This is a basic muffin recipe that my mother used to make for us. I believe she got it from one of her old cookbooks, although I'm not sure. It's an easy recipe that is good for beginning bakers. It can be made less sweet to accompany savory meals (mom often served them with chili), or it can be made sweeter and fruit, such as blueberries, or other flavorings added to them. You can also adjust the amount of egg used. I like to make them with both eggs and about 2-4 T sugar.

Number Of Ingredients 7

1 7/8 cups flour (1 3/4 c plus 2 T)
1 tablespoon baking powder
1/2 teaspoon salt
2 1/2 tablespoons sugar
1 -2 egg
1 cup milk
1/4 cup butter, melted

Steps:

  • Preheat oven to 400* F. Grease a 12-cup muffin tin, or line with paper liners.
  • Sift together flour, baking powder, salt, and sugar.
  • In a second bowl, mix together egg(s), milk, and melted butter.
  • Pour egg mixture over dry ingredients and stir just enough to dampen flour (should be lumpy, not smooth).
  • Spoon into muffin cups, filling each about 2/3 full.
  • Bake at 400* F for 15 minutes or until golden (adding fruit may increase time).
  • Serve warm.

1/4 cup margarine
1/2 cup sugar
1 egg
1 cup milk
3 cups flour
1 tsp baking powder
1/4 tsp salt
8 Any fruit or berries you like.

Steps:

  • 1. Blend butter & sugar till smooth 2. Add egg & milk and mix well 3. Mix berries/fruit with 1/2 cup flour 4. Add1 1/2 cup flour to batter and mix well. 5. Add fruit etc and mix well 6. Add remaining flour and mix. 7. Grease muffin tins. Fill 2/3 full. 8. Sprinkle top with sugar if you like. 9. Bake at 400 for 25 minutes (till golden brown) 8.

1/4 cup butter
1/4 cup sugar
1 egg
2 cups flour, stirred and measured
1/2 teaspoon salt
4 teaspoons baking powder
1 cup milk

Steps:

  • Cream together butter (or margarine) and sugar beat in well-beaten egg. Add mixed dry ingredients alternately with milk. Bake in greased muffin tins at 375 degrees F. for 25 minutes. Makes 1 dozen muffins.VariationsBacon Muffins: Add 3 strips bacon, fried crisp and crumbled, to batter.Blueberry Muffins: After muffin batter is in tins, divide 1 cup blueberries (fresh, frozen, or drained canned) among the 12 muffin tins carefully push berries down into batter with back of teaspoon. This method prevents blueberries from sinking to bottom.Cheese Muffins: Stir 1/2 cup shredded Cheddar or Swiss cheese into batter along with flour.Cranberry Muffins: Stir 1 cup coarsely chopped raw cranberries into batter spoon into muffin pans sprinkle top of muffins generously with granulated sugar before baking.Date or Raisin Muffins: Add 1/2 cup chopped pitted dates or 1/3 cup raisins to batter.Pecan Muffins: Add 1/2 cup chopped pecans to batter. After filling cups, sprinkle with sugar, cinnamon, and more chopped nuts.
