CANDIED ALMONDS



Candied Almonds image

Candied Almonds are the perfect treat to share with friends and neighbors for the holidays! They are easy to make at home and come out perfectly delicious every time.

Number Of Ingredients 8

1 large egg white
1 tablespoon vanilla extract
4 cups almonds
1/2 cup light brown sugar (packed)
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon unsweetened cacao powder
1/2 teaspoon sea salt (or less to taste)

Steps:

  • Heat oven to 250°F and line a rimmed baking sheet.
  • Whisk egg white and vanilla extract together in a large bowl, then add the almonds and toss to coat.
  • Combine both sugars, cinnamon, cacao powder and salt in a small bowl. Sprinkle over the almonds and toss to coat.
  • Spread almonds on prepared baking sheet and bake in the hot oven for 45 minutes, carefully stirring once every 10-15 minutes. Increase oven temperature to 360°F and finish baking the almonds for 10-15 minutes (watch them closely, do not overbake or they may burn!).
  • Let almonds cool on the baking sheet. Store in an airtight container for up to 5 days.

4 tablespoons butter, divided
2 cups blanched whole almonds
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Line a baking sheet with foil. Grease the foil with 1 tablespoon butter; set aside. In a large heavy skillet, combine the almonds, sugar and remaining butter. Cook and stir over medium heat for 6-8 minutes or until sugar is golden brown., Remove from the heat; carefully stir in vanilla. Spread onto prepared baking sheet; immediately sprinkle with salt. Cool before breaking into pieces. Store in an airtight container.

3 tablespoons sugar
2 tablespoons water
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

2 cups whole blanched almonds or 2 cups natural almonds
1/4 cup turbinado sugar

Steps:

  • Preheat the oven to 225°F Line a large baking sheet with parchment paper and set aside.
  • Melt the butter in a large nonstick skillet over medium heat. Add the sugar, water, salt, cinnamon, and nutmeg and cook, stirring constantly until sugar dissolves, 2 minutes.
  • Remove from heat and stir in vanilla. Add the almonds and stir to coat. Spread the almond mixture in a single layer onto prepared baking sheet.
  • Bake for 1 hour, stirring every 15 minutes. Cool slightly and transfer to a large bowl. Sprinkle with the turbinado sugar and toss to coat. Cool completely while stirring occasionally. Store in an airtight container.

  • Preheat the oven to 300 degrees F. Beat the egg white with the vanilla extract, add the almonds and stir to coat. Combine the sugar, salt, and cinnamon and combine with mixture.
