
2 eggs, beaten
2 large garlic cloves, pressed or minced
2 Tbsp gingerroot, minced
6 c rice (cooked and unsalted)
1 can(s) 8-oz. can sliced water chestnuts, drained
1 c ham, julienned
1 c carrot
1 c frozen peas, thawed
1 c green onion, chopped
1/3 c soy sauce

Steps:

  • 1. Heat 2 tbsp. oil in a 12-inch skillet. Add eggs. Tilt skillet so eggs form about a 6-inch pancake. Cook until set - spooning oil over the eggs where necessary to set edges. Remove from skillet with a spatula. Cool; cut into strips.
  • 2. Add 3 tbsp. oil to skillet. Saute garlic and ginger. Add rice; stir-fry, lifting from the bottom until grains separate. Add water chestnuts, ham, carrots, peas, green onion and soy sauce. Continue to lift from bottom while stir-frying. Remove from heat. Stir in egg strips.

Put a colorful side on your holiday plate with this 25-minute confetti rice recipe. Starting with Zatarain's Long Grain and Wild Rice, toasted pecans add crunch and just a tad of nuttiness. Mix bell pepper, onion, and black pepper, and let the celebration begin.

2 1/4 cups water
1 (7 ounce) package ZATARAIN'S® Long Grain & Wild Rice Mix
1/2 cup diced red bell pepper
1/4 cup diced red onion
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/8 teaspoon ground black pepper
2/3 cup toasted chopped pecans

Steps:

  • Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.
  • Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.
  • Mix bell pepper, onion, oil, vinegar and black pepper in medium bowl. Add to rice mixture; mix well. Sprinkle with pecans. Serve immediately. Or, cover and refrigerate until ready to serve. (Do not add pecans until ready to serve).

1 tablespoon vegetable oil
1 1/2 cups long-grain white rice
1 medium onion, chopped
2 teaspoons minced garlic
3 cups canned low-salt chicken broth
1/4 cup tomato sauce
1 teaspoon salt
1 1/2 cups thinly sliced peeled carrots
1 cup frozen corn kernels
1/2 cup frozen green peas

Steps:

  • Heat oil in heavy large pot over medium heat. Add rice and stir 5 minutes. Add onion and garlic and sauté until onion is slightly softened, about 5 minutes. Add broth, tomato sauce and salt; bring to boil over medium-high heat. Boil uncovered until about half of broth is absorbed, stirring often, about 10 minutes.
  • Mix carrots, corn and peas into rice. Cover pot tightly with lid. Reduce heat to low and cook until rice is tender and liquid is absorbed, about 10 minutes longer. Remove from heat. Let stand covered 10 minutes before serving. (Can be made 2 hours ahead. Cover rice with paper towel and let stand at room temperature. Remove towel; rewarm rice over low heat, stirring often.)
