2 large baking potatoes
1 can (6 ounces) light water-packed tuna, drained and flaked
1 celery rib with leaves, finely chopped
1 green onion, chopped
1/3 cup creamy cucumber salad dressing
1/8 teaspoon each salt and pepper
1/4 cup shredded Colby-Monterey Jack cheese

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, turning once, 7-9 minutes. Cool slightly. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell., In a bowl, mash the pulp. Stir in the tuna, celery, onion, salad dressing, salt and pepper. Spoon into potato shells. Sprinkle with cheese. Place on a baking sheet. Broil 4-6 in. from the heat until cheese is melted, 5-6 minutes.

4 ¾-inch thick tuna fillets
6 tablespoons olive oil (divided)
juice of ½ lemon
1 teaspoon salt (divided)
½ teaspoon pepper
½ teaspoon dried oregano (divided)
½ teaspoon dried thyme (divided)
¼ teaspoon dried basil (divided)
1 teaspoon garlic powder (divided)
1 ½ pounds baby red potatoes (halved)
4 tablespoons grated parmesan cheese
additional lemon slices for garnish (optional)

Steps:

  • Preheat oven to 450 degrees. Combine 4 tablespoons olive oil, lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon oregano, 1/4 teaspoon thyme, 1/4 teaspoon basil, and 1/2 teaspoon garlic powder in a large resealable bag along with the tuna fillets. Seal the bag, massage the fillets to rub in the seasonings and distribute all the ingredients. Chill for 15 minutes while you move on to the next step.
  • In a large bowl combine potatoes and remaining 2 tablespoons olive oil and toss to coat. Stir together remaining salt, pepper, oregano, thyme, basil, and garlic powder, sprinkle over potatoes and stir to combine. Arrange potatoes on half of a greased sheet pan. Bake for 15 minutes.
  • After 15 minutes, place tuna fillets on the empty half of the sheet pan (add lemon slices if desired), sprinkle parmesan cheese over the potatoes, and return to the oven for 6 minutes. Flip the tuna fillets, and cook for another 6 minutes. Serve and enjoy!

2 tablespoons butter
1 (16 ounce) package cremini mushrooms, thinly sliced
1 ½ cups peas
½ medium yellow onion, chopped
½ teaspoon kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper
2 tablespoons all-purpose flour
1 cup whole milk
¾ cup low-sodium chicken broth
2 cups grated white Cheddar cheese
1 (8 ounce) can water-packed tuna, drained and flaked
½ cup grated Parmesan cheese, divided
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh chives
1 tablespoon lemon juice
¼ cup panko bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 10 to 12 minutes. Drain.
  • While the egg noodles are cooking, melt 2 tablespoons butter in a large, oven-safe skillet over medium heat. Add mushrooms, peas, and onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Season with salt, pepper, and cayenne.
  • Sprinkle flour over the vegetables; cook and stir for 2 minutes. Add milk and chicken broth and bring to a simmer. Cook until thickened, 2 to 3 minutes. Remove from the heat.

  • Combine potatoes and milk in a large skillet. Heat to boiling, stirring often. Cover, reduce heat to low, and simmer 15 minutes.

My SIL makes this quite often with a side dish of cooked rice and steamed broccoli. I kind of change it to suit my taste and believe it comes out perfect. Everyone finds it very tasty and without the usual pasta. I usually make it with side dish of green peas and spanish rice or simply a side salad.

2 (8 ounce) cans tuna, but drained well (as you prefer oil or in water)
2 (10 ounce) cans condensed cream of celery soup, not mushroom, as celery soup has a better taste with tuna
2 onions, sliced
16 ounces milk
6 -8 large potatoes, peeled, slices, about 1/4 inch
salt and pepper

Steps:

  • Butter lightly an oven pan 9X13 size.
  • Heat the oven at: 375°F.
  • Layer the bottom of pan with first layer of raw, sliced potatoes.
  • Add layer of sliced, raw onions and first tin of tuna, carefully spreading the tuna evenly all over.
  • Add a second layer of sliced, raw potatoes, then add last of the onions.
  • Salt & pepper in between.
  • Add the rest of the second can of tuna evenly.
  • Cover with last row of potatoes.
  • In a separate bowl, mix together the celery soup with milk, mixing well.
  • Pour the soup mixture evenly over dish; cover all potatoes.
  • Cover tightly with foil or Dutch oven cover.
  • Bake for 1 hour at 375°F in center of oven.
  • Uncover, and bake 15 minutes more at 350°F and the sauce/gravy will become just the right thickness--not too thick and not too watery.
