This is an easy, healthier version of a sloppy joe that the family will love! You can serve with endives instead of hamburger buns. Use whatever type of cheese you like.

1 teaspoon extra-virgin olive oil
2 cloves garlic, minced
1 ½ pounds ground turkey
1 tomato, chopped
1 small onion, chopped
¾ green bell pepper, chopped
2 tablespoons chopped fresh parsley
1 pinch red pepper flakes
salt and ground black pepper to taste
4 ounces tomato paste
1 lemon, juiced
6 hamburger buns, split and toasted
6 slices American cheese

Steps:

  • Heat olive oil in a pot over medium heat. Cook and stir garlic in hot oil until fragrant, about 2 minutes. Break ground turkey into the pot. Cover pot with lid and cook meat until browned on the outside, 2 to 3 minutes. With a slivered wooden spoon, break meat up into very small pieces; continue to cook and stir until nearly completely browned, 3 to 5 minutes.
  • Stir tomato, onion, green bell pepper, parsley, and red pepper flakes into the turkey mixture; season with salt and black pepper; cook until the tomato softens, 3 to 4 minutes. Add tomato past and lemon juice; stir to coat vegetables with tomato paste. Cover pot with lid, reduce heat to low, and cook until the vegetables are tender, 7 to 10 minutes. Serve on toasted hamburger buns topped with cheese.

I was looking for a lighter sloppy joe recipe and based this recipe on one from Hungry Girl that I modified. It's a very good, light sloppy joe sandwich. The broccoli slaw adds a nice crunch. This is not a really wet sloppy joe. I thought it would be a tough sell to get DH to try this recipe, but he loved it.

20 ounces 93% lean ground turkey
1 yellow onion, diced
1 green bell pepper, diced
1 (12 ounce) bag broccoli coleslaw mix
2 (15 ounce) cans manwich sloppy joe sandwich sauce (adjust up or down to your taste)
1/4-1/2 teaspoon hot sauce (optional)
4 Oroweat Multi-Grain Sandwich Thins

Steps:

  • Heat a skillet over medium-high heat. When hot, spray with cooking spray. Add ground turkey and diced onion. Cook, breaking up turkey into crumbles until cooked --about 8 minutes. About halfway through cooking, add the diced green bell pepper.
  • Add broccoli slaw and sloppy joe sauce to skillet. Mix and continue cooking approximately 6 minutes. Add hot sauce if you like it a bit spicy. Slaw should be softened when done.

1 lb ground turkey (I perfer the slightly higher fat variety)
2 tablespoons extra virgin olive oil (or a combo of butter and EVO)
1 large chopped onion
2 large cloves garlic minced
1 medium bell pepper chopped(green/red/yellow you pick)
8 oz baby bella mushrooms sliced
2 medium zucchini diced(green/yellow)
1 14.5 oz can diced tomatoes (or fresh)
8 oz tomato sauce (I use no salt)
1/2 teaspoon fennel seeds
6-8 cloves
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon cardamom (optional)
1/4+ teaspoon garam masala (optional)
1/4 teaspoon red pepper (optional)
1 tablespoons ketchup
Salt & Pepper to taste

Steps:

  • Saute the onions, garlic and peppers in the EVO for about 5-7 minutes, until starting to brown. Add the mushrooms and saute for another 5 minutes. Add the zuccini and continue to saute for another 5 minutes. Remove from heat and set aside. Using the same pan, add a very little bit of oil, if needed, and brown the ground turkey. While browning, add the fennel seeds, cloves, cumin, chili powder, cardamom, garam masala and red pepper. Once the turkey is completely browned, add the onion/mushroom/zucchini mixture, tomatoes, tomato sauce and ketchup. Mix together, reduce to low heat and simmer for 45-50 minutes.
