a mugful of American long grain rice (about 200g/8oz)

Steps:

  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously.
  • Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. Lift some out with a slotted spoon and nibble a grain or two. If they're too crunchy, cook for another minute and taste again. They should be tender but with a little bite.
  • Drain the rice into a large sieve and rinse by pouring over a kettle of very hot water. Leave to drain well, then tip into a warm serving dish. Serve the rice as it is, or fork through a little butter and parsley to jazz it up.

The following method is our favorite way to cook long-grain rice-we love the consistency it yields. We learned the technique from some of our Latino and Louisianian colleagues.

3 cups water
1 1/2 cups long-grain rice (not converted)
1 1/4 teaspoons salt

Steps:

  • In a 2 1/2- to 3-quart heavy saucepan combine all ingredients and boil, uncovered, until steam holes appear in rice and grains on surface appear dry, about 8 minutes. Cover pan and cook rice over very low heat 15 minutes more. Remove pan from heat and let rice stand, covered, 5 minutes.
  • Fluff rice with a fork before serving.

No Fail Foolproof Rice image

You will never have to worry about burning the pot dry again! It works EVERY TIME and you don't have to stand around to watch. Very easy!

2 cups rice (I use Basmati)
3 cups water

Steps:

  • Combine rice and water in a medium to large saucepan with a secure fitting lid (vents closed).
  • Bring to the boil (you will see bubbles forming around the lid - do NOT open the lid) and turn off the heat.
  • Leave to stand for about 20-25 minutes. Do not, I repeat, DO NOT open the lid at any time until after the 25 minutes is up.
  • Fluff the rice with a fork and serve immediately.

Never Fail Perfect Cooked Rice image

This is a method that I have used for years and my rice is perfect every time- I will call for Basmati rice (my favorite) in the recipe but any long grain white rice is fine. You can also cook brown rice with this method but it takes a little longer cooking time. I have posted this recipe for 1 person but you may just increase the rice and water for each person. If you use the chicken stock powder don't use a tsp for each person if say you are cooking rice for 6 don't go over 1 tbsp Pre soaking your rice removes some starch and allows it to cook faster. If you wish add some fresh chopped chives

1/3 cup basmati rice
3 cups water (apprx)
1 teaspoon chicken stock powder (optional) or 1 teaspoon vegetable stock powder (optional)

Steps:

  • Measure your rice into a pot and cover it with water until the water is apprx 1/2" over the top of the rice.
  • Soak the rice for at least 1 hour.
  • Pour off the water and replace with fresh water,again, the water should be apprx 1/2" over the top of the rice.
  • Add 1 tsp of stock powder if using.
  • Bring rice to a boil,uncovered, simmer for apprx 7 minutes, keep checking until the kernels are perfect.
  • Drain in a sieve and run hot water through it.
  • Serve now or return to the pot lid on and keep over lowest stove temp until the rest of your dinner is ready.It can sit like this for up to 10 minutes.

Thai sticky rice is slightly sweet and rather sticy, and fun to eat; children love it. The traditional way to eat sticky rice is to gently gather a clump of it into a ball and dip into a sauce. Time indicated does not include soaking time for the rice. Although I've posted recipe to use with my Bamboo Steamer, a pasta pot (with a deep basket) lined with cheese cloth will work just as well

2 cups thai sticky rice (long grain)
1 quart water

Steps:

  • Place rice into a mesh colander.
  • Rinse the rice grains in two or three changes of cold water in a bowl until the water runs clear from the colander.
  • Place the rice into a bowl and fill with cool water to 2 to 3 inches above the rice.
  • Cover the bowl and allow the rice to soak for 6 to 8 hours.
  • Drain the rice and transfer to cheesecloth-lined steamer or pasta pot basket.
  • Set steamer on wok or pasta pot with boiling water; do not let rice touch boiling water.
  • Cover pot and steam rice, checking water level often, adding more boiling water as need; cook for 20 minutes.
  • Remove from heat and let stand, covered for 5 minutes before serving.
