Soul food turnip greens! Cooked in a savory chicken broth with onions, garlic, smoked turkey, red pepper flakes and splash of hot sauce! So addictive and delicous with no bitterness!

1 tablespoon unsalted butter
1 cup yellow onions (diced)
1/2 cup red bell pepper (diced)
1 tablespoon garlic (minced)
2 ½ cups chicken broth
1 tablespoon hot sauce
1/4 teaspoon red pepper flakes
1 fully-cook smoked turkey leg (removed from bone and diced)
sea salt & cracked black pepper (add as needed )
2.5 pounds turnips greens (washed & cut)
1/2 teaspoon baking soda
liquid smoke (4-8 splashes)

Steps:

  • Melt butter in a large stock pot.
  • Add onions and red peppers.
  • Cook until tender and then add garlic.
  • Cook garlic until fragrant and golden.
  • Stir in chicken broth, hot sauce, red pepper flakes, and diced smoked turkey.
  • Taste broth and season with salt & black pepper. Broth should taste very well seasoned and delicious.
  • Let broth simmer for 10 minutes.
  • Add turnips greens to pot and allow them to cook down slightly.
  • Stir, cover and simmer for 1 hour (stirring occasionally)
  • Remove lid and taste to adjust seasonings again. (I usually add a bit more salt, black pepper and hot sauce)
  • Stir in baking soda and liquid smoke. (this will help further lessen the bitterness)
  • Cover and simmer for an additional 10- 20 minutes or until greens are tender to your liking.
  • Serve hot.

Turnip greens with smoked turkey is a classic southern soul food side dish. Customize this recipe with your favorite meat (like ham hocks, smoked neck bones, or salted pork) for a delicious family dinner side.

10-12 bunches Turnip Greens
1 large smoked turkey wing
8 cups water
1 medium yellow oniom
1 medium bell pepper (any color )
1 tbsp minced garlic
1 tsp red pepper flakes
2 tsp seasoning salt
1 tsp black pepper
1 tbsp brown sugar
2 tsp apple cider vinegar
3 medium turnips (peeled & diced)

Steps:

  • Add the smoked turkey wing into a large pot, then pour in 8 cups of water.
  • Place the pot over high heat, and bring to a boil. Let cook for 45-50 minutes.
  • While the smoked turkey is cooking, clean your greens. ( Be sure to check out my cooking tutorial to that you can see how I clean my turnip greens).
  • Once the greens are cleaned, remove the leaves from the stems, and start adding the turnip leaves in the pot.
  • Once all the greens are in the pot, start adding in the onions and bell peppers.
  • Next add in the garlic, red pepper flakes, seasoning salt, black pepper, brown sugar, and vinegar.
  • Give everything a nice stir, then reduce the heat to medium.
  • Let the soul food turnip greens cook for 1 hour & 30 minutes over medium heat.
  • Now toss in the turnips, and fold in with the other ingredients. Let cook for another 30 - 45 minutes.
  • Serve, and enjoy with some cornbread.

ROSE'S SOUTHERN COOKED MUSTARD & TURNIP GREENS



Rose's Southern Cooked Mustard & Turnip Greens image

This is a Southern Staple for many Southerners. We had greens often when I was growing up, almost always with Corn Bread. I had to pay special attention so I could list the measurements, when making these today, as I do not usually use a recipe. I am posting this recipe especially for Stephanie K. here at JAP, and any one else...

Number Of Ingredients 12

2 lb smoked ham hocks or other smoked meat of your choice
1 lb bag pre washed & cleaned glory mustard greens
1 lb bag pre washed & cleaned glory turnip greens
2 lb fresh turnip bottoms, peeled, sliced or cubed
1 medium yellow onion, cubed or chopped
3-4 clove garlic, minced
1 medium red bell pepper, cubed
1/8-1/4 tsp red hot pepper flakes
1 1/2 Tbsp white distilled vinegar
1 Tbsp sugar
1 1/2 Tbsp butter, optional
salt, optional, according to taste

Steps:

  • 1. Add Ham hocks to a large pot, and cover with water, and a tight fitting lid. Cook over medium low heat for 1 hour. This is the type of greens I used for this recipe, to save time.
  • 2. Then add both bags of washed and cleaned greens. I use Glory that are already prewashed & cleaned, it will look like a lot but they shrink down very quickly, put lid back on and allow to shrink.
  • 3. Then add chopped onions, minced garlic, cubed red bell pepper, pepper flakes, distilled vinegar, sugar & butter, stir to mix. Then let cook over low heat, for 20 minutes. Remove ham hocks, & remove fatty outer layer, & bones, but save the lean meat portion. Can add back into pot as is or cube into smaller portion size.
  • 4. Then add cubed or sliced turnip, & continue to cook over low heat for an additional 15 minutes or so or according to personal preference.
  • 5. Serve with fresh sliced tomatoes, sliced or chopped onions, or what ever you prefer.

  • 7. PLEASE NOTE: If you use the bulk greens they need to be picked through, they need to be washed thourgly at least 4 to 5 times to remove sand and grit. Discard any yellow leaves & tough stems. You may also want to try smoked Turkey parts, salt pork, or what ever suits your fancy. I prefer the Ham hocks or the smoked neckbones. You will want to taste to see if you need to add salt. Smoked meats are quite salty.

1-1/2 lb. fresh turnip greens
1-1/2 lb. fresh mustard greens
1 Tbsp. shortening
1 onion, chopped
2 cloves garlic, minced
2 cups water
6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Natural Uncured Turkey Sausage, cut lengthwise in half, then crosswise into thin slices
1 tsp. sugar
1/2 tsp. crushed red pepper

Steps:

  • Wash greens, removing all grit. Remove and discard hard stems. Stack greens in small bunches; roll up. Cut crosswise into wide strips.
  • Melt shortening in large skillet on medium heat. Add onions and garlic; cook 3 to 5 min. or until crisp-tender, stirring frequently.
  • Add remaining ingredients; mix well. Stir in greens; simmer on low heat 45 min. to 1 hour or until tender, stirring occasionally.

½ pound Italian turkey sausages, casings removed
1 medium onion, chopped
3 (14.5 ounce) cans chicken broth
2 (15 ounce) cans white beans, drained and rinsed
1 pound turnip greens
1 (14.5 ounce) can diced tomatoes
1 teaspoon garlic powder
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
1 bay leaf

Steps:
