Number Of Ingredients 12

6 ounces orzo
2 teaspoon olive oil
1 1/2 cups chopped onion, divided
1 tablespoon chopped fresh rosemary
4 salmon fillets (5 ounces each), skin on
1/4 cup plus 1 tablespoon chopped fresh basil
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cloves garlic, chopped
1 pint grape tomatoes, halved
1/4 cup pitted kalamata olives, sliced
2 tablespoons chopped fresh parsley

Steps:

  • Cook orzo as directed on package until al dente. Heat oil in a large nonstick skillet over medium heat. Cook 1/2 cup onion and rosemary until onion softens, 9 minutes. Combine with orzo in a bowl. Season salmon with 1 tablespoon basil, salt and pepper. Heat same skillet over medium-high heat. Cook salmon until golden, 5 minutes per side, flesh side down first; set aside. add garlic and remaining 1 cup onion to skillet; cook until soft, 2 minutes. Add tomatoes and olives; cook until tomatoes break up, 3 minutes. Remove skillet from heat; stir in parsley and remaining 1/4 cup basil. Season with salt and pepper. Serve fish over orzo; top with tomato mixture.

4 ounces uncooked linguine
1 salmon fillet (10 ounces), cut into 1-inch cubes
1 teaspoon minced fresh rosemary
5 tablespoons olive oil, divided
3/4 cup cannellini beans, rinsed and drained
2 small plum tomatoes, chopped
6 garlic cloves, minced
Salt and pepper to taste

Steps:

  • Cook linguine according to package directions. Meanwhile, in a small skillet, saute salmon and rosemary in 2 tablespoons oil for 5 minutes or until salmon flakes easily with a fork. Add the beans, tomatoes, garlic, salt and pepper; heat through. , Drain linguine; and transfer to a large bowl. Add salmon mixture; toss gently. Drizzle with remaining oil.

1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon dried thyme
1/2 teaspoon ground black pepper
4 (6 ounce) salmon steaks or 4 (6 ounce) salmon fillets
2 teaspoons honey
3 teaspoons olive oil, divided
8 cups spinach leaves
1/2 teaspoon minced peeled garlic
2 cups red seedless grapes, halved
1/2 cup dry red wine

Steps:

  • Combine salt, mustard, thyme and pepper; mix well.
  • Rub salmon fillets with honey and sprinkle with half the seasoning mixture.
  • Heat 2 teaspoons of olive oil in a nonstick skillet; brown both sides of salmon fillets.
  • Toss spinach and garlic with remaining 1 teaspoon oil in a 13x9x2-inch baking dish.
  • Place salmon on spinach, cover loosely with aluminum foil and bake at 300°F for 10 minutes.
  • Sauté grapes in skillet used to brown salmon.
  • Add wine bring to a boil, season to taste with remaining seasoning mixture; reduce by half.
  • Serve salmon on spinach; top with grape sauce.

1 1/4 lbs salmon fillets
1/4 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
3 tablespoons olive oil
2 garlic cloves, minced
1/4 cup sun-dried tomato, chopped
1/4 cup white wine vinegar
2 tablespoons fresh basil, chopped

Steps:

  • Sprinkle salmon with salt and red pepper; drizzle with 2 Tbsp olive oil.
  • Whisk together garlic, tomatoes, vinegar, basil, and remaining olive oil in a small bowl; set aside.
  • Grill over medium heat 4 to 6 minutes on each side or until fish flakes easily with a fork.
  • Remove from grill and pour tomato marinade over fish and serve immediately.

2 tablespoon Extra Virgin Olive Oil
4 Salmon Fillets (6oz ea.)
1 tablespoon Kosher Salt
1 teaspoon Freshly Ground Black Pepper
3 tablespoon Butter
3 cloves Garlic
1.5 cups Cherry Tomatoes, Halved
2 cups Baby Spinach
.5 cup Heavy Cream
.25 cup Freshly Grated Parmesan
.25 cup Chopped Herbs (e.g. Basil/Parsely)
4 wedges Lemon (optional)

Steps:

  • In a large skillet over medium-high heat, heat oil. Season salmon all over with salt and pepper. When oil is shimmering but not smoking, add salmon skin side up and cook until deeply golden, about 6 minutes. Flip over and cook 2 minutes more. Transfer to a plate.
  • Reduce heat to medium and add butter. When butter has melted, stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst, then add spinach. Cook until spinach is beginning to wilt.
  • Stir in heavy cream, Parmesan, and herbs and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.
  • Return salmon back to skillet and spoon over sauce. Simmer until salmon is cooked through, about 3 minutes more.
  • Garnish with more herbs and squeeze lemon on top before serving.

Grilled (or broiled) salmon with an Italian flair.

2 tsp italian seasoning (whick includes rosemary, basil and oregano)
1 tsp sweet paprika
1/2 tsp ground coriander
1/2 tsp ground fennel
1 tsp ground black pepper
3/4 tsp salt
1/4 tsp garlic powder
4 salmon fillets, skin-on (6 oz. each)
4 tsp olive oil

Steps:

  • 1. Prepare outdoor grill (or preheat broiler).
  • 2. Combine all ingredients except salmon and oil in a bowl.
  • 3. Brush each fillet (on both sides) with 1 teaspoon oil. Press spice mixture on skinless side of salmon. Let stand 15 minutes.
  • 4. Place salmon skin side up on grill grate. Cover and cook 3 minutes. Flip and cook, skin side down, 5 minutes more or until done. (or on a rack of a broiler pan. Cook under broiler 3 minutes and turn fish skin side down and continue cooking until done.)
  • 5. Remove from grill (or broiler) and serve.
