These light and tasty wraps are great for lunch, or slice them smaller and they make wonderful party appetizers or great little after-school snacks.

1 (8 ounce) package cream cheese with chives
2 tablespoons Dijon mustard
6 (8 inch) whole wheat tortillas
1 ½ cups finely shredded iceberg lettuce
12 slices thinly sliced deli turkey
¾ cup shredded Swiss cheese
1 large tomato, seeded and diced
1 large avocado, sliced
6 slices bacon, cooked and crumbled

Steps:

  • Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
  • Arrange about 1/4 cup of shredded lettuce on each tortilla, and press the lettuce down into the cream cheese mixture. Place 2 turkey slices per tortilla over the lettuce, and sprinkle with 2 tablespoons of shredded Swiss cheese. Top each tortilla evenly with tomato, avocado slices, and crumbled bacon.
  • Roll each tortilla up tightly, and cut in half across the middle with a slightly diagonal cut.

4 oz cream cheese *see notes
2 teaspoons dijon mustard
3 to rtillas
3 large lettuce leaves
6 slices turkey (sliced from the deli counter)
6 pieces bacon (cooked)
3 slices swiss cheese
Avocado and tomato (sliced)
Salt and pepper

Steps:

  • Add the cream cheese and Dijon into a small dish. Stir to combine.
  • Spread 1-2 tablespoons of the cream cheese mixture onto each tortilla, spreading 1/4 inch from the edge.
  • Layer the lettuce, turkey, bacon, Swiss, avocado, and tomato in the bottom third of your tortilla.
  • Season with salt and pepper.
  • Fold, burrito style, being sure to fold in the ends of the tortilla.
  • Slice in half, slightly diagonal, and serve.

1/4 cup prepared ranch salad dressing
4 flour tortillas (10 inches), warmed
3/4 pound sliced deli turkey
8 slices Monterey Jack cheese

These are seriously amazing. Light, crunchy and a little spicy. I know it seems like a lot. All the ingredients. All the layering. But it's seriously stuff you probably already have in your pantry/fridge. So once you get the hang of the build, this ain't no thang. You start with a smear of hummus. Then on top of that, your turkey. Then it goes like this: Thinly sliced red onion, thinly sliced red bell pepper, alfalfa sprouts, shaved coconut, fried garlic and a few tiny dollops of sambal oelek. And then roll it up in a tortilla!

1/4 cup hummus (flavor of your choice)
4 medium to large flour tortillas
8 ounces sliced deli turkey
1/4 red onion, thinly sliced (about 1/3 cup)
1 red bell pepper, seeded and thinly sliced
1 cup alfalfa sprouts
1/2 cup flaked coconut, toasted if desired (see Cook's Note)
1/3 cup fried garlic (see Cook's Note)
Sambal oelek or sriracha, for drizzling

Steps:

  • Spread a tablespoon of hummus in the center of each tortilla. Divide the turkey, onions, bell peppers, sprouts, coconut, fried garlic and sambal oelek as desired among the tortillas.
  • Tightly roll up each wrap and secure with a wooden toothpick. Slice in half on the diagonal.

1 ½ cups water
¼ cup margarine
1 (6 ounce) package dry bread stuffing mix
8 slices deli turkey breast
1 (12 ounce) jar turkey gravy

Steps:

  • Bring water and margarine to a boil in a saucepan; stir in stuffing mix. Cover and remove from heat. Let stand until stuffing is softened, about 5 minutes. Fluff with a fork.
  • Spoon about 1/2 cup stuffing over each slice of turkey. Roll turkey around stuffing and arrange rolls in a microwave-safe dish, seam-side down. Pour gravy over rolls.
  • Heat in a microwave on high until gravy is bubbly, about 5 minutes.
