This cheesy eggs in a basket recipe from Paula Deen is a kid-friendly breakfast or lunch. Ingredients include ham, butter, eggs and phyllo dough. Prep time is about 10 minutes and cooking time is 15 minutes at 375 °F.

1 cup ham, diced
4 tablespoons butter, plus 6 tablespoons, melted
2 tablespoons water
8 eggs
3 sheets phyllo dough, thawed
2 cloves garlic, minced
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 375 °F. Butter 4 muffin cups. In a small bowl, combine melted butter and garlic. On a cutting board, stack 3 phyllo sheets and cut into fourths, forming 12 squares. Cover phyllo with a damp paper towel when not in use because it dries out quickly. Press one phyllo square (one sheet thick) into bottom of each muffin cup. (Don't worry if phyllo tears) Brush with butter. Add another layer of phyllo and brush with butter. Repeat a third time.
  • Bake for 10 minutes. Carefully remove phyllo baskets from muffin cups and cool on wire rack. In a medium bowl, beat eggs and add 1 tablespoon water. Melt 2 tablespoons butter in a medium skillet and add eggs. Sprinkle ham over eggs. Scramble eggs to desired doneness. Sprinkle in cheese and stir until melted. Spoon into phyllo baskets.

1 slice bread
1 teaspoon butter or margarine
1 egg
Salt and pepper, to taste

Steps:

  • Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
  • When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

6 hard-boiled eggs
2 tablespoons reduced-calorie mayonnaise or 2 tablespoons salad dressing
2 tablespoons plain low-fat yogurt
1 (3 ounce) flavor fresh pouch Starkist tuna (Albacore or Chunk Light)
1/4 teaspoon dill weed
salt and pepper
2 cups shredded lettuce
carrots, slices or sliced ripe olives

Steps:

  • Remove shells from eggs. With a small sharp knife cut eggs lengthwise into halves.
  • Using a teaspoon, scoop out yolks; place in a small bowl.
  • Stir in mayonnaise, yogurt, tuna and dill weed until well mixed. Season to taste with salt and pepper.
  • Sprinkle shredded lettuce on a serving plate to make a nest. Spoon filling into cavities of egg whites; place filled-side down on lettuce.
  • Garnish whites with suggested garnishes.

1 box (5.2 oz) Betty Crocker™ Seasoned Skillets® hash brown potatoes
Hot water, salt and margarine called for on potato box
1/4 cup Bac~Os® bacon flavor bits or chips, if desired
12 eggs
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • Make potatoes as directed on box. When done, place in medium bowl. Stir in bacon bits. Divide mixture evenly among muffin cups. Bake about 15 minutes or until starting to turn golden brown on edges. Reduce oven temperature to 350°F.
  • Crack 1 egg over each muffin cup. Sprinkle with salt and pepper. Bake at 350°F about 18-20 minutes or until egg whites and yolks are firm, not runny. Cool 5 minutes before removing from muffin cups.
