These Turkey Cutlets with Parmesan Crust, pan-fried or air-fried, are a quick weeknight dish the whole family will love!

4 turkey breast cutlets (4 oz each)
2 large egg whites (beaten)
1/3 cup seasoned breadcrumbs
2 tbsp Parmesan cheese
kosher salt and fresh pepper
1 tbsp butter
1 tsp olive oil
lemon wedges for serving

Steps:

  • Season cutlets with salt and pepper.
  • Combine bread crumbs and Parmesan cheese in a medium bowl.
  • In another bowl beat egg whites.
  • Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess.
  • Heat a large nonstick frying pan on medium heat. Add the butter and olive oil.
  • When butter melts, add the cutlets and cook about 6 minutes on each side, until golden brown and cooked through. Serve with lemon wedges.

1.5 pounds turkey cutlets
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg
1/2 cup blanched almond flour
1/4 cup Parmesan cheese
1/2 teaspoon dried parsley
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350°F.
  • Season the turkey cutlets with salt and pepper.
  • Crack the egg into a bowl and whisk.
  • Mix together the almond flour, Parmesan cheese, dried parsley, onion powder, and garlic powder in a second bowl.
  • Dip each cutlet into the egg and let the excess drip off.
  • Next, toss the cutlet with the almond flour mixture.
  • Place on a lightly oiled baking sheet.
  • Bake for 20-25 minutes, flipping halfway or until fully cooked through.

Turkey Cutlets with Almond Crust image

1 1/2 pounds turkeys (4 cutlets)
2 tablespoons fresh lime juice
1 clove garlic (medium), pressed
1/2 cup slivered blanched almonds, finely chopped
1/4 teaspoon ground cumin
1 teaspoon salt, or to taste
2 medium tomatoes, cored and neatly diced, about 1/2 inch
1 avocado (Hass variety preferred), peeled and cut into 1/2-inch dice
1 tablespoon finely chopped white onion
1 , serrano chile kimmy, , stemmed and minced with seeds
1 tablespoon olive oil
1 tablespoon unsalted butter
Coarsely chopped fresh cilantro

Steps:

  • 1. Put the turkey on a plate and rub all over with 1 tablespoon of the lime juice and the garlic. On another plate, mix the chopped nuts, cumin, and 1/2 teaspoon of the salt. Coat the turkey pieces, one at a time, on one side with the nut mixture, pressing with palm of your hand to help the nuts adhere to the meat. Let stand, nut side up, about 10 minutes. 2. Meanwhile, in a medium bowl, gently stir together the tomatoes, avocado, onion, serrano, remaining lime juice, and remaining salt. Adjust seasoning. Set aside. 3. In a large nonstick skillet, heat the oil and butter over medium heat. Cook the cutlets, nut side down, until golden brown on the bottom, about 4 minutes. Using a wide spatula, carefully turn the cutlets and cook the second side until browned and no longer pink inside, 3 to 4 minutes. Place 1 cutlet, nut side up on each of 4 plates. 1/3 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb turkey cutlets
3 tablespoons butter or margarine
1 tablespoon olive oil
1/2 cup dry white wine
3 tablespoons fresh lemon juice
2 cloves garlic, finely chopped
2 tablespoons chopped fresh Italian (flat-leaf) parsley
2 tablespoons capers
Lemon wedges and fresh Italian (flat-leaf) parsley leaves, if desired

Steps:

  • In shallow bowl, mix flour, salt and pepper; coat both sides of turkey cutlets in mixture.
  • In 12-inch skillet, melt 2 tablespoons of the butter and the oil over medium-high heat. Add turkey in batches; cook 3 minutes, turning once, or until turkey is no longer pink in center. Remove to serving plate; cover to keep warm.
  • Add wine, lemon juice and remaining 1 tablespoon butter to skillet; stir to loosen particles from bottom of skillet. Cook 2 minutes or until thoroughly heated. Stir in garlic, chopped parsley and capers; spoon over turkey. Garnish with lemon wedges and parsley leaves.

I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

¼ cup grated Parmesan cheese
4 turkey breast cutlets, 1/4 inch thick
½ cup fat free sour cream
1 tablespoon extra virgin olive oil

  • Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
